This tea sandwiches recipe is golden for parties where you don’t have much time but still want to impress your crew. You don’t even have to toast the bread. I kept thinking about how I could jazz the tea sandwiches up (mostly for photography purposes) and I concluded they didn’t need anything more than a cute lil sprig of dill.

This canapé recipe was shared with me by a gal from church, Olga S., who made them for a party. I tried one (ok, it was more like 7, but I spread it out over the course of the party so no one would notice), and I loved them right away.

They have such great flavor; I wished I was in a room all by myself with these (for reasons that will remain unsaid). I asked Olga how she made them and she said it was easy; just French bread, mayo with a little garlic and smoked gouda. She wasn’t kidding about the easy part. I do love gouda. It’s a lovely smoky cheese that is nutty and sweet. Mmmm.

Ingredients for Easy Gouda Canapés:

1 long, slim and fresh French bread baguette
6-8 oz smoked gouda
3/4 cup mayo
1 large or 2 medium cloves garlic
a few small sprigs of dill for garnish, optional

How to Make Cheese Canapes/Crostini/Tea Sandwiches:

1. Cut baguette into 1/2″ thick slices. Finely grate cheese.

2. Peel and grate garlic cloves into 3/4 cup mayo then stir to combine. Grating is better than pressing for these since you don’t run the risk of getting bigger strips of garlic in a bite. It also lets out more flavor to grate them in.

3. Spread a thin-ish layer (not too gimpy now) of mayo over each bread slice. Finely grate gouda cheese on the smaller holes of the grater. Add a generous pinch of cheese over each canape and garnish with dill if desired. The dill makes them look fancy and adds nice flavor at the same time.

Servings: 25 -30 canapes

    How do you think this would taste with mango habanero Gouda cheese?

    Will the garlic mayo go with a bit of fruity taste?

    I like the original recipe, but I would like a bit of spice to up it a notch.

      They can be done a few hours ahead. 🙂 Just cover with plastic wrap and refrigerate. I wouldn’t recommend 24 hours ahead of time.

    I make mine the way my mom made them:
    Toast
    or shallow fry the bread slices using a bit of (unrefined:) sunflower oil until golden brown and delish. Rub the galic clove on both sides of each slice(since the bread is crispy, it will act as a rasp), spread a bit of mayo and shave any good cheese over. the mayo and cheese milt a little bit because the bread is still warm… yum
    It’s a go to when a snack craving hits:)

    How delightful it is to sit there and watch people constantly reach for “my” creation. The gouda I used was a golden color.
    Just the mayo with the garlic was enough to get people to say “Ya lublu etu temu”. ^-^ Definitely worth remaking.
