    If I had to choose a favorite (which is so hard because all of these are crazy good!), I suppose I would go with the one I make and crave most often which is actually #5. My son’s favorite is #1!

    Avocado prices seem to vary wildly by season and location. When prices of avocados are up in most grocery stores, my go-to spot is Costco where a bag of 6 larger sized avocados runs about $6-$7 pretty much year round.

        Hi Pat, for this recipe you can swap cilantro with chives or dill, or even finely chopped fresh parsley adding them to taste 🙂

      How is the corn cooked? Or what type of corn is it? Do you cook it before putting it in salad? What type if shrimp? How long do you cook it for and what do you put on the shrimp?

        Hello Barbara, the corn is cooked and boiled. When corn is out of season, you can cook some frozen corn that was sealed at the peak of freshness. For the shrimp, we used raw and cooked it following steps 1 & 2 in the recipe. I hope that helps.

      My family loves the Avocado Chicken Salad and the Avocado Shrimp Salsa. Being from the southern tip of Texas, avocados are available year round and that is great since my family loves them in everything from salads to tacos to soups.       I am so glad to see salad recipes and dressings without mayo and vinegar. I hate both and it is hard to find good salads that aren’t boring. I love avocado and fresh veggies. When I am in a hurry, my little one and I will mix a can of tuna with two individual chunky guacamole cups to make a tuna sandwich. it is also good with canned salmon and chicken. It’s fast and easy. You can also eat it with chips.

      After trying the salsa one yesterday became my new favorite and the cucumber tomato with avocado( has been my all time favorite to use avocados for)
      I usually buy avocados from Aldi or lidl or sams club if they not on sale at the other 2 stores.

      Do these recipes keep well in the refrigerator over several days? I am thinking of using them for meal prep for the week. Will the dressing make the veggies soggy? Maybe keep it to the side until ready to serve? Or does the lemon prevent that?

        Hi Alyssa, It depends on the recipe, for pretty much all of them, I would suggest that if you were meal prepping, do not add salt until ready to serve since salt will wilt the vegetables and make them release juice. You will want to drizzle the avocado all over with lemon juice to keep it from browning in the refrigerator and then cover directly over the surface with plastic wrap to keep the air out (since air exposure is what causes avocados to brown). I hope that helps! 🙂

      A: Aldi! At some point in the year they cost 39 cents a piece! Otherwise Sams Club 😀

      I have only tried the cucum. tom. Avac. Salad but after watching this video im thinking ill try em all!
