Easy Apple Turnovers (VIDEO)
Homemade Apple Turnovers with a filling that tastes like Apple Pie in flaky puff pastry dough. Watch the video tutorial and you’ll know just how easy these are.
We love apple recipes like Baked Apples, or Apple Cake. This is one of the easiest apple desserts and can even be made ahead and frozen.

Apple Turnover Recipe:
This Apple Turnover Recipe doesn’t get any easier! You can make bakery-quality apple turnovers with just a couple of storebought frozen sheets of puff pastry, apples, butter, an egg, and a few pantry staples.
Keep in mind the pastry itself isn’t sweet so do not skip the glaze. It makes these turnovers irresistibly good.
What is a Turnover?
Turnovers are made by filling pastry dough (usually puff pastry) with a sweet or savory filling, sealing the edges and baking. It becomes a portable dessert (like a hand pie), or a type of baked sandwich with a savory filling. Biting into an apple-filled pastry on the go is a real treat.
Can you Freeze Apple Turnovers?
After the pies are fully assembled (before brushing tops with eggwash), freeze them flat on a lined baking sheet then transfer to a freezer-safe Ziploc bag. When ready to bake, arrange them frozen on a baking sheet (do not thaw), brush with some egg wash and bake at 400˚F for 23-25 minutes.
How to Keep Apple Turnover Filling from Leaking?
No matter how well you crimp the edges, there will always be at least one turnover that leaks filling out of the edge and that is normal. A few things that help reduce leaks:
- Egg Wash will help keep the dry pastry together
- Crimp Tightly all along the edge where the two sheets come together
- Refrigerate turnovers for 20 minutes before baking

Apple Turnover Recipe

Ingredients
Apple Turnover Ingredients:
- 1 lb puff pastry, (2 sheets) thawed according to package instructions
- 1 Tbsp all-purpose flour, for dusting
- 1 1/4 lb Granny Smith apples, (3 medium) peeled, cored and diced into 1/3" thick pieces
- 1 Tbsp unsalted butter
- 1/4 cup brown sugar, lightly packed
- 1/2 tsp ground cinnamon
- 1/8 tsp salt
- 1 egg+ 1 Tbsp water for egg wash
For the Glaze:
- 1/2 cup powdered sugar
- 1-2 Tbsp heavy whipping cream
Instructions
- Preheat Oven to 400˚F. Remove puff pastry from the freezer and thaw according to instructions while making and cooling the apple filling.
- In a medium pot, melt 1 Tbsp butter over medium heat. Add diced apples and cook, stirring occasionally until softened (5 min).
- Reduce heat to low and stir in 1/4 cup brown sugar, 1/2 tsp cinnamon, and salt. Continue to simmer 3 minutes until apples are soft and caramelized. Remove from heat and set aside to cool.
- Use a rolling pin to roll the first sheet of thawed pastry to an 11" square. With a pizza cutter, cut into 4 equal-sized squares. Place cooled apple mixture over half of each square, leaving at least a 1/2" border.
- Thoroughly Beat together 1 egg and 1 Tbsp water. Brush eggwash lightly on edges of the pastry (just enough to seal), bring the edges together and crimp tightly along the edges with a fork to seal. Repeat steps 4 and 5 with the second sheet of puff pastry to make 8 turnovers.
- Transfer to a parchment-lined baking sheet, keeping them at least 1" apart. With a paring knife, cut 2-3 small slits in the top of each turnover.* Brush the tops with egg wash and bake 20-23 minutes or until golden and puffed.
- While turnovers are still warm, stir together powdered sugar and heavy whipping cream (adding to your desired consistency) and drizzle glaze over turnovers.

I’ll need to bake them early in the morning, but they will need to travel an hour and will not be able to stay warm. Will they still be as good? Any tips?

I made these this morning with my coffee and wow it tasted very yummy. Easy to make and way better than the store. I melted cream cheese and butter with powdered sugar for the glaze. Tasted like a toaster strudels. Will make again.

Hi Eric! Did you make the recipe with Granny Smith apples? If so, you could try Golden Delicious apples, they are less tart, and sweeter and still bake great! You could also just add more sugar if you prefer this sweeter. I hope that helps.

Hi Chris, make sure the rack is in the middle of the oven, not too close to the bottom. The type of pan used could affect this as well since different materials/metals distribute heat differently. Lastly, all ovens bake/heat differently so I highly encourage the use of an internal oven thermometer. I hope your next batch turns out great!

I have not tested this with thawed apples but I think it could work. You could make the glaze with just water in place of whipping cream.
Ice cream would be a good substitute. If you are asking because of a dietary restriction you probably already know what other options you have.
I halved the recipe. In lieu of sugar I used a teaspoon of honey. It was just delicious and oh so easy. THANK YOU!

My kids have been making these daily for the last week, and they have pretty much perfected their apple turnover skills. It reminds me of the McDonald’s apple pies, soft most inside and crisp outer pastry (It’s a mystery to me why they don’t do
better since they’ve been making them for a half century or more, and instead of a freshly grilled spiced pastry they give us a bland stale tube of scalding apple sauce) – but home made is exponentially better, since it’s freshly made not cooked from frozen, with apple texture, and the vanilla / cinnamon gives it a massive lift in flavour.

I live in Costa Rica and it’s very rare to find Puff Pastry, so the fact that I’ve now used almost a whole box of it to make these a couple times this week really is a testament to how great they turned out. I cheated a little and just microwaved the apples with brown sugar, butter and cinnamon because it’s so quick and tastes great and is 1 less pan to wash – this is what I do for apple crisp too. Hi there, I always prefer using Granny Smith apples for my pies to get the best results. The issue with gala apples is they won’t withstand cooking temperatures so I avoid using them.

This recipe is awesome! I was looking for an easy apple pastry recipe over the fall (to get a break from all the pumpkin) and I’ve made these about 5 times since I found this recipe and they’re a hit each time! Fantastic! Just made for the second time. They re-heat from frozen just as well, wrapover with foil, leaving one open side and bake 170 fan for 15-20 minutes.

They are best served fresh but they would still be yummy!
What’s the trick to avoid smelly eggs on the puff pastry after brushing with egg wash
Once it’s baked it should not have any egg smell, however when making it make sure the windows are closed because a draft always makes eggs smellier.

Grand-daughter had same egg allergy. I use plain milk of half & half to brush the pastry. Works well!

Hi, recipe says it makes 8, but directions say to add apple mix to 1 sheet of puff pastry rolled out to 11×11. I followed the directions and ended up with 4 giant turnovers and an unused thawed puff pastry sheet. I reread the recipe and found it would yield the same results…

Hi Monique, you can pre-make the apple filling. I haven’t tried freezing but I have seen it done in other tutorials online, it does keep well in the refrigerator.
This its regarding the question about freezing the filling. I had a little left over from when I made them two weeks ago for a family member. I put the filling in a snack bag and froze it and just yesterday I let it thaw out and used it for turnovers for another family member and she stoped by this morning and was raging about how yummy they were.Freezing the filling worked well for me.
Other than filling these unevenly( I over filled the first four and under filled the second four) they were still great. I added a tiny bit of nutmeg and they were warm and lovely!

Was craving turnovers but we had no apples and its snowing heavily so not heading out to the store. Took out some frozen mixed berries from the freezer and followed the recipe. I have made the apple ones several times with fantastic results using Pepperidge Farm. This time I used a store brand and the dough is much harder to work with. Could not roll the dough out to an 11 x 11 square so they are misshaped. We will see how they come out once baked! The taste is the important part.

Hi Natasha, I did this recipe for Christmas and my family loved it. The only problem I had is that the puff pastry did not inflate as it is in your video and inside some parts they were raw, and it also got burned in the edges. I would love to make this recipe again but fixing my mistakes ☺️.
Maybe it was too thin, and also the puff pastry got stuck on the granite where I rolled the dough even I put flour, please if you can help me with your advices
Hi Carla, rolling too thin might be a culprit – also make sure to thaw according to package instructions and bake on regular conventional oven bake mode (not convection). I hope that helps!
I used honey instead of brown sugar and spiced wafer instead of flour to dust with turned out fine and I used my parchment paper row for a rolling pin it worked in a pinch cuz I’m on vacation oh yeah I told you I put it to 75

These look great! Would it be ok to use milk instead of heavy whipping cream for the glaze? I’d rather not buy the cream to use just 1-2 tbsps because I have no other plans for how to use it coming up. Thanks!

I use milk whenever I make icing for cookies, cinnamon rolls and when I make these. If it’s too runny add a bit more powdered sugar.
You can also make glaze with butter, milk and confectioner’s sugar. Just Google it, it’s a standard.
I grew up eating the Pepperidge Farm frozen apple turnovers. These are less sweet (a good thing) and have more filling

Love the recipe. Can’t wait do try. How do you reheat these apple turnovers? I think I would like them warm better than cold.
Hi Krissy, you can serve them at room temperature the next day but you can also heat them for 15 seconds at a time in the microwave until they reach your desired doneness (or in a toaster oven if you prefer not to microwave), but in either case, heat just until warm. Pastries tend to warm up quickly.
There is a typo in the notes-should be chances not changes. “To reduce the changes of filling leaking out of pastries”. Of course, I’ll be making these soon.

These were great and easy! I would suggest putting the glaze on when the turnovers are cool. I made them with apple pie filling so I baked them slightly less. Such a great recipe. ❤️

I’m so glad to hear that! You can cover the leftovers loosely with foil or plastic wrap. Apple turnovers will keep for an additional 2-3 days in the refrigerator, loosely covered with foil or plastic wrap.
I don’t have light brown sugar. Could I substitute dark brown sugar or turbanado sugar? I have a bunch of apples and want to use them up so they don’t go to waste. Also, the apples are Fuji. Will Fuji apples work?
Hi Jaki, those substitutions should work. Also, a different apple would work but a sweeter apple would require less sugar unless you like a very sweet turnover filling.

Amazing! I made them last week. Just put my second batch in the oven. This time, I rolled the length of the dough out to 15 inches and made 6 from each sheet, for a total of 12. Still a nice size, but not so big.

Hi Barbara, we have a note in the recipe on when it is best to freeze this recipe: “After the pies are fully assembled (before brushing tops with eggwash), freeze them flat on a lined baking sheet then transfer to a freezer-safe Ziploc bag. When ready to bake, arrange them frozen on a baking sheet (do not thaw), brush with some egg wash and bake at 400˚F for 23-25 minutes.” I hope that is helpful!

Love the apple turnover but the problem is I tried Pepperidge farm puff pastry and pastry dough but it doesn’t come out like the video. How many sheets per turnover do you use? Do you use stack ( multiple layers) of the sheets ? I tried to use one sheet and 2 sheets and it wasn’t puffy like the one you made and it gets burnt on the edges quickly ( a little better when I lowered the oven temp and cooking time) please advise
Hi Maria, did you possibly by phyllo dough instead of puff pastry? The Pepperidge farm package (as photographed above) should have only 2 sheets in the box. Also, make sure not to roll the dough too thinly.

How many sheets did you use per one big square then cut into 4?
I am a huge fan of turnover, but never thought about making it. It was so easy and delicious! My boys loved it as well. Well, we all love all of your recipes I tried!
I couldn’t get glaze right though. Mine got really thick and couldn’t drizzle. I kept adding heavy whipping cream… but never got it right and it got taste more cream so gave up. As you said, the glaze is yummy (when I tasted before adding too much cream!) so I want to master it. I have made powdered sugar glaze before with water or milk so I don’t know why this didn’t turn out good. Any tip??
Hi Eri, you could even add a little milk – or water to thin it to a drizzle-able consistency. It’s just a matter of getting the sugar to liquid consistency balanced. Some heavy creams have a higher fat content and also the way the sugar is measured can play into that.
