How to Make Beef and Broccoli:

This recipe moves fast and comes together in 1 skillet, so you want to have all of your ingredients prepped and ready to go before you fire up the stove. It is just 6 steps in one skillet!

  1. Slice beef strips
  2. Make stir fry sauce
  3. Cook broccoli and remove from pan.
  4. Cook beef
  5. Add stir fry sauce
  6. Return broccoli to the pan

The Best Beef and Broccoli Sauce:

Many stir fry recipes have gone wrong with a poorly made sauce. We tested this recipe over and over until we arrived at the perfect balance of sweet and savory. For the best stir fry sauce:

  • Use low sodium soy sauce (or Gluten Free Tamari)
  • Use the right amount of fresh ginger – it has strong flavor so don’t overdo it.
  • Do not skip the sesame oil as it gives authentic flavor
  • Simmer sauce at least 3 minutes to mellow out garlic and ginger
  • For a thinner sauce, add 2 Tbsp water at the end

How to Ensure Tender Beef?

The right cut (see list above) can make all the difference in a stir fry. Here are our best tips to achieve tender beef:

  • Freeze steak 30 minutes for easier slicing
  • Use a sharp knife to cut super thin slices against the grain
  • Add steak to a HOT skillet to sear and seal in juices
  • Don’t overcrowd the pan or it cools quickly and will steam cook

Can I Make Beef and Broccoli Ahead?

This saucy beef and broccoli recipe reheats really well so it’s perfect for weekly meal prep and to-go lunches for school and work. The protein and nutrients found in beef give you and your family the strength and energy you need to get through the busy school season.

For meal prep: add cooled rice to a heat-safe container and top with the Beef Broccoli Stir Fry, then cover and refrigerate until ready to heat and serve (Beef and Broccoli can be refrigerated up to 4 days).

How to Pack a Hot Thermos:

Pack a hot thermos in the morning and it will be warm at lunchtime. A hot thermos can keep food hot for 5 hours before it’s eaten, and this Broccoli Beef is the Best. School. Lunch. Ever!

  1. Heat the thermos first by filling 3/4 full with boiling water (do not overfill), cover with lid and let sit 5 min and drain just before adding food.
  2. Meanwhile, heat food to 165˚F. Place into the heated thermos and close with lid.

Ingredients

Beef and Broccoli Ingredients:

  • 1 lb flank steak, very thinly sliced into bite-sized strips
  • 2 Tbsp olive oil , (or vegetable oil), divided
  • 1 lb broccoli, (cut into 6 cups of florets)
  • 2 tsp sesame seeds, optional garnish

Stir Fry Sauce Ingredients:

  • 1 tsp fresh ginger, grated (loosely packed)
  • 2 tsp garlic, grated (from 3 cloves)
  • 1/2 cup hot water
  • 6 Tbsp low sodium soy sauce, (or GF Tamari)
  • 3 Tbsp packed light brown sugar
  • 1 1/2 Tbsp corn starch
  • 1/4 tsp black pepper
  • 2 Tbsp sesame oil

Instructions

  1. Prep: Start cooking white rice first so it's ready when the stir fry is done. Cover and freeze steak 30 minutes for easier slicing.

  2. Combine all stir fry sauce ingredients in a bowl, stir well to dissolve the sugar, and set aside.

  3. Place a large skillet over medium heat and add 1 Tbsp oil.  Add broccoli florets and sauté 4-5 minutes, partially covered with lid, stirring or tossing several times until broccoli is bright green and crisp-tender then remove from pan. Tip: If you prefer softer broccoli, add 2 Tbsp water before covering with the lid and it will steam cook the broccoli.
  4. Increase heat to high heat and add 1 Tbsp oil. Add beef in a single layer and sauté 2 minutes per side or just until cooked through. Quickly pull out a piece to test for doneness.
  5. Add the sauce, reduce heat to medium/low and simmer 3-4 minutes. It will thicken. Add broccoli and stir to combine. Stir in 1-2 Tbsp water to thin the sauce if desired. Serve over white rice.

    Hi- the recipe says 2tbs olive oil but in directions it only says to add one tablespoon, where do I add the other tablespoon?

    What gives this dish a the high carb content?

      Hi Trinity! I havne’t tried a low carb version but here’s what one of my readers wrote: “This was seriously so good and really easy to make. I subbed golden monkfruit sweetener for the brown sugar and used xanthan gum instead of cornstarch, served with cauliflower rice because we’re trying to eat keto/low carb, and it was SO GOOD! I will for sure make this again, and I’m looking forward to trying more of Natash’s recipes.” I hope that helps!

    This was fantastic. The only thing I ended up changing after a bit of experimentation was replacing the hot water in the sauce with some low sodium beef stock. Small touch that really amps up the beef flavor if that’s your jam!

    Darn fine recipe!!!! Better than the best restaurant says theirs is ! My son who never compliments my cooking said this was the best meal in 10 years I made for him 😊. I used Trader Joe’s balsamic rosemary beef tips which I rinsed prior to putting in the pan and it absorbed the best sauce and was sooo tender! Will be using this recipe again!!!!

    Natasha, I have made many many of your dishes. They are AMAZING. I love how quick easy they are. and your ingredients are not the “hard to find” kind. I have made this recipe a few times now (with a few tweaks) and it is absolutely wonderful. I’ve always been an extra sauce kinda person. So I doubled the sauce ingredients. Not the ginger/garlic. Only used about 3 TBS of sesame oil. I also steamed the broccoli first. Then Added it all the meat once it was cooked. SO GOOD!!! THANK YOU!! You are AWESOME!!

    I really enjoy this recipe, however there are some things I change to really get that favorite Chinese restaurant dish to it.
    First is velveting the beef – this is a traditional method of tenderizing meat that will give you those tender and silky pieces.
    Secondly is adding a lot more garlic, as well as a bit of sriracha if you like more flavor complexity and heat.
    Thirdly is about half the sugar is enough. I find this recipe to be way to sweet.

      Hi Dawn, I haven’t tried using powdered ginger, but you can try to estimate it according to your preference. One of our readers mentioned they were going to try using 1/8 teaspoon (or maybe a little less) of ground ginger, but I don’t have an update on that outcome.

    how much in advance can I make the sauce? Can I make it a day ahead? I like to split tasks up so it goes quickly. (I’m 76 and my energy isn’t what it used to be. )

      Hi, yes that should work, but you will need to give it a stir before using it since the corn starch tends to separate and settle.

    I made this a week ago. I followed the recipe exactly except that I used frozen broccoli that I cooked separately before mixing in w/beef and sauce. A WINNER!!! Great recipe, and I will make again. I just had the same from my local Chinese takeout, and I have to say your recipe is way superior. One thing I must ask however is there some easy way to grate garlic and ginger? What kind of grater do you use?

    This was a delicious recipe with an addictive sauce. However, next time I will not cook the beef for so long. I know you want to get a good sear on the beef, but letting it sit for 2 minutes was too long for me and made the beef tough. Next time I will only let it sear for 1 minute (or less) so it will remain tender. I am not a fan of “crisp-tender” vegetables, so I let them steam as indicated in the recipe, although I needed to add more than 2 Tbsp of water. I also definitely had to add more water to the sauce at the end to keep it the proper consistency. But, overall, this was a wonderful dish that I will make again.

    Worked perfectly exactly as you described. I added some portabella mushrooms, which I sautéed on the side, to not add more moisture and I cooked the beef first and set it aside. The sauce is perfect!

        Yes. I had some excess frozen trimmings from a full beef tenderloin I had previously cut into steaks. I sliced thin and followed the same steps. Awesome recipe followed exactly! So good in fact I tried it again with a frozen boneless chicken breast. Same deal- slice the chicken thin before it fully thaws to easily get the thin slices.

    The sauce in this recipe is fantastic. I discovered when I began to make this that my broccoli was no longer good so I substituted asparagus, mushrooms and onion for the broccoli. Only other difference is I reduced the sugar by half. My hubby raved about the results. I will be using this recipe for many Asian dishes in the future! Thank you so much!!

    We really enjoyed this recipe. Normally I try to make a stir fry sauce with some of this and some of that but it is hit or miss especially with the kids. This was spot on and their bowls were clean, outside of some broccoli stems. I followed your ingredients and your directions with the exception of using arrowroot powder instead of cornstarch. I will make this again and this time add an additional vegetable or try with tofu as well. The house has a nice fragrance after dinner from the ginger and garlic in the sauce. Thank you so much. Your recipe has restored my children’s faith in my stir fry dinners.

    your Direction’s need to be a little more precise because you never tell anybody to take the broccoli out of the pan before you add the beef but then your third instruction tells you to put the broccoli back in the pan. For someone that’s not a seasoned cook they might not pick up on that.

    This is definitely the best Beef and Broccoli recipe I’ve found so far. I am gluten free so I have to get my Chinese takeout fix at home. I used GF Tamari and cut back on the sugar a little, but otherwise stuck to the recipe closely. It was delicious! Served with veggie fried rice and it was a veggie-packed meal that tasted like a decadent treat. We’ll definitely be making it again. Thanks for a keeper!

    Sauce waaaaaay too sweet. Not a make again for me. I prefer this sauce. 1/4 cup soy sauce
    1 1/4 cups water
    1 tablespoon grated ginger
    2 cloves garlic, minced
    1 teaspoon sesame oil
    1 tablespoon sugar
    4 teaspoons cider vinegar
    2 tablespoons dry sherry or 2 tablespoons rice wine
    3 tablespoons cornstarch

    Hi Natasha. This was a great recipe! But, it definitely was not a 30 minute meal! We tripled the sauce. Slice the steak, peel and grate the ginger, peel and chop the garlic; that alone took me 30 minutes! It was very good!

      Just a tip…
      Yes ago, I took a Chinese cooking class in my hometown from a Chinese chef who owned an excellent local restaurant so I like to make Chinese dishes a lot. This is a great recipe. There really is no substitute for fresh ginger but luckily, you can peel it and freeze it to use anytime you need it. Saves time later. Much easier to grate frozen ginger as well!

    This recipe comes together so quickly and it’s absolutely delicious. Now my picky young children won’t eat the sauce so I just take some beef and broccoli out before adding the sauce. I’ve made it twice already and it’s a big hit with the adults with the sauce and with the kids without.
