Meatloaf Recipe:

Ground beef mixed with onion, Panko breadcrumbs, fresh parsley and seasonings produces an irresistibly tender and juicy meatloaf. The sweet and tangy glaze adds amazing flavor to this classic meatloaf.

Tips on How to Make the BEST Meatloaf:

  • DO NOT OVERMIX which can result in a tough/dense meatloaf
  • Line your loaf pan with parchment paper with edges hanging over the pan for easier removal of meatloaf. 
  • Keep the juices from the pan and pour over the sliced meatloaf before serving.
  • Chop the onion finely, allowing it to cook through (or sautee onion before adding)
  • Gently press meat into the pan so it holds its shape.
  • Rest meatloaf for 10 minutes before slicing

What is the Best Meat for Meatloaf?

You want to use ground beef that is 85% or 90% lean meat. Do not worry about using lean meat – the rest of the ingredients will keep your meatloaf moist and juicy. Avoid super lean meats. 

Meatloaf Sauce:

This meatloaf sauce is incredible as a glaze for the meatloaf with the perfect balance of sweet and tangy flavors. Ketchup combined with brown sugar, garlic and onion powder, salt, pepper and vinegar creates an irresistible sauce. Once baked, the glaze caramelizes and is SO GOOD!

Can I bake Meatloaf on a baking sheet?

For crispier edges, bake meatloaf on a baking sheet. Out of foil, create a self-made pan with edges to keep the drippings from the meatloaf as it’s baked. Shape meatloaf and place into the foil. Continue with baking instructions. NOTE: Baking time may slightly vary, depending on the shape and thickness of the meatloaf.

How long to cook Meatloaf?

Cook the meatloaf uncovered for 40 minutes at 375°F. Add the sauce, and bake an additional 15-20 minutes, or until internal temperature is 160°F. If using a smaller loaf pan than 9″x5″, increase cooking time.

Can you freeze Meatloaf?

Yes, meatloaf may be frozen before cooking. To freeze, prepare meatloaf per instructions. Cover tightly with plastic wrap and foil and freeze.

Defrost the raw meatloaf in the refrigerator covered. Continue with baking instructions.

Ingredients

Meatloaf Ingredients:

  • 2 lbs ground beef 85% or 90% lean
  • 1 med onion finely chopped
  • 2 large eggs
  • 3 garlic cloves minced
  • 3 Tbsp ketchup
  • 3 Tbsp fresh parsley finely chopped
  • 3/4 cup Panko breadcrumbs
  • 1/3 cup milk
  • 1 ½ tsp salt or to taste
  • 1 ½ tsp Italian seasoning
  • ¼ tsp ground black pepper
  • ½ tsp ground paprika

Meatloaf Sauce Ingredients:

Instructions

  1. Line a 9”x5” loaf pan with parchment paper and preheat oven to 375°F.
  2. In a large bowl, add all of the ingredients for the meatloaf. Mix well to combine.
  3. Add meat to the loaf pan, gently press meat down and shape evenly and bake meatloaf at 375˚F for 40 minutes.

  4. In a small bowl, mix all of the ingredients together for the sauce. Spread the sauce over meatloaf then return to oven and bake additional 15-20 minutes. Rest meatloaf 10 minutes before slicing. Drizzle with baking juices from the pan.

    Made this for dinner tonight. I had to substitute oats since I didn’t have any panko bread crumbs so I’m not sure how much that changed the texture. It was delicious though and will be my new go to recipe for meatloaf. Thanks.

    This is, hands down, the best meatloaf recipe. And, I have tried many others. My only problem is getting them out of the loaf pans in one lovely loaf with the luscious glaze intact. So, to solve that I ordered loaf pans with those lift out inserts. Thank you!!!

    The recipe is super easy and it’s absolutely delicious! Everyone loved it! But after 40 mins @ 375 in the oven, it was still very raw in the center and sides. I ended up having to increase the heat and transfer to the foil method, which allowed it to cook on the sides a bit. In order to cook the center I had to broil the load for about 15 minutes. All in all it took me an hour 40 minutes to get it cooked through. It was still very juicy but I think for me a higher heat would work better or maybe skipping the loaf pan altogether.

      Hi Ashley, that is a very long baking time. Did you have your oven fully preheated? Also, if you prechill your meatloaf before baking, it can take longer to bake.

      Hi Reenie, I haven’t tried that in a crockpot to advise on the glaze. You can try preparing it in the crockpot and then move it to the oven to caramelize!

    Made this today and it was easy and delicious. I used by kitchen aid mixer, dumped everything in for the meat loaf mixed put in a 9 X 13 pan baked it/ washed out the mixing bowl added my topping and poured the topping on at the end and baked.

    So I fell in love with this recipe because of the glaze. I made some of the glaze so I could use it as BBQ dipping sauce. But oddly it thickened and gelled and stirring or heating did not get it back to its previous consistency. Just wanted to share that for anyone who might want to try it as well. Not sure why it happened though.

          Hi Marina, it doesn’t fully dry but sets similar to a bbq sauce would on ribs. Make sure to bake uncovered without reducing the temperature once the meatloaf is back in the oven. Also, using a thinner ketchup brand or using less sugar could cause it to be too runny to set properly. I hope that helps.

    Hi, silly question. The total time to bake meatloaf is 40 min? or 40 min, add the sauce and extra 20 min? so the total time is 1 hour? Thank You

      Hi Kat, the place to find the total time is on the recipe card. The total bake time is one hour. 40 minutes to start and then you will spread the sauce over meatloaf then return to oven and bake additional 15-20 minutes. Rest meatloaf 10 minutes before slicing. I hope that helps!

      HI Wally, it normally is not overwhelming and I dont recall any other feedback of too much Italian seasoning. Did you possibly use too much (ie. mistakenly add 1 1/2 TBSP instead of teaspoons?)

    This is so good. We added pepper flakes to the Meatloaf with extra garlic. For the sauce we added extra brown sugar and this rub we use to it. So tasty.     I decided to use this recipe for my first time cooking meatloaf. It was delicious, and easy to make. The only thing that I’d suggest is to cook the meatloaf for about five to ten minutes more before adding the sauce on top.

    The first time I made this meatloaf my son loved it and later told me he told his friends “My mom makes the best meatloaf and I’m gonna have her make you some.”
    Tonight my son texted me from a restaurant and said, “Mom, I just ordered meatloaf and it’s nothing like yours. It’s not good at all.”
    My family ( even my 89 year old mom who’s an extremely fussy eater ) loves this meatloaf and asks for it frequently. I plan on always using this recipe from now on.

    Delicious through and through. I can even get my fiancé to cancel plans by telling them “I’m gonna make meatloaf that night” and they don’t want to miss it. I do have to raise the cooking temperature though, not sure if anyone else has that issue but 1 hour at 375 doesn’t get the center to 165 degrees with my setup.

    Worked out perfect for a first time! I have used regular bread crumbs (Italian) and some pasta sauce as well as ketchup, it all does not matter much and can create different interesting variations, easy to experiment.

    I had leftover hamburger 85% meat from last night so I made meatloaf cups (meatloaf in a cupcake shape) for my hubby with the remaining meat. He wanted a simple reciple so I found Natasha’s recipe, tweaked it by adding a small green pepper diced, omitted the cloves and white vinegar (we don’t have them). He raved about how good it tasted more than once. This recipe is definitely a keeper, for sure! Thank you, Natasha!

    I haven’t tried your meatloaf recipe yet, but my family uses a recipe from a friend who had a catering business. The recipe asks for oatmeal instead of bread crumbs and shredded cheddar cheese. It gives the meatloaf a good moisture and extra little flavor with the cheese and does not dry out even couple days after. My family did not like meatloaf prior to that recipe.
    Worth the try.

    This meatloaf was amazing, I made it as written and it didn’t disappoint, even my picky husband loved it (and he is a real critic of meatloaf). I’ve never left a comment before (on any site) but I felt this was the time.     Followed exactly which I rarely do- but Natasha is tried and true so I trust her! I’ve made this twice now, and sautéing the onions prior to mixing is crucial. The first time I didn’t and even though they were diced finely, they still had crunch. I prefer softened onions.
    I also doubled to sauce because we’re a saucy family.

    Very similar to a meatloaf my mother in law made. She had a sweet red sauce on top as well, with brown sugar and ketchup. This was just as good and I have measurements now. She was not one to measure; (dash, dollop, sprinkle, scoop, ect…)

    This recipe does make quite a bit, but I only cook half and freeze the other half to cook another day. We do not eat a lot of leftovers, although one could get creative with the leftovers.

    Great recipe! One problem, though: The juice soaked through the parchment paper and it was useless. Kleenex would have worked as well.

      Hi Ken, it sounds like the liquid got under the parchment paper. If your pan is a good non-stick pan, that would work without parchment, but it does make it easier to serve and remove using parchment paper.

I substituted the brown sugar with stevia since my family and I try our best to avoid real sugar. With the stevia, the glaze was delicious!     Great suggestion to cook the onion first. My mother was a great cook but one thing she made that I didn’t like was meatloaf because she didn’t cook the onion first. This was my introduction to heartburn.

    Hi, I just make this recipe , but, a vegetarian version of it. It came out wonderful, even my friends who are not vegetarian, loved it. This recipe is delicious. I followed your recipe exactly, save, for I used one chup of vegetarian sausage ( can get at Trader Joes or any large supermarket) and one 12 oz pkg of Sweet Earth Awesome Grounds ( I am sure beyond beef etc would work as well). Other than those two substitutions, I followed your recipe exactly. For any vegetarians who happen to stumble upon my review, take heed, this is a delicious recipe and will be a wonderful addition to your meals. And, your non vegetarian friends will enjoy it too.

    My favorite meal as a kid growing up in the 50’s was meatloaf and scalloped potatoes. Mom made it every year for my birthday. I have tried for years to duplicate it and never could so I just started trying recipes to find one I really liked, with little success.

    In the UK, we don’t eat meatloaf or know anything about it other than it’s an American thing. Today however, I decided to do something different with my minced lamb and used this recipe, mostly because I had all the ingredients to hand and it seemed simple enough to do with great reviews. I added finely chopped half a red pepper and ground my own breadcrumbs but otherwise followed the recipe and pow wow, what a pleasing result! It was far more flavoursome and delicious than I could have contemplated, I didn’t know meatloaf was so yummy until today! Why is meatloaf not a thing in the UK?! It should be as it’s so quick, tasty and packed with flavour and not at all dry. I served it with homemade creamy mash and a little side salad, my hubby and I loved it! Thank you for the wonderful recipe which I shall be making again and again!

    Natasha, I made your meatloaf recipe with he Best Glaze and followed the recipe exactly – HOWEVER – when I had set it aside to rest and I had used parchment paper to line the pan – lifting it out it came out in clumps!!! What did I do wrong?

      Hi Katie, it sounds like liquid got under the parchment which can cause it to stick. I always like to run a thin spatula around the edges to make sure it will easilly lift.

    This meatloaf recipe is delicious ~ and the glaze ~ need I say more. I typically have only made meatloaf a few times in my 42 years of marriage because my husband doesn’t care for it that much.     I have just tried this recipe, very impressed, thank you. In the past my meatloaf was dense and often heartburn followed. It deterred us from making meatloaf, but this recipe was amazing, everyone enjoyed it and the glaze was incredible, I used wine vinegar instead of white.     I’ve made a lot of different types of meatloaf and I have to say, this is the best I have ever tasted. It was so juicy and the flavor was off the chart. I used lean chuck, and saute the onions till they were caramelized in butter, I used a 3# loaf which made two bread pan loafs. I lined each pan with foil.

    Wow! This meatloaf is the BEST I’ve tried by far. I followed the recipe to the letter. It was soooo juicy, easy to make and bottom line amazing! I went as far as cutting the meatloaf in chunks and mixing it with my mashed potatoes. Could eat it again tonight….thanks for the recipe!

    Just discovered your reciepe and will try it today, but I have a question. Is it OK or a bad idea to mix in some frozen vegetables, like peas or corn? Thanks.

      Hi Duncan, I haven’t tried mixing in vegetables to advise. One of our readers wrote that they added diced celery to add vegetables into it but noticed with too many vegetables, and the meatloaf fell apart.

    I didn’t use this recipe, but I make a smoked meatloaf roll with a very similar orange bbq glaze. I don’t think you can go wrong with this one.

      Hi Mrs K. I’ve always made the full recipe but you can definitely halve it. I imagine the time will decrease but not by much.

      Hi, it depends on the size of your baking pan. If you are using half the size of pan, it will be close to the same amount of time since the thickness of the meatloaf will be similar. If you’re using the same size pan and your meatloaf is half the thickness it normally would be, you would want to cut down your baking time.

    My mother in law passed away a few years ago, she made the best meatloaf but I never knew her recipe. My daughter really loved her meatloaf (as did the rest of us!) and I tried SO many times to recreate her recipe and failed miserably. It got to the point of mentioning making this meatloaf for dinner and my daughter would cry saying she didn’t want it! I made this recipe and it smelled exactly like hers. It has been a go to recipe for us as this is absolutely delicious and we often speak of her when we share this meal as a family. Thank you for sharing this recipe and giving us a taste of her famous meatloaf!

      Hi Kim, I haven’t really tried using ground turkey yet to advise. I saw someone commented this “I sub it for ground turkey, and I also add bell peppers to It all the time; it’s great” I hope that helps.

    I decided to try a different meatloaf recipe, and found yours. My husband likes the one I usually make, but I wanted a change. I followed your recipe exactly.I put the meatloaf under the broiler to finish glazing, and it was perfect. My husband said, “This is really good!”

    We have our grandson every Tuesday night and now Tuesday’s have become meatloaf Tuesday. This is the best meatloaf we’ve ever had. We make it with half turkey/half beef. It is easier on the tummy when you eat way too much, which we always do! 😂

    This is the best meatloaf recipe I have ever tasted. I made it again tonight for family and serving it with creamy homemade mashed potatoes and asparagus. The tangy-sweet glaze puts it over the top! This time I am using a 2 to 1 ground beef and pork mixture.
