This Croissant French Toast Casserole is perfectly decadent with crisp croissants, berries, a delicious custard center, and topped with fresh berries. Since it's lightly sweet, it's perfect served with maple syrup for holiday breakfasts, baby shower brunches, and potlucks.This is such a crowd-pleasing breakfast or brunch, and I love that I can assemble it the night before and bake it the next morning to save time.
2cupsblueberries or mixed berries, plus more to garnish (strawberries, blueberries, blackberries, raspberries)*
Instructions
Prep - Preheat oven to 350°F and butter a 9"x13” casserole baking dish
Cut croissant into small pieces (about 1-1.5” cubes) and place in dish
Make the custard - In a bowl, whisk together eggs, warm milk, cream, butter, sugar, vanilla, cinnamon, and salt
Build the casserole - Pour the mixture over croissants, pressing down with a spatula to absorb. Add blueberries on top and push them between the croissant layers. Let sit for 15 minutes (even better overnight!)*
Bake for 45 minutes until set and golden, and enjoy this warm.
Notes
*Berries and Substitutions: I find strawberries and raspberries dry out when baked, so it's best to use them as garnish after baking. Blueberries and blackberries become jam-like in the casserole, so I add them before and after baking. You can also substitute the berries with seasonal fruit, like peaches, plums, figs, or bananas, or with nuts, like almonds or pecans.*Make Ahead - Build the casserole and cover in foil. Store in the fridge overnight and bake from the fridge as directed. It may take a few extra minutes.Storage - Store leftovers covered or in an airtight container in the fridge for 2-3 days (or as long as the berries stay fresh), or in the freezer for up to 3 months. Thaw in the fridge overnight.Reheat - for the best results, reheat cut portions in the air fryer at 350°F for 3-5 minutes or until the edges are crisp, or in the oven at 350°F until heated through, usually 10-15 minutes. You can also microwave for 30 seconds at a time until warm.
