Leftover mashed potatoes? Try these cheesy potato patties; so easy and delicious! My husband came up with the idea for these last night when he came home from work. The recipe originates from his mom who is a great cook!
Ingredients:
3 cups mashed potatoes
2 cups shredded mozzarella
1 egg
1/4 cup flour
Canola oil
Topping:
Sour Cream
How to make Mashed Potato Pancakes:
1. In a large bowl combine mashed potatoes, mozzarella, 1 egg and flour. Mix well.


2. Heat 3 tbsp of canola oil over medium high heat. Scoop heaping tbsp of potato mix, roll it in to a ball, flatten it in to a patty & place it on the skillet.

3. Saute each side 3 minutes or until golden.

4. After removing pancakes from the skillet, place them on paper towel, to soak excess oil.

Serve with a dollop of sour cream.

i think some very finely chopped onions would be great in it or garlic mixed in the potatoes
