These stuffed mushrooms are the perfect bite-sized appetizer for your New Year's Eve Menu. They are savory and stuffed with a cheesy-bacon filling that everyone will love. Serve on a platter so guests can grab one while mingling and munching.Makes 24 appetizer bites
Prep - Preheat the oven to 400°F and line a baking sheet with parchment. Remove and discard mushroom stems, then wipe the mushroom caps with a damp paper towel. Do not soak or wash in water, or your mushrooms will end up soggy.
Cook the bacon in a large skillet over medium heat until crisp, about 4-6 minutes, then transfer to a paper-towel-lined plate.
Mix the filling - in a medium bowl, combine the cream cheese, Parmesan cheese, garlic, parsley, salt, and pepper. Mash together with a fork, then mix in half of the crumbled bacon. Use a small cookie scoop to fill each mushroom cap with about 2 tsp of the mixture. Sprinkle the remaining bacon over the top and place on the prepared pan.
Bake the mushroom caps for 15 minutes until the tops have started to brown and the mushrooms are softened when squeezed on the sides. There may be some water at the base of the mushrooms. Place the cooked mushrooms on a serving platter and garnish with parsley. Serve warm or at room temperature.

Reheat in a 400°F oven until the filling reaches 165°F, or use the microwave in 30-second increments until heated through.
