Chicken stir fry couldn’t be easier to make than this recipe.

  • Cut the chicken thighs (or breast) into bite-sized pieces and cook.
  • Cook vegetables until desired tenderness.
  • Prepare easy sweet and savory stir fry sauce.
  • Combine the chicken with the vegetables and sauce. Simmer until sauce thickens and ingredients are well incorporated.

TIP: When cutting chicken, slice into small bite-sized pieces. This will ensure the chicken is full of flavor, tender and not hard to chew.

Ingredients

Chicken Stir Fry Ingredients:

  • 1 lb chicken thighs cut into bite-sized pieces
  • 1/2 zucchini sliced or cubed
  • 2 Tbsp oil divided
  • 1 Tbsp butter
  • 1 cup broccoli cut into florets
  • 1 small carrot julienned or cubed
  • 8 oz mushrooms sliced
  • 1/2 red pepper cubed
  • 4 garlic cloves minced
  • 1 tsp fresh ginger minced
  • 1/2 onion cubed
  • ½ cup cashews

Best Stir Fry Sauce Ingredients:

Instructions

  1. Trim chicken thighs of excess fat and cut into bite-sized pieces. Cut the vegetables into even-sized pieces (about the same size as the chicken pieces).

  2. Combine all of the ingredients for the sauce in a bowl.
  3. In a large pan (or wok), on med/high heat, heat 1 Tbsp oil. Once oil is hot, add chicken in a single layer. Cook chicken until browned, mixing as needed. Once cooked, remove chicken from pan and set aside.

  4. Add the remaining oil and the butter to skillet with the broccoli, zucchini, mushrooms, red peppers, onion, and carrots. Cook until vegetables are crisp tender, mixing frequently.

  5. Add chicken back to the pan. Add the garlic and ginger and cook 1 minute, stirring frequently.

  6. Add the cashews then pour the sauce into the pan and bring to a boil. Turn down heat and let stir fry simmer until the sauce thickens and is well incorporated with the remaining ingredients. Garnish with green onion and sesame seed before serving if desired.

    My ginger is old and limp but i cant get to store and I still use it I know its not fresh but it smells right even if it is soft can i use it or better to use the ginger in can

      Hi Ashley, ginger does add that great authentic stir fry flavor but you could sub it with a little more garlic. As for the cornstarch, others shared that they skipped it and the result was also great.

    I’m not sure if it is a typo or not, but is that the actual amount of sodium in the meal? 42% is quite high. I’m very interested in making this meal and would like to know if that is the actual amount of sodium in the meal.

      Hi Christine, that is accurate with 4 servings – you could add a little less soy sauce or scale down the sauce to cut down on sodium.

      To make the sodium level lower in this dish, use fresh mushrooms and not canned. Use unsalted cashews. Use no salt added chicken broth and use low sodium Soy Sauce and cut the amount to 1/8 cup instead of 1/4 cup. Believe me, I feel your pain. Most foods are LOADED with sodium. My wife and I are on sodium restricted diets. We don’t use added salt in any dish and we buy all low sodium products or fresh. Learn to read the labels and don’t use pre packaged or canned food if you can help it.

    Baked some chicken legs and wanted to add a “pop.” Made this recipe and then pulled the meat off the bones and mixed with the sauce and veggies – delicious and it was quick. The sauce has a great, thick, consistency. Made this GF with GF soy sauce.

      Hi Dominique, because the sauce (including the honey), comes to a boil, according to this source, if there are any dangerous bacteria, boiling kills it off. You could also try brown sugar added to taste. Keep in mind honey is sweeter than brown sugar Tablespoon for Tablespoon.

Once cooked, remove chicken from pan and set aside.” once that step is done you add vegetables to the same pan and then re-add the chicken in step 5. I hope that helps!     I made this last week and it was delicious. I wanted to make a stir fry with honey so I chose this recipe. The kids loved it too.     Great stir fry. I would add more vegetables next time, I put in what the recipe called for but it wasn’t enough. Also I found I needed to add more chicken stock and a bit less ginger.
    Still scrumptious though!

      Hi Victoria, it really depends on how many you are planning to serve. This recipe makes 4 portions so I will typically make between 1 and 1 1/2 cups of rice which after it is cooked, 1 cup raw rice = 3 cups cooked rice.

      Hi Lisa, Coconut Aminos is our favorite product to use as a substitute, but keep in mind it does have less sodium so adjust seasoning to taste.

    Really delicious recipe!! The sauce was so good, just too salty.
    It’s a very versatile recipe because you can add your favorite veggies! I will make a few changes next time. Use low sodium soy sauce. I did double the sauce recipe which may have made it extra salty. I would also simmer the sauce to thicken in a separate pot before adding it to my chicken and veggies. Adding it to them and then simmering over-cooked my ingredients. It tasted just like the stir fry at our local restaurant! I will definitely be adding this to the rotation at my house!

    I’m making this as we speak and realized that it’s out of order and not very well thought out.

    1- you forgot to mentione adding the onions which you mentioned in the ingredient list.

    1- no salt? No pepper?

    I’m hoping it turns out great since I caught on to the seasoning part while making the chicken. Will post again after dinner!

      You cannot go wrong if you follow the recipe Sarah. The onions are in step number 4. You must have missed it. And correct, no salt needed unless you are using low sodium soy sauce. Or you just love tons of salt.

      Hi Christina, I haven’t tested that but here is what one of my readers wrote “I made it with carrots,snap peas, red pepper, broccoli, zucchini and onion. I also substituted the soy sauce for liquid aminos and added a little crushed red pepper for a little spice and served it over rice noodles” I hope that helps.

    My family LOVED this recipe!!!! I added an additional tablespoon of honey, because the soya sauce I had on hand was super salty… next time I will buy reduced sodium soya sauce. My husband added some red pepper flakes for a touch of heat as well. Excellent stir fry recipe for sure!!!!

    This stir fry was delicious! I’m Asian so I know a good stir fry dish. I used fresh asparagus (instead of broccoli) and enoki mushroom (Japanese mushroom). I also used only 1 tbsp honey. You can’t go wrong with Natasha’s recipes!

        I used frozen broccoli and zucchini. After cooking the chicken and removing, I sauted the raw veggies in oil and butter as instructed, then removed. I sauted the frozen broccoli and zucchini until the water content from them was evaporated and they were heated through. Then I continued with the recipe. Tasted great!!!

    I had high hopes for this dish and was very excited to try it since it had so many good reviews. However, the sauce had too strong of a garlic flavor and there could have been more sauce. I think you could tweak the recipe a bit and then it would be a decent Chinese dish.

      Hi Sarah, it helps to sautee for a minute after adding the garlic – giving it that minute on the heat really mellows out the garlic flavor. You could increase the sauce if you prefer it more saucy but also be sure to use the same amount of noodles as stated in the recipe – otherwise the noodles can overwhelm and absorb most of the sauce and leave it feeling dry. I hope that helps to troubleshoot.

    I seasoned the chicken beforehand myself since this recipe doesn’t call for any seasoning whatsoever, and the sauce took forever to reduce, all the veggies got soft. I’d skip the water in the sauce next time, and not bother “simmering” just let it keep boiling

      Hi Ada, adding salt early on in the recipe isn’t recommended since it can cause the vegetables to release extra juice. Also, be sure to add the chicken and veggies to the skillet when it is hot. The sauce normally thickens fairly quickly if no substitutions or modifications are made. This post might help on how to measure ingredients (wet and dry) to ensure you have the correct proportions.

      I made this randomly beacuse I was sick of regular baked chicken. So glad I did! I’ll be making this again. It’s a perfect recipe for my super picky husband, I made this with just chicken and mushrooms.     We loved this recipe! Of course, because of being on lower sodium diet, I had to make a few adjustments to reduce sodium. I used a combination of lemon ponzu sauce and sweet soy sauce, which are both lower in sodium than light soy sauce. I also left out the honey because of the sweetness of the sweet soy sauce. I had no zucchini in the house, but added one ear’s worth of corn and some whole french green beans.

    I made this for dinner last night and the family enjoyed it! I have a very similar sauce (white sugar instead of honey and no cashews) so I used that and followed your instructions. I topped off the final dish with 4 Thai chilies so whoever wanted could take one. I normally incorporate the chilies into the dish but because I used red, orange and green bell peppers I didn’t want anyone (hubby!) to mistake it for the red bell peppers!       Hi Beth, because the sauce (including the honey), comes to a boil, according to this source, if there are any dangerous bacteria, boiling kills it off. You could also try brown sugar added to taste. Keep in mind honey is sweeter than brown sugar Tablespoon for Tablespoon.

    Just got through making this. I changed just a few things for convenience. I used ground chicken and shiitake mushrooms cause that’s what I had. Then I added sesame oil and white wine vinegar to the sauce for a different flavor. My entire family loved it.

    Hi Natasha! I made this stir-fry last night with 3 chicken breasts along with a very large yellow pepper, 1 long carrot which I julienned, just over a cup of broccoli florets, a large onion, 3 thin celery stalks, 3 large garlic cloves and 2 tsp minced ginger. The sauce is very tasty and I will have enough for about 3 or 4 more meals. Way better than take out! Thanks for another good staple easy recipe!

        Most choose to serve this over rice, but it is possible to stir it in the rice after frying up the vegetables. You will need to add water and flavoring to that, however. 🙂 I hope you enjoy that.

    Delicious! Many stir fry recipes are too salty, but this was perfect. I added a some fresh pineapple, left out the cashews and served over white rice! It will be my go to stir fry from now on!

    Hubby and i made this last night and LOVED it! He raved about it the whole time we were eating and is still going on about how good it was today.
    We used snow peas instead of zucchini and i only used 1/2 the amount of garlic. Super easy and beyond delicious! Can’t decide what to make next!!

    This came out very yummy. Would be great if you could add approximate cooking times to the steps in the recipe for us novices … I definitely let my veggies go too long. Haha!

      I followed the recipe exactly, and the sauce was so runny that the veggies were swimming in it until I could cook it down, so they were very soggy. I also adjusted with additional corn starch once I realized how much there was. Maybe not so much water next time. Otherwise the taste was good.

    are the cashews suppouse to be raw or salted? Or raw and toasted and then added into the dish? Mine tasted soggy right away, was not pleasant.

    a great recipe, love being able to use my own fresh ingredients in what, for me, is a different flavor profile, and also love knowing what’s in it (as opposed to take-out!), great for instance that the sweetener is honey instead of a dollop of sugar, thank you!

    I happened upon this recipe today and realized I already had everything for it in my fridge! It was easy and so good. The husband loved it and I know I will definitely make it again. I just used whatever I had on hand, which was zucchini, onion, green beans, carrots, bell pepper, and mushrooms.
