Avocado Chicken Salad Recipe:

My son was particularly smitten with this chicken avocado salad and requested it for his birthday. It was in his top 3 requests. The other two were this shrimp dip and a cheesy breakfast sandwich. His birthday is coming up this weekend so I’ll be sure to make his dreams come true ;).

This chicken salad is a winner and it is well loved by adults and children. Everything about this is good and you’ll want that fresh lemon dressing on all of your salads.

This chicken avocado salad is still one of my FAV recipes. I generally leave out the egg – sometimes add a few cherry tomatoes. Today I used purple onion (what I had on hand) and added it to chopped romaine. Makes for a lighter main dish at lunchtime (plus gives me left-overs.

I don’t see where this recipe says how many it’s serves? I imagined 4 ( size of your famy)

I have to serve 12 people. Would I triple it?

Ho Dot! Thank you so much for sharing that with me! The serving size can be found at the beginning of the print-friendly recipe card (located at the bottom of the recipe post). The nutrition label shows counts “per serving.” This recipe serves 6 as a side. For 12 people, as a side, I would double it. Hope that helps! To shred chicken breast, you can use two forks and rip it apart or a mixer works too! Once the chicken is cold, make sure you remove the bones, turn your mixer on low speed and slowly mix away until shredded, don’t overdo it though! I hope this helps!

I was very excited to try this as a cool dinner after a hot day in Texas. I’m almost positive the issues are of my own doing- rotisserie chicken breast, bacon, lime juice and salt in the dressing made for a salty salad. I plan to use lemon juice and cook my own chicken next time and maybe wait on the salt in the dressing until everything is mixed up. I enjoy you and your recipe videos!

This was a surprise hit. So flavorful. I didn’t have fresh corn and had to sub for frozen but was still great. When I tasted the dressing, I thought it would be bitter and too lemony but when tossed, it was so flavorful and bright. Love, love, love.

Hi Dina, dry would only be good if you soaked it with the dressing to soften it up. Dry is better for cooked foods. I would skip dill and just leave it out. You can add more of the chives if desired.

Natasha, you used to have a different Avocado Chicken Salad recipe on your site and it was different to the current one. It did not have bacon, corn, hard boiled eggs and I don’t believe it had dill. All of ingredients were presented separately on a platter with a dressing drizzled over. What happened to that recipe? Hi Natasha!

Been watching your videos for awhile now and finally started trying a few of the recipes on my own. We started with the Slow Cooker Chili last night and I made this recipe today.

I have a question, mine came out seemingly a bit bland, and I was wondering if you’ve ever tried any other seasonings to liven it up? I was thinking of adding some garlic powder or paprika but wasn’t sure how much is recommended? Other than that this salad is amazing and so far I’m loving all of your recipes.

Thank you! Much love from Florida

Hi Mariah, it should definitely not be bland. I’m curious if the quantities are off? Garlic powder and paprika may work here – without testing that I’m unable to advise but I would start with a little at a time and taste testing!

You could also try some finely chopped cilantro or evenly parsley, adding them to taste if you prefer to substitute. I hope that helps.

Hi Malody, I have kept it refrigerated up to 2 days. I think this is the very best when it is served the same day but the avocados will be fine until the next day because the lemon juice in the dressing preserves them. To be safe, I would suggest placing plastic wrap directly over the salad to keep the air out which is what causes the avocados to brown.

Very easy to make. I subbed the rotisserie for oven baked, and it came out amazing. Chicken got a good dose of garlic and paprika for a nice kick. This is going on the list of things I enjoy making and love eating.

I just made this during my lunch break, one of the of positive things of working from home during COVID-19…I think it gets better every time I make it. I roast slivered almonds and add for a extra crunch. So so good!!!

Would love to tey this – it looks delicious. However, rotisserie chicken breasts can be 4 oz. each while regular chicken breasts can be 12 to 16 oz. each. Big difference so can you tell me how many cups you use? Otherwise the nutrition is really off.

Hi Glendel, it can also vary from one rotisserie chicken to another but as a reference point, 1 rotisserie chicken will give you about 3 cups of chicken breast.

I don’t like avocado so I make it without. I’ve been making this awesome salad for a couple of years and I use minced garlic instead of dill. It is scrumptious!

I’m a first timer on your site. I love your recipes. This one is delicious and my husband liked it very much. By the way, I also made your chocolate cake with the buttercream frosting and I will be making that again and again. I have to share it with my grown kids, though, or I will end up eating the whole thing. Yum, yum!

My family loved it so much I made it twice in two weeks! I used frozen corn once and canned the other time because who wants to fire up a grill to just grill a cob for a salad? It turned out great! Thanks, it’s family favorite now.

Looks like a great recipe, can’t wait to try it. I happen to have dried dill on hand, do you think that would work in place of the fresh dill? And would the amount still be the same? TIA

Hi Kimberly, dry would only be good if you soaked it with the dressing to soften it up. Dry is better for cooked foods. I would skip dill and just leave it out. You can add more of the chives if desired.

This recipe seems much too simple to be good, but…. surprise ! It’s delicious ! I love this salad ! I do however, use ” Bolthouse balsamic dressing ” It’s great on this salad. This is great as a main dish, with maybe a little garlic bread on the side, or yes, in a pita !

Hi Lucy, great question. We love it with nicely toasted bread. Serve as a main course salad, in sandwiches or pita pockets, or as a filling for lettuce wraps. One of our readers reported serving it over Romaine lettuce as a dinner salad. I hope that helps.
