Fruit and Spinach Salad with Strawberry Vinaigrette

This Fruit and Spinach Salad is easy, light and delicious. My sister Alla made it for my sister Anna’s baby shower and I knew I had to recreate it! I’ve created a tasty mild strawberry vinaigrette to go with it. This salad is loved by every palate; young and old.

If you like a stronger vinaigrette, feel free to add more red wine vinegar. I’ve also tested this with cider vinegar and it worked well; although I liked the red wine vinegar a teensy bit more.

Fruit and Spinach Salad Ingredients:

1 apple, sliced
1 pear,ย sliced
1/2 lb strawberries,ย sliced
2 Tbsp pumpkin Seeds
8 oz (1/2 lb) Spinach Leaves

Strawberry Poppyseed Vinaigrette Ingredients:

(makes enough vinaigrette for 2 salads)

1/4 cup cold filtered water
1/4 cup olive oil
1/4 cup red wine vinegar, or to taste
1/2 lb fresh strawberries, hulled and halved (about 1 1/2 cups)
2 Tbsp honey
1/2 tsp poppy seeds

How to Make Fruit and Spinach Salad Dressing:

1. In a food processor or blender, combine 1/4 cup water, 1/4 cup olive oil, 1/4 cup red wine vinegar, 1/2 lb strawberries and 2 Tbsp honey and puree until smooth.

2. Add 1/2 tsp poppy seeds and pulse once to combine. Refrigerate dressing up to a week.

Assembling the Salad:

1. Place all of your salad ingredients in a large mixing bowl. Add salad dressing to taste and toss to combine.ย Easy!

    I love the way your website is set up. The actual recipe is toward the top, so I don’t have to scroll down through photos and directions that are trying to load in order to see if the recipe calls for ingredients I have on hand. I enjoy photos and need the directions, but I want to see the recipe first. I did a search for “fruit vinaigrette” and yours was by far the fastest to load and easiest to follow.     I just made the strawberry pear apple spinach salad, didn’t pour the strawberry vinaigrette salad dressing to it I just put it in the refrigerator and until it’s time for my party will that be okay Reply
