This Avocado Corn Salad is a bright and feel-good salad that’s loaded with grilled corn, creamy avocado, cherry tomatoes, and the dressing gives it an amazing fresh flavor. This is a crowd-pleasing fresh corn salad that always disappears fast!

Avocado Corn Salad Recipe
We love sweet summer corn for everything from Corn Guacamole to Corn Chowder and this Corn Salad is perfect for summer parties and BBQ’s! I have to warn you though – the video below may elicit major cravings. You just can’t go wrong with this combination of fresh ingredients and the dressing really makes the flavors pop.

Ingredients for Summer Corn Salad with Avocado:
This corn salad is loaded with all the best ingredients of summer. P.S. Do not skip the garlic, the dressing will mellow it out and it gives every bite irresistible flavor. This recipe has a short list of ingredients but it really doesn’t need anything more. It is an easy, excellent salad.
How to Cook Corn on the Cob:
There are several methods of cooking corn and all of them will work for this corn salad. We used grilled corn in this recipe because grilling gives it a smokey sweetness that is completely irresistible.
- How to grill corn on the cob: Grilling corn in husks is easy. We pre-soak the corn with the husks on and then place them directly on the grill for 18-20 minutes on med/high heat rotating every 5 minutes. You can also grill corn in foil if you don’t have time to soak the corn.
- How to bake corn on the cob: Place husks directly on the center oven rack and bake at 350˚F for 30 minutes. No need to soak the corn.
- How to boil corn on the cob: This is the quickest method. Place the shucked corn in a pot, cover with water, bring to a boil and add sugar (yes sugar!) then boil 15 minutes. Click here for boiled corn recipe.
Can I substitute with Fresh corn with Frozen Corn?
Yes! When corn is out of season, it is ok to use frozen corn. Canned corn will also work when you aren’t able to find fresh or frozen, but frozen is the better substitute. Sometimes it is even easier to find organic corn when it is frozen. Follow the package instructions to prepare frozen corn.

Avocado Corn Salad

Ingredients
- 1 lb cherry tomatoes, halved or quartered
- 3 ears of corn, cooked, shucked and cut off the cob
- 2 avocados, peeled, pitted and sliced
- 1/2 red onion (medium), thinly sliced
- 1/4 cup cilantro, chopped (1/2 small bunch)
- 2 Tbsp extra virgin olive oil
- 2 to 3 Tbsp lime juice, from 1 to 2 limes
- 2 garlic cloves, pressed or finely minced
- 1 tsp sea salt , or 3/4 tsp table salt
- 1/8 tsp black pepper
Instructions
- In a large salad bowl, combine sliced tomatoes, corn kernels, sliced avocado, thinly sliced red onion, 1/4 cup chopped cilantro and press in 2 garlic cloves.
- Drizzle the top with 2 Tbsp extra virgin olive oil, 2-3 Tbsp lime juice (adding it to taste). Add 1 tsp sea salt and 1/8 tsp black pepper, or season to taste. Toss the salad gently just until combined and serve.

Hi Betty! The number of servings is listed in the recipe card. This serves 6 (as a side salad). You can increase or decrease the number of servings and it will convert the ingredient list for you.
I think I may have commented before but if not, I made this for a luncheon party and it was very good. I used less corn because I thought there was too much and despite my best efforts at ripening the avocados – they were still hard after 4 days in a paper bag with bananas. I think with proper ripe avocados this would be even better.
Haven’t made it yet, but it’s screaming for black beans.

I’ve made this salad many times and loved it! My question is, if needing to prepare the night before would you recommend making everything and just waiting on the avocado? Or would you recommend keeping all the veggies separated into bowls and tossing everything last minute. I especially want to get the corn cooked and off the cob the night before, but would also love to have as much of the salad ready to go as possible since I’ll be short on time. Thanks!

This was excellent. I served it with various veggie burgers, and smooshed, crispy roast red baby potatoes for Labor Day. We had 8 people total so for the corn salad I increased the corn, onion, avocado, cilantro, olive oil & lime, and S&P. I left the amount of tomato at the single recipe portion as not all guests are tomato fans. The salad was still great! A hit with everyone.

This is very yummy! I would never cook my corn 15 minutes. It tastes much fresher if you only simmer it 5 minutes. It’s overcooked at 15 minutes.

Natasha, I made your avocado corn salad for dinner tonight with two substitutions. I didn’t have limes or cilantro so I used lemon juice and some chopped arugula. This is a delicious salad!!! I used home grown tomatoes (we have an abundance) and the only other things I did differently was that I barely “warmed” my corn in a skillet so that it was crunchy, and I didn’t have a fresh lime so I used fresh lemon squeezed over it. Thanks for such great recipes!!! This is definitely one of my favorites.

I made this today to go with my yummy black bean burgers and Oh My Goodness!! This is an amazing salad!! The flavor is just outstanding! Hi there, that sounds like a good plan. I had our leftovers in the fridge for 2 days, and it was as good as the first day.
Cut the avocado in cubes and keep it separately of the rest of the ingredients, put the seed of the avocado in the middle of the cubes, add the cubes only before serving. That keeps the avocado green since it prevent it from the oxidation.
Old trick used widely in Southamerica.
Thank you Natasha. I’m late to the party here but count me in as an enthusiastic proponent of this recipe. I recently made it for a small but special party where each guest brought a menu item. Someone else wanted to bring the salad but I insisted, “No! I am preparing the salad and I guarantee you will love it!” And oh yes, did they ever. The main course that evening was cold poached salmon and it all went so well together on the plate and palate. I used the recipe ingredients and amounts exactly as written by Natasha. My little tomatoes were half red and half yellow. Absolutely perfect. When I made this corn avocado salad another time I added a few fresh from the garden radishes sliced very, very thin. I thought they added a nice crunch and a little extra zing but did not appreciably alter the taste of the salad.

Hi Brenda, we love onion, but you might also consider using a sweet vidalia onion or red onion which are less potent than yellow onion. Even chives would work here.

I love this recipe! I also add a can of black beans, tail off shrimp AND one of my avocados was bad so I added 2 little containers of Kirkland Organic Guacamole from Costco with 1 avocado and boy was this delicious!! The guacamole really took it to an even better level. This is dinner tonite! Tge shrimp and beans had some protein and make a heartier meal.

Hi Tracy, If the avocado has dressing on it it will be fine. If serving separately I recommend spraying some lemon juice over it to protect it.

I sliced two big pieces of red onion, brushed with olive oil and he grilled that as well Chopped and added to salad…delicious
For me this just needed a little extra salt and only two tablespoons of fresh lime juice

I have cut up a chili dried mango in tiny pieces. It gave it just the right amount of bite. Got it at Trader Joes. Was great!

The Avocado Corn Salad is absolutely a 5⭐️ yummy! I followed the recipe (except I used half of small white onion).
Next time, I will halve the recipe, because we are empty nesters. I’m curious, as to how long the avocado will hold up, when the leftovers are refrigerated. I tossed the avocado in the lime juice, before adding in the other ingredients, in hopes of prolonging their freshness.

I’ve been wanting to make this since the first time I saw it. Served it tonight with cilantro lime chicken thighs and white rice. It was wonderful…easy to put together and so flavorful! My teenage boys really liked it and took such big helpings I almost didn’t get any! Will make this again and again.

Hi Gita, This salad contains lemon which will preserve the avocado for a bit longer allowing the avocado to stay green.
I LOVE this recipe and we made it soooo many times last summer, making it tonight for Hubby’s Birthday. But it does NOT contain lemon, you have lime in the recipe. LOL
Oh dear, I meant to say lime, not lemon, but thankfully they are really interchangeable in this recipe.
Can I substitute for cilantro I just do not like it.
Hello Cindy, you could try adding fresh parsley to taste. I think fresh dill would taste great also in place of cilantro.

Will this recipe keep if I make this a day ahead and add the avocado just before serving? Also, could I add Israeli couscous to this salad to bulk it up a bit? If so – would you recommend adding in addition to the stated ingredient amounts, or sub in for part of the corn? Thanks!

Hi Natasha, made this last month for fiancé and I we loved it. I did add black beans to it though. Making tonight for a girls get together tomorrow but will add the avocado when I get there. Just can’t decide between the black beans again or as others suggested shrimp which also sounds great.

Hi Beth, If the avocado has dressing on it it will be fine. If serving separately I recommend spraying some lemon juice over it to protect it.

This was so good I kept adding leftover things from the fridge to it. Also, my husband has trouble with onions, but can have onion powder and chives, so I subbed that. (I know, those people that substitute and then rate things!) But it was still awesome. Also had some leftover cilantro lime riced cauliflower in the fridge and tossed that in, too. So yummy!
