This tortellini salad post is long overdue. It’s my Aunt Anna’s recipe. I posted a picture of it on Thanksgiving and was flooded with requests. I could make loads of excuses, but… nah. I’m watching the Olympics and I’m super anxious hoping someone doesn’t land the wrong way on a balance beam.
I can usually multi-task when I’m watching a show or movie, but with Olympics I get so dang tense; my shoulders hurt and I can’t focus much. Anyway, I can’t believe I didn’t make this sooner. It’s so easy! . Enjoy!
Ingredients for Tortellini Salad:
18 oz cheese tortellini
2 small or 1 large broccoli crown, chopped into mini florets
1/2 medium onion, finely chopped
1 tomato, seeded and diced
1/2 cup shredded parmesan
1/2 cup Creamy Caesar dressing or to taste
How to Make Tortellini Salad:
1. Chop broccoli into small florets. The Vidalia Chop Wizard works wonders for this!
2. Finely chop onion.
3. Seed and chop the tomato.
4. Cook cheese tortellini according to the instructions on the package (salt the water). I like to overcook mine a tad. Rinse with cold water to cool them down.
5. Top with parmesan cheese
6. Mix all the ingredients and add Caesar dressing to taste (I added a litte more than 1/2 cup Ceasar dressing)

Made this yesterday for New Year’s Eve. I used spinach instead of broccoli. It was delicious. I will definitely make this again. Thank you Natasha’s Kitchen!

I’ve been making this salad for years, forgot where I originally saw it until now 🙂 Accept I add peas instead of broccoli, and crumbled bacon or chopped pepperoni for that extra kick. Yum!

Made this twice. The first time I made the salad as written and it tasted great. The second time I made it with 2 cups fresh baby spinach (chopped) instead of the broccoli. It was delicious too (I may have even enjoyed it a little more)!

can you make this the night before for a party?
It’s best eaten fresh, you can chop brocolli and onion ahead of time and refrigerate. But tortelini and everything mixed together is best fresh.

I don’t remember the brand but it was at FredMeyer. Just pick your favorite tortellini; it doesn’t make that much of a difference. 🙂

Yum…yum….yum…..this turned out fabulous! I used Trader’s Joe’s multi-colored cheese tortellini (12 oz.) and inadvertently grabbed grapeseed oil instead of my olive oil to make your Caesar salad dressing. Even though I bought the packaged store-brand Parmesan, it was still wonderful (I’m sure fresh grated Parmesan would be beyond description….chuckle). The result was delicious and we gobbled it up quickly. Your recipes never disappoint. Thank you!

do you use store bought dressing or homemade? if so what brand. i can never find one i like.
I used store bought dressing this time and it was Newmans creamy Caesar, but I think homemade would taste even better! I do have a recipe posted for Caesar dressing 🙂

Have you tried adding chicken or using a meat tortellini? I love one dish meals so I will probably try it:)
