Loaded Broccoli Salad Ingredients:

3 large broccoli heads
5 radishes, cut in 3 and dice
2 tomatoes quartered and seeded than diced
1 apple peeled and diced
1/2 cup of red grapes,  diced, drain the juice
1 cup  green onions (5 green onions minus the white part) diced
1 cup medium carrot shredded
1/2 cup dry cranberries (optional, but highly recommended)

Dressing Ingredients:

3 Tbsp sunflower oil or olive oil
1 Tbsp mayo
1 Tbsp sour cream
1/2 tsp garlic salt
3 Tbsp lemon juice

How to Make Fresh Broccoli Salad:

1. Wash all the vegetables. Using the Vidalia Chop Wizard, dice all the  broccoli, radishes, tomatoes and apple. Finely chop the green onion and grate the carrot. Combine all the veggies in a large salad mixing bowl. Add in the cranberries (cranberries aren’t photographed because they were a last-minute thing that worked really well).

2. In a separate small mixing bowl, whisk together until combined: 3 Tbsp sunflower oil or olive oil, 1 Tbsp  mayo, 1 Tbsp  sour cream, 1/2 tsp of salt,  a few dashes of garlic powder and 3 Tbsp lemon juice. Stir the finished dressing into the salad and mix well.

Enjoy :D! P.S. Give the salad a good stir before serving go coat everything nicely with dressing. The same applies for day 2, and day 3 (if it’s still around by then).

    Natasha, I have family members that can’t have mayo due to allergies is there another dressing I could use?

      You could use an egg-less mayo like vegenaise or just add more sour cream instead of mayo 🙂

    Loved this recipe! I added chopped roasted turkey breast and some extra dressing because it was a little dry. Used a food processor so it was very easy to prepare. Awesome flavours and super healthy – thanks!

      Oooh I bet it was good with turkey and you definitely would want more dressing if adding meat since turkey is kind of dry by nature. I’m glad you enjoyed the salad 🙂

    Cook’s Note :
    A good idea is, if you’re not a fan of raw broccoli, before cutting up the broccoli, to place the heads in boiling water for 3 seconds. This gets rid of the raw taste. The stalks may also be included if desired. It doesn’t really affect the taste.

    I tried this salad and its super nutritious, I love the apples and the grapes. They add such a fresh taste to the salad. I thought the dressing was a little too sour so I tried 1 cup mayo, 1/4 cup sugar and 2 T vinegar and it was so good! My kids and husband love it! Thank you so much for the new recipes!

    Natasha, I’m assuming you used fresh broccoli to give it that crunch. What would happen if I used frozen?

      I would only use fresh broccoli for this salad, the taste and texture will be wrong if you use frozen.

    our A & P supermarket sells something similar..they call it broccoli crunch salad in the deli dept., sooo good..sunflower seeds, raisins, chopped broccoli/cauliflower/red onions, I add craisins…I know I’m missing something else..last time I bought it I wanted to write what was in it..but ate it all

      You can omit any of the ingredients but I like the sweet/tartness that the apples added.
