Chicken Stir Fry with Rice Noodles (30 minute meal)
This is a quick and easy stir fry recipe that comes together in 30 minutes. It’s perfect for busy weeknights, plus it’s lighter and healthier than takeout! Takeout is often dripping with sweet, salty and oily sauces but this 4-ingredient sauce is light and so flavorful.

Ok, this is a first! A guest post!! I’ve been tossing this idea around in my mind for some time and then I saw this Chicken stir fry with rice noodles on my friend’s Instagram feed. We made it over the weekend and the entire family loved it! You just need a few ingredients and one-pan to make this easy and delicious weeknight meal. Please welcome Love from Munckintime:
Stir-Fry is one of the most popular Chinese dishes. It is loaded with delicious ingredients like chicken, noodles, bell peppers, broccoli and mushrooms. Hi, I am Love from Munchkintime, and I am so thrilled to share this delicious Stir-Fry Recipe with Chicken and Rice Noodles here at Natasha’s Kitchen.
This Chinese recipe is super easy to make. All you will need is one wok or a skillet, and all of the ingredients listed below. It takes about 30 minutes to make this mouthwatering dish. Delicious dinner made in no time!

Ingredients for Chicken Stir Fry with Rice Noodles:
12 oz rice noodles
3 tablespoons vegetable oil
1 lb (2 medium) skinless boneless chicken breasts, sliced into bite-size strips
Salt and black pepper to taste
1 red bell pepper (or 1/2 red and 1/2 green), sliced
1 cup broccoli, chopped
4 oz shiitake or portabello mushroom, sliced
1 tablespoon peeled and shredded fresh ginger
1/2 cup chicken broth
2 tablespoons soy sauce (NOT low-sodium)
2 tablespoons ketchup
1 teaspoon cornstarch
few drizzles of sesame oil
How to Make Chicken Stir Fry with Rice Noodles:
1. Bring medium size pan of salted water to a boil. Add noodles and cook them on medium heat for about 2 to 4 minutes (depending on thickness of noodles), or until barely tender. Drain and stir in 1 tablespoon of vegetable oil.
2. In a large wok or skillet, heat 2 tablespoons of vegetable oil over high heat. Season chicken lightly with salt and pepper and place it into hot skillet and stir-fry for about 3 minutes or until just cooked through. Remove from the skillet and set aside.
3. Add bell peppers, broccoli and mushrooms and saute 1 minute then add ginger to the skillet and stir-fry for another 2 minutes.
4. In a mixing bowl combine chicken stock, soy sauce, ketchup and cornstarch.
5. Add chicken, noodles, and broth mixture to the skillet and stir-fry for 3 minutes or until chicken is hot and fully cooked through.
6. Right before serving drizzle sesame oil as season to taste with salt and pepper as desired. Grab a fork and enjoy!

Ingredients

*If using low sodium soy sauce or broth, be sure to season to taste with salt or the recipe will be lacking in flavor.

I made this with zucchini and carrots in lieu of broccoli (still used shiitakes and peppers). Also added Thai garlic chili paste at the end for heat. So delicious – will definitely make again.

A very good easy and economical noodle recipe. Yes do use normal soy sauce if you can.

found the recipe was quite oversalted… didnt know what do do so had to give it a little rinse, then my noodles became soggy. wouldnt do it again. it had too much ginger taste as well.
Hi Evelino, I haven’t had that experience but we do add salt and pepper to taste in this recipe. It sounds like too much salt was added. Also, it can seem salty if the proportion of noodles was reduced compared to what was called for in the recipe. I hope that is helpful.
Super quick and easy; perfect for a weeknight meal! I added some fish sauce to the sauce mixture and omitted the mushrooms (didn’t have any). I like others’ suggestions to add chili paste to give it s kick. As written, this is a great family meal (child friendly) and I personally didn’t think the ketchup was pronounced.

This is a good recipe, and wonderful for feeding many people on a budget. I doubled the sauce recipe because I like saucy noodles, and I like a bit of spice so in addition to a drizzle of sesame oil, I also added a small amount of Chili oil. Natasha, a number of my favourite go-to recipes are from you, thank you for another good one!

We like a bit of spice, so we did 1/2 ketchup and 1/2 a sweet and spicy sauce. We did double the sauce, it was little too much sauce then, but I think the original amount may be a little short, so I will go 1.5 on the sauce next time. We used brown rice noodles for extra protein and added in celery and extra peppers and broccoli. My family went nuts for it. A new family favorite!

I substitute the ketchup with Huy Fong Chili Garlic Sauce for the same reason. I think it works well with the recipe. Give it a try!
Catch-up weirds me out a little bit, too. What about adding hoisin sauce in place of the catchup and a little bit of garlic. I think this would give any more Asian flair.

Made this recipe tonight and it was good! After reading the reviews, I subbed Thai garlic chili sauce for the ketchup, which also added a nice bit of spice. I weighed out the 12oz of noodles and in my opinion it was just way too many noodles (to the point where I had to add 50% more sauce), and it made way more than 4 servings. It was really tasty but we’ll have leftovers for days!! Just be aware and add more sauce OR fewer noodles.
This has got to be the best stir fry recipe I’ve ever tried! In the past, I have added every vegetable I have on hand. I was skeptical due to the few simple ingredients. Much to my surprise, I was able to identify each and every ingredient as I tasted it! Simple yet so very delicious. Thank you for this easy recipe. P. S I make it weekly!

Any idea of how many carbs, if I don’t add the noodles? Can I use Xanthan Gum in place of corn starch? I’m diabetic and this looks so yummy! I just need to be able to cook it in a way that works for me. Thanks!
Hi Cheryl, I do not have the nutrition facts for this recipe without noodles. This recipe uses 12 ounces of rice noodles, you might be able to find a close estimate with a quick google search of what 12ounce of rice noodles would be. Then subtract that from the total carbohydrates for this recipe. It serves 4. I hope that helps.
For the people who said the recipe turned out bland and tasteless… I added some teriyaki sauce and some honey and it tasted AMAZING. Also instead of using ketchup, use tomato sauce. I will definitely make this meal again!

If using the directions again will add onion, garlic , beef up the ginger . Possibly a spiced rub on the chicken- cayenne,, thyme. Veg snow peas rather than z broccoli. With respect-
It’s a Friday night, don’t want to cook & don’t have $ to drop on take out for 4 so I started searching for something different. I stumbled onto this site, read the recipe & alot of the comments & am SO glad I made this. My family LOVES this. I doubled the recipe for the sauce and veggies and made a large amount of rice noodles for tomorrow lunch leftovers. I added minced garlic & 1T of ground ginger – OMGosh! This was fantastic. As for those that said it wasn’t good and gave it crappy ratings, obviously you didn’t follow the directions or can’t cook, because this is damn delicious. Great recipe & new follower. Yay Natasha!!!

Natasha usually has great recipes, but this is just horrible. I 100% followed all the instructions, used the exact same ingridients. The sauce is not even enough to cover quarter of the pasta. Now, I had to throw the whole thing out.
Guys, try something else, Natasha has great meals on her website, just avoid this dish at all cost. haha
Hi Cody, it sounds like maybe you used too much pasta? I have made this many times and haven’t had that experience but if using too much noodles (or overcooking noodles), it could seem like not enough sauce.
I tried this recipe because of all of the positive reviews but I guess I should have read a few more.
The ketchup was a bad idea…I knew it before I started and I regretted adding it as soon as I tasted it. It’s pretty much all I can taste in the sauce.
I feel like this recipe would be great for kids to try something different that doesn’t have strong flavors to it. As a meal for myself and my fiancé, it was very bland and like I said before, all I could taste was the ketchup.
The time it took to make this was awesome! Just wish the sauce was different and more flavorful. I am not an experienced enough cook to know what can be added instead of the ketchup but to me that ruined the dish.

What can you substitute for the Green & Red bell pepper? I have a food aversion to these ingredients.

Fantastic recipe! We omitted the mushrooms, added more broccoli, and seasoned the chicken with salt, pepper, garlic salt, and cooked it with an absurd amount of garlic for a delicious garlic chicken. It went SO well with the sauce. This will definitely be a recipe we will make again and again.

My husband and I liked this recipe. I did add carrots because we like more vegetables in our meals. I followed the recipe to a tee. I must say the ketchup (not a fan) through me off because it was a stir fry which
reminds me immediately that it is asian, but I added it anyway. We like a little more spice to our meals, so I added sriracha at the end. Over all, it was a decent recipe.

Instead of seasoning the one pound of raw chicken with salt and pepper, I recommend marinating it for 15 minutes in a mixture of 4 tsp Soy Sauce, 2 tsp Corn Starch, and ½ tsp Roasted Sesame Oil.

This was excellent. Very tasty. Followed the recipe but also added some crushed red pepper to get a little spice. What I missed though is garlic, so I’m going to add that next time and maybe an onion too….

This was not great at all, no spices or seasoning. Tasted like plain noodles and salt.
This normally is quite flavorful with the seasonings and sauces in the recipe. Consider if maybe an ingredient was skipped or substituted? This is a fairly simple recipe so every ingredient is important.
This is so good, quick, and easy I made it twice in a week. Had to substitute what I had on hand, so edamame and peas and bell pepper, worked fine, and ground ginger. I will be checking out more recipes on your site. Thank you.

Can I use the rice noodles that say to put in bowl, cover with boiling water and sit for 3 minutes
Hi Diane, I haven’t tested this recipe with those, but I imagine that should work. You may need to adjust how early you add the noodles, so they don’t over cook.

Surprisingly good even though the ingredients are so simple! I added some chopped garlic with the ginger, and just used frozen stir fry veggies, it came out soo good, even though I have no experience cooking Asian food. Definitely want to make this again!

Very good, My husband and I both enjoyed it. I boiled my chicken because all I had in the house was frozen chicken breast. I just spiced up the broth and used it in the sauce. I also used a little extra fresh ginger and green onions. Will make this again.

Tried it for the first time. I used a bag of Asian frozen mix just to see if we would like it. I must say it tasted great with no over powering ingredients in the sauce. I also used chicken tenders from the market and they worked out great.

We all really liked it, and will make it again. In our case, by using gluten free soy sauce, I can make it easily for my daughter with celiac disease. Only note: I thought the chicken needed to be browned, so I overcooked it. Won’t be a problem next time!

I made this the other night and it was so good! Added a little more ginger because I love ginger! My family loved it, nice and light and I love rice noodles and don’t use them much – yum! It was a little dry for leftovers so maybe would double batch the sauce and save for the reheat. Instead I used some store PF Chang’s Kung Pao on it for a whole different Flavor – fantastic!

I made this last night for dinner. It was a HUGE hit! Thankfully I had doubled the recipe so had enough for some left overs for lunch today. I added a teaspoon of chili garlic sauce that really elevated the taste and gave it a bite of heat (not too much, hubby doesn’t like spicy). You know it’s good when your 23 & 24 year old are like, “Mom, this is amazing!”

I discovered an issue after I cooked it all up. The taste didn’t seem quite right and just the flavours didn’t seem to work together. I’m guessing it’s a cultural thing as when I’ve now clicked on your link for ketchup it has gone to a curry sauce where in the UK we’d take that to mean tomato sauce. So I put the wrong kind of ketchup in (it did seem odd – my bad for not checking). Just to let other people learn from my mistake.

Going to make this, this weekend, I know costco carries the noodles, and has anyone added celery and carrots, I wanted to add more veggies as I will have to omit shrooms (hubby and I aren’t fans) would like any suggestions, can’t be corn cuz it’s virtually impossible to find organic. Love this recipe! Had been looking around for a good stir fry recipe and decided to try this one out. Simply amazing.
With the ‘sauce’ mixture I added 2 teaspoons of hoison sauce, and replaced the ketchup with honey.
I also added baby corn, carrots, mangetout and spring onions as I wanted to add more veg to the mix.

I was a bit doubtful about my cooking as I was creating wok for the first time, but if you follow what’s mentioned above, it comes out really tasty and I thoroughly enjoyed eating it. We omited the bell peppers. and used ground ginger. We didn’t have brocolli either. Will add next time.
Ours was to salty but that had to do with me not measuring the salt in the noodles very well. I was tired. Oops. So we ate it with rice and that was perfect. Even though the noodles were in there. Ha ha ha…
We also totally forgot to drizzle with sesame oil. We will try that next time also.

I have all the ingredients to make this recipe, except the soy sauce I have is Low sodium. Is this going to affect the outcome?

Was really good, my picky 7yr old ate it without a fuss! That is always a win in my book. However I made a few changes.
-Marinated chicken for 30 min in soy sauce & garlic.
– no ketchup, I used honey instead
-I added about a cup extra stock and adjusted the soy sauce and arrow root powder (instead of corn starch) for the sauce.
– I added 2 tbsp black bean sauce.
-Scallions as a garnish.

You can add more salt if you like. I think that is the main difference…
Made this for the second time last night, a very good recipe for stir fry. I did leave the ketchup out and used honey instead. Since I didn’t have any peppers on hand I used asparagus and drizzled a little toasted sesame oil over the vegetable mix😋. Both times I’ve cooked spaghetti noodles in this recipe, I’ll have to give the rice noodles a try never cooked with them before. You are my go to person for recipes.🙂

Definitely would not add ketchup in this recipe again. The ketchup made it taste one dimensional and reminded me of canned spaghettios. Disappointing with all the star veggies and organic chicken breast!
Hi Bree, did you possibly change anything else in the recipe? I have never had it taste like what you described. I suggest following the recipe exactly before making any modifications.

this is probably a very good recipe. but when I watched the video, I mentally whispered to you “wash the stove top, wash the stove top! you can’t cook and take off when you have such a dirty stove top!”

Just made it to night . Was awesome. I have to watch my sodium so I only used 1 tbsp of Soya sauce and 2 of the ketchup. Also used my own homemade chicken stock. Will make this meal again when we have quest over . Maybe if I want to share. One other point I must make I used left over roasted beer can chicken when I made this meal.

Made it tonight and only made a few minor changes. I used orange bell peppers, didn’t use sesame oil and pre cooked the broccoli. The family LOVED it, we slurped it all up and scraped the pan!!

I’ve tried many of your recipes and this one just did not pass. (For us). Noodles were so pasty and congealed. Cooked for 3 minutes then added the oil. I don’t know…I so wanted to enjoy it but couldn’t. Glad the veggies and chicken were good or else we wouldn’t have had dinner this evening. Sorry, Natasha.
Hi Brandie, I’m sorry to hear that – it sounds like maybe the noodles were the culprit. If using a different type of noodles, make sure you follow the cooking instructions on the package. The rice noodles are very easily overcooked which causes them to stick together.
Yes those noodles cooked very quickly, only a few minutes.
Tastes so good, filling, and healthy. I added green onion, chopped peanuts, and sriracha sauce at the end 🙂

Hi Malak, I haven’t tried subbing anything for ketchup but one of my readers reported great results omitting it. Keep in mind it will likely need additional salt/seasoning (maybe more soy sauce) if you omit ketchup.
Good recipe , but definitely needs some tweaking;)
~Add garlic (!)
~Add TBSP of Maple syrup or honey for that authentic Asian sweetness
~NO ketchup
~Make more sauce (3/4 to 1 cup)
~Marinate chicken pieces in soy sauce for about 30 min. , so the chicken pieces are not bland in the finished dish

Hi Leticia, either one will work, actually any high heat cooking oil. We often use an extra LIGHT olive oil as well (not extra virgin though).

I wanted a spicy stir fry, so I replaced the ketchup with sriacha chili sauce. I took some other creative freedoms as well, but it still came out really good.

Bland and not great at all. The problem is that sauce. The ingredients can be put to better use with a better sauce.

Didn’t turn out like the picture— noodles were awful and the amount of chicken broth with suggested sauce wasn’t near enough— very disappointing — wasted time and money
Hi Susan, I’m so sorry to hear that. I am always happy to help troubleshoot. It sounds like the noodles might have been the culprit. Rice noodles cook very quickly so they are easy to overcook and if they do get overcooked, they tend to expand more and soak up more of the sauce, leaving the dish feeling a little dry. You could increase the sauce for a saucier version. I hope that helps to troubleshoot.
Made this last week. Used spaghettini as I did not have rice noodles on hand and didn’t want to go out. It was a resounding success. This is a real keeper.

I was excited to try this recipe from all the great reviews. I followed it to the T and didn’t like how it tasted. I was expecting something closer to a vermicelli bowl taste.
