Leftover mashed potatoes? Try these cheesy potato patties; so easy and delicious! My husband came up with the idea for these last night when he came home from work. The recipe originates from his mom who is a great cook! 
Ingredients:
3 cups mashed potatoes
2 cups shredded mozzarella
1 egg
1/4 cup flour
Olive oil
Topping:
Sour Cream
In a large bowl, combine: mashed potatoes, mozzarella, 1 egg and flour. Mix well. Use an icecream scoop to make the potato patties.

Heat 2 tablespoons of olive oil over medium/medium high heat and flatten the patties in the frying pan to about 1/4″ thick. Saute each side 3 to 4 minutes until golden brown.

Serve with a dollop of sour cream.

i think some very finely chopped onions would be great in it or garlic mixed in the potatoes
