Roasted corn

Grilling the corn with the husk on lets the corn cook in it’s natural juices leaving corn tasting super sweet with tantalizing smoky undertones. Not to mention this grilled corn is perdy. Rub grilled corn with the following garlic lime butter sauce and it’s sure to please!

Just a plain salted butter rub works well too if you’re pressed for time or just feelin’ lazy. But I do hope you try this garlicy limey cuminy salty sugary peppery butter. It does have a Spanish flair to it. Muy Bien!

Ingredients for “Spanish” corn butter sauce:

The flavored butter is flavor packed with garlic, cumin and fresh lime juice. You won’t be able to put that cob down!

What you will need:

10-15 fresh ears of corn with the husks on.

How to Grill Corn on the Cob:

1. Trim the tops and bottoms of the corn husks; the hairy parts tend to catch fire and soak them with husk on for 20 minutes in water before grilling.

2. Preheat the bbq on high heat (500˚ F). Arrange the corn husks over the grill. Reduce to medium/high (400˚ F), cover and cook 18-20 minutes, turning every 5 minutes until husks are blackened on all sides.

3. While the corn is grilling, melt 1 stick butter in a small saucepan. Press 4 cloves garlic over the butter and heat just to a simmer. Add 1/2 Tbsp Sugar, 1 tsp salt, 1 tsp pepper, 1/2 tsp cumin and lime juice. Stir to combine. Heat another minute and remove from heat.

4. Remove Corn from the grill, carefully peel husk off but don’t rip it off, instead use it as a handle. If you are eating the corn indoors, go on and remove the husk or it may get kinda messy (don’t say I didn’t’ warn ya!)

5. Generously brush corn with butter mixture and serve immediately.

"Spanish" corn butter sauce ingredients:

  • 4 large garlic cloves, pressed
  • 1/2 cup unsalted butter, 1 stick/ 8tbsp
  • 1/2 tbsp granulated sugar
  • 1 tsp salt
  • 1 tsp ground black pepper
  • 1/2 tsp ground cumin
  • Juice of 1/2 lime

What you will need:
