Apple Turnover Recipe:
This Apple Turnover Recipe doesn’t get any easier! You can make bakery-quality apple turnovers with just a couple of storebought frozen sheets of puff pastry, apples, butter, an egg, and a few pantry staples.
Keep in mind the pastry itself isn’t sweet so do not skip the glaze. It makes these turnovers irresistibly good.
What is a Turnover?
Turnovers are made by filling pastry dough (usually puff pastry) with a sweet or savory filling, sealing the edges and baking. It becomes a portable dessert (like a hand pie), or a type of baked sandwich with a savory filling. Biting into an apple-filled pastry on the go is a real treat.
Can you Freeze Apple Turnovers?
After the pies are fully assembled (before brushing tops with eggwash), freeze them flat on a lined baking sheet then transfer to a freezer-safe Ziploc bag. When ready to bake, arrange them frozen on a baking sheet (do not thaw), brush with some egg wash and bake at 400˚F for 23-25 minutes.
How to Keep Apple Turnover Filling from Leaking?
No matter how well you crimp the edges, there will always be at least one turnover that leaks filling out of the edge and that is normal. A few things that help reduce leaks:
- Egg Wash will help keep the dry pastry together
- Crimp Tightly all along the edge where the two sheets come together
- Refrigerate turnovers for 20 minutes before baking

Apple Turnover Recipe
Ingredients
Apple Turnover Ingredients:
- 1 lb puff pastry, (2 sheets) thawed according to package instructions
- 1 Tbsp all-purpose flour, for dusting
- 1 1/4 lb Granny Smith apples, (3 medium) peeled, cored and diced into 1/3" thick pieces
- 1 Tbsp unsalted butter
- 1/4 cup brown sugar, lightly packed
- 1/2 tsp ground cinnamon
- 1/8 tsp salt
- 1 egg+ 1 Tbsp water for egg wash
For the Glaze:
- 1/2 cup powdered sugar
- 1-2 Tbsp heavy whipping cream
Instructions
- Preheat Oven to 400˚F. Remove puff pastry from the freezer and thaw according to instructions while making and cooling the apple filling.
- In a medium pot, melt 1 Tbsp butter over medium heat. Add diced apples and cook, stirring occasionally until softened (5 min).
- Reduce heat to low and stir in 1/4 cup brown sugar, 1/2 tsp cinnamon, and salt. Continue to simmer 3 minutes until apples are soft and caramelized. Remove from heat and set aside to cool.
- Use a rolling pin to roll the first sheet of thawed pastry to an 11" square. With a pizza cutter, cut into 4 equal-sized squares. Place cooled apple mixture over half of each square, leaving at least a 1/2" border.
- Thoroughly Beat together 1 egg and 1 Tbsp water. Brush eggwash lightly on edges of the pastry (just enough to seal), bring the edges together and crimp tightly along the edges with a fork to seal. Repeat steps 4 and 5 with the second sheet of puff pastry to make 8 turnovers.
- Transfer to a parchment-lined baking sheet, keeping them at least 1" apart. With a paring knife, cut 2-3 small slits in the top of each turnover.* Brush the tops with egg wash and bake 20-23 minutes or until golden and puffed.
- While turnovers are still warm, stir together powdered sugar and heavy whipping cream (adding to your desired consistency) and drizzle glaze over turnovers.

Mine turned out really delicious. Made Raspberry and Apple turnovers. In my Apple turnovers I added some chopped nuts & a few raisins to the filling. And also vanilla to the glaze. Love these. So good. But I do have a question. In the ingredients you have 1 Tbsp of flour for dusting. However, it doesn’t say what we are dusting in the directions. Hi Bekka! I assume you meant puff pastry sheets (not phyllo sheets)? Yes, that’s correct. You’ll use the flour to dust the surface as needed to roll our the puff pastry sheets. I’m so glad you love the recipe!

These turnovers were amazing! I am not a good baker, but this recipe was so easy and detailed that even I could make them. Thank you for posting this. After reading some of the other reviews, I wanted to answer the question about using frozen apples. That is what I used and the taste was still amazing. Maybe not as firm as using fresh, but that is good with me.

Hi Mareth! I think you could, if are able to get enough filling in there and still seal them well. But watch them in the oven because they’ll bake faster.

I make these and freeze them. I have had some in the freezer for quite some time and they had ice crystals on them. Just brushed them off, brushed them with an egg was and popped them in the air fryer. So good after many months in the freezer.

Do I store extra baked turnovers in refrigerator or outside? How long will they stay fresh?
They can be stored for a couple of days in the refrigerator lightly covered in foil or plastic wrap.
