How to Make Beef and Broccoli:
This recipe moves fast and comes together in 1 skillet, so you want to have all of your ingredients prepped and ready to go before you fire up the stove. It is just 6 steps in one skillet!
- Slice beef strips
- Make stir fry sauce
- Cook broccoli and remove from pan.
- Cook beef
- Add stir fry sauce
- Return broccoli to the pan
The Best Beef and Broccoli Sauce:
Many stir fry recipes have gone wrong with a poorly made sauce. We tested this recipe over and over until we arrived at the perfect balance of sweet and savory. For the best stir fry sauce:
- Use low sodium soy sauce (or Gluten Free Tamari)
- Use the right amount of fresh ginger – it has strong flavor so don’t overdo it.
- Do not skip the sesame oil as it gives authentic flavor
- Simmer sauce at least 3 minutes to mellow out garlic and ginger
- For a thinner sauce, add 2 Tbsp water at the end
How to Ensure Tender Beef?
The right cut (see list above) can make all the difference in a stir fry. Here are our best tips to achieve tender beef:
- Freeze steak 30 minutes for easier slicing
- Use a sharp knife to cut super thin slices against the grain
- Add steak to a HOT skillet to sear and seal in juices
- Don’t overcrowd the pan or it cools quickly and will steam cook
Can I Make Beef and Broccoli Ahead?
This saucy beef and broccoli recipe reheats really well so it’s perfect for weekly meal prep and to-go lunches for school and work. The protein and nutrients found in beef give you and your family the strength and energy you need to get through the busy school season.
For meal prep: add cooled rice to a heat-safe container and top with the Beef Broccoli Stir Fry, then cover and refrigerate until ready to heat and serve (Beef and Broccoli can be refrigerated up to 4 days).
How to Pack a Hot Thermos:
Pack a hot thermos in the morning and it will be warm at lunchtime. A hot thermos can keep food hot for 5 hours before it’s eaten, and this Broccoli Beef is the Best. School. Lunch. Ever!
- Heat the thermos first by filling 3/4 full with boiling water (do not overfill), cover with lid and let sit 5 min and drain just before adding food.
- Meanwhile, heat food to 165˚F. Place into the heated thermos and close with lid.

Beef and Broccoli Recipe

Beef and Broccoli is an easy, 1-pan, 30-minute meal that is loaded with fresh broccoli, tender nutrition-packed beef, and the best stir fry sauce. We love this over steamy white rice.
Ingredients
Beef and Broccoli Ingredients:
- 1 lb flank steak, very thinly sliced into bite-sized strips
- 2 Tbsp olive oil , (or vegetable oil), divided
- 1 lb broccoli, (cut into 6 cups of florets)
- 2 tsp sesame seeds, optional garnish
Stir Fry Sauce Ingredients:
- 1 tsp fresh ginger, grated (loosely packed)
- 2 tsp garlic, grated (from 3 cloves)
- 1/2 cup hot water
- 6 Tbsp low sodium soy sauce, (or GF Tamari)
- 3 Tbsp packed light brown sugar
- 1 1/2 Tbsp corn starch
- 1/4 tsp black pepper
- 2 Tbsp sesame oil
Instructions

Prep: Start cooking white rice first so it's ready when the stir fry is done. Cover and freeze steak 30 minutes for easier slicing.

Combine all stir fry sauce ingredients in a bowl, stir well to dissolve the sugar, and set aside.

Place a large skillet over medium heat and add 1 Tbsp oil. Add broccoli florets and sauté 4-5 minutes, partially covered with lid, stirring or tossing several times until broccoli is bright green and crisp-tender then remove from pan. Tip: If you prefer softer broccoli, add 2 Tbsp water before covering with the lid and it will steam cook the broccoli.

Increase heat to high heat and add 1 Tbsp oil. Add beef in a single layer and sauté 2 minutes per side or just until cooked through. Quickly pull out a piece to test for doneness.

Add the sauce, reduce heat to medium/low and simmer 3-4 minutes. It will thicken. Add broccoli and stir to combine. Stir in 1-2 Tbsp water to thin the sauce if desired. Serve over white rice.

Great recipe, however, why don’t you velvet the beef to make it more tender as Chinese cooks do? Stire frying on a hot Wok also to me is a lot faster to cook and taste great,.

Hi Michele, I haven’t tried using powdered ginger, but you can try to estimate it according to your preference. One of our readers mentioned they were going to try using 1/8 teaspoon (or maybe a little less) of ground ginger, but I don’t have an update on that outcome.

Great recipe, fast and easy. I backed off on the sugar and added a tablespoon of honey and some roasted red peppers that I had on hand to help provide the sweetness in the sauce. Will make again for sure.

Hi Ed, I haven’t experimented with anything else, but honey would probably be the next best thing if you wanted to omit the sugar, just add it to taste since honey is sweeter than brown sugar cup for cup. One of my readers wrote: “We omit the brown sugar from this recipe because of my wife’s diet, but she does drizzle a slight amount of honey and that works amazing.”

This recipe is superb! The taste was way better than you can imagine. In order to boost the vegetable content, I added 1 cup of multicolored chunks of sweet peppers and 1 pint of Baby Bella mushrooms in addition to the broccoli. I also added Siracha since we like it spicy but even with these additions, the sauce was still the star of the meal. it is going in my regular menu rotation for sure. Thank you for sharing.

OH MY! Easy to prepare, easy to substitute some ingredients if needed, and easy to overeat because it is so good! I lessened the amount of sesame seed oil to only 2 teaspoons and ground ginger does work well if you don’t have fresh ginger. I will put in a can of diced water chestnuts next time. Thank you for another recipe to add to my Family Cookbook. (My grown sons are already arguing who will get the cookbook when I’m gone….little do they know, I have two exact ones.)

Can I use a sugar-free sweetener in place of the light brown sugar . . like SWERVE? Also can I use Coconut Aminos in place of the Soy Sauce ?
I haven’t tested those substitutions to advise but I think the sugar substitute should be alright. Haven’t tried Coconut aminos too!
The Chinese Restrauànt we frequent. The broccoli is hard as raw broccoli Broccoli 😋 has to b a crisp tender crisp but has to be cooked! At least 1/2 done! The place I’m referring to I don’t think the broccoli has even touched the sauce with a sprinkle of raw broccoli on top! I like the idea of adding a touch more water to the broccoli just so it’s cooked but not raw!

I made this recipe tonight for a family of 4 (the 2 kids are 6yo and 8yo) and it was such a hit all round that I came to leave a review. My 6yo doesn’t like rice, will usually turn up his nose at anything that has rice in it, and he ate a huge amount. I left out the sesame oil purely for taste preference, and I exchanged 1 tbsp of soy sauce (we used liquid aminos) for a tbsp of tomato ketchup, and I also added some thinly sliced carrots that I cooked in with the broccoli. It was so delicious and super easy to make!! I’ve never been disappointed with any recipes from here. Thank you for sharing this great recipe!

I tried this the first time and found the sesame oil overpowering. I reduced it to 1 Tbsp and it was perfect. I’ve even doubled the sauce and it’s perfect. This is absolutely the best beef & broccoli I’ve ever had. We don’t order it from the restaurants anymore, we make it at home.

I made this and used shaved beef because that’s all I had but still excellent
2 Tbsp of sesame oil? I made this for my family and everything was smelling delicious while mixing the sauce ingredients until I saw it wanted me to add 2 Tbsp of sesame oil. I added 1 knowing how potent sesame oil is. The only flavor I could taste was that oil. I think this recipe should have called for only 2 tsp of the stuff.
Hi Steven, that is correct and once the sauce is simmered, it mellows out and adds nice flavor notes without being over powering, but you can add it to taste if you prefer less.

I had been looking for the best Broccoli Beef recipe I have tried so many and all of them have always been “eh” and some just plain not tasty where all you could taste was the soy sauce and nothing else. This was so good! I used moose meat and marinated it for 2 hours with sesame oil, garlic, ginger, soy sauce, and black pepper before frying in a wok! The rest of the recipe I followed to a T. I made this last night. It was good, but for me just did not have quite the WOW! factor described in so many of the other reviews. My picky eater said it was very good. I made the sauce exactly as printed. I added some chopped onion and red pepper to the broccoli. I don’t have the patience to stand there and fry 128 little pieces of beef and turn them over with tongs one at a time. So I bought 4 large slices of thin sliced steak and cooked two at a time in the cast iron skillet. Then I took them over to the cutting board and cut them up into a bunch of little strips. When a person orders beef and broccoli at a Chinese takeaway it is common to get 2 or 3 little over cooked florets in the whole serving. It was a treat getting a generous serving of bright green broccoli in the dish. Served over white rice. Thanks for sharing!

I haven’t made this yet but I have been looking at a lot of recipes for beef and broccoli and I’m wondering why so many recipes call for brown sugar. I watched Ming Tsai make it and he didn’t call for any sweet ingredients. Have you or any of your viewers made it without a sweetener? If so I’m guessing you feel it’s better with it? With diabetes running in the family I like to be aware of my sugar intake and cut back whenever possible. Thanks
Hi Max, I haven’t experimented with anything else, but honey would probably be the next best thing if you wanted to omit the sugar, just add it to taste since honey is sweeter than brown sugar cup for cup. One of my readers wrote: “We omit the brown sugar from this recipe because of my wife’s diet, but she does drizzle a slight amount of honey and that works amazing.”

I just made a stir fry the other night and used a sauce recipe very similar to this one. The biggest difference was that it didn’t use brown sugar or any sweetener. The reviews for that recipe were were fantastic, but I found it to be underwhelming in the finished dish. So, I’m going to try this recipe and I’m betting this one will live up to my expectations. Just made this and it did not disappoint! It was perfect and the cornstarch thickened the sauce just right. I added a little bit of red pepper flakes to give it a little heat and it was perfect. Will definitely be making this again. I had meat for a pot roast, and just sliced it into thin cuts, and it worked great.

My (late) mom loved watching your videos and when I came across this while looking for a beef with broccoli recipe, it felt like she was saying hi to me so I knew I had to make it. <3 No regrets at all. I had some already cooked steak that had been a bit tough, I cut it up and let it sit in the sauce while I did the other steps, turned out AWESOME. Making it again tonight. Love how easy and tasty it is.

I have been craving Chinese food for a while and when I give in and order take out, its never what I am looking or. This was it, so darn good. I added some red pepper flake to give it some heat and I served it over noodles for dinner and than served over rice in my to-go for lunch. Both were amazing. I also added onion and bean sprouts for some extra veggie. I will be making again.

Yum! This was very delicious! Just like the restaurants. I used a tenderloin that I had in the freezer. Hardest part was cutting that up. I cut it frozen to get thin slices. I never leave reviews, so you know it impressed me. Yum again!

I’ve been making beef & broccoli for years with a recipe I picked up when I lived in Australia. Now that we’re in Panama, we can’t get the meat I normally used which was flank steak. It’s not a cut available here so we use tenderloin which is inexpensive here. Can’t get tri tip either. I want to try your recipe. What do you think about using tenderloin? Our beef here is grass fed and very tender for the most part. I also add un-roasted and unsalted cashews which add a nice bit of crunch. Also mushrooms. I’m going to make your recipe tonight. Love beef & broccoli.
Hi Steve, while I haven’t tried that, I bet that could work! HEre’s what one of my readers wrote: “I had some excess frozen trimmings from a full beef tenderloin I had previously cut into steaks. I sliced thin and followed the same steps. Awesome recipe followed exactly! So good in fact I tried it again with a frozen boneless chicken breast. Same deal- slice the chicken thin before it fully thaws to easily get the thin slices.” I hope this is helpful!
You knocked this one out if the park, it was delicious. Broccoli was perfectly crispy flavour was awesome, we ate some of the rice with seaweed. We love spicy hot so put just a bit of soracha on it oh my gosh so good. Thank you

I never leave reviews, but this meal is honestly delicious, a much healthier version of Chinese takeout, and it’s very hard to mess it up. I’ve made it about 5 times and it always turns out amazing, including the first time. I always add more veggies, and here I usually add onion slices and red pepper and a pinch of cayenne. One time I used thinly sliced chicken breast instead of beef and it was amazing too. It has become one of our weekly dishes! Thank you Natasha 🙂

Just made this for dinner tonight and it was excellent. One thing, I used a tablespoon of cold water (out of the 1/2 cup water) to mix the corn starch into a slurry before making the sauce.

Best beef and broccoli recipe ever! That sauce is unreal, I was licking it off the spoon before washing dishes. An important question, when these recipes (I can’t wait to try the ramen version) say sesame oil, is it toasted sesame oil or just plain sesame oil? Thank you. I almost want to double the sauce next time. I added one onion quartered long ways to kinda mix things up. If you use frozen steam in bag broccoli like I did, only microwave it half the time before proceeding as normal. My beef cooked off some liquid so I got rid of that before proceeding. I added a small pinch of red pepper flake. I bet some baby corn, water chestnuts, and thin sliced carrot would be good also. If you make 2 bags of broccoli and a lot of beef like me, you may want to double the sauce. It was ok, but it almost has too much sesame oil.

Oh my goodness this Beef Broccoli was delicious!!! The only thing I changed was using my zester instead of grating the ginger & garlic because I don’t like stringy pieces of ginger. My husband loved it as well. Thank You for such a wonderful recipe.

Didn’t have broccoli or beef so I used chicken and green beans . Used tamari and chopped sushi ginger. Doubled the sauce ingredients except for soy sauce. Yummm. Tastes just like the Chinese restaurant.

I’ve made this recipe and Natasha’s Chicken Broccoli Stir Fry recipe and loved them both! I am curious about one difference in approach between the two recipes.. The Beef Broccoli recipe instructs cook the veggies first, then the meat second. The Chicken version cooks the meat first, then the veggies second. Is there a reason for the order between beef vs chicken? Does it matter? Just curious for my learning. And thank you for showing how to use fresh ginger!
