This apricot smoothie has just 5 ingredients and the last one is optional. It’s so easy! It has just the perfect amount of sweet-tart flavor and the strawberries really enhance the yummy apricot flavor.
My husband came up with this smoothie. It is a healthy, energy boosting drink loaded with Vitamin’s A & C with a good dose of fiber (check out the nutrition facts below). Yum!
Ingredients for Apricot Strawberry Smoothies:
1 cup cold coconut water, or cold filtered water
1 cup strawberries, hulled (you can sub for 1 cup blueberries)
2 cups (about 3/4 lb) apricots, pitted
1 cup frozen pineapple
1 tsp flax seed oil (optional – adds a nice punch of Omega 3)

i was wondering if i could use dried Apricot in place of fresh???
Hi Kayla, I haven’t tried that but I think it might get a little thick using dried apricot.
I’ve tried this recipe using the coconut water and also substituting the coconut water with apricot greek yogurt and a half a cup of fresh squeezed orange juice. Surprisingly the second day the orange juice really enhanced the apricot flavor.

Yo omg apricots and strawberries what a really way cool combo Natasha was wondering if I can add milk in place of the water and also add plain greek yogurt and honey definitely gotta try mmmm summer is officially here lol
Hi Tzivia, I don’t usually like milk in my smoothies because I find that it tends to separate when you let it sit. It will work and it will taste good though if you wanted to make those substitutions. Lately we’ve also been adding almond milk or even coconut milk to smoothies instead of water and it tastes great 🙂

It would give you that refreshing boost of energy! We froze a bunch of apricots so we could keep making it during the winter months.;-)
Hallo Natasha, your smoothie looks amazing, normally I put brown flax seeds on my smoothie.
I love putting flax seeds in my smoothies. The flax seed oil is nice because it’s a large dose of Omega 3 at once, but flax seeds are great too! 🙂

Interesting that you add flaxseed oil.. I just add ground flaxseed 🙂 ground so the kids don’t notice, but I suppose they wouldn’t notice the oil either 😀 But that’s the only “weird” thing! This looks delicious!
You can definitely use flax seeds. The oil is just more potent 🙂
