This red cabbage and avocado salad is easy, pretty and delicious. It’s not every day you eat something purple; so I got excited about this. Purple cabbage is so striking; with it’s dark outer leaves curling around a royal purple center…
I stumbled upon this little gem on Instagram; posted by Tanya (@TMUR25). It sounded so simple and had a great list of ingredients. Her caption read “So yummy, been eating it all week.” I made it the next day. We agreed and ate it all week too! It keeps well in the fridge for a few days so don’t toss any leftovers!
Ingredients for Purple Cabbage and Avocado Salad:
1 medium head of purple cabbage, finely sliced (a mandolin works great for this)
1 avocado, diced
For the Dressing:
3 Tbsp chopped Dill (fresh or frozen)
3-4 Tbsp fresh parsley, chopped
3 Tbsp extra virgin olive oil (what I used) or flax seed oil or
1/2 cup fresh squeezed (or good quality store-bought) Orange juice
Juice of 1 medium lemon (about 2 Tbsp)
3/4 tsp salt; or to taste
1/4 tsp freshly ground pepper, or to taste
How to Make the Red Cabbage and Avocado Salad:
1. Finely slice the cabbage; a mandolin slicer works great and shreds your cabbage really finely, but it can definitely be done by hand using a sharp chef’s knife. Place cabbage in a salad bowl.
2. Cut avocado in half, use a spoon to scoop out the good stuff and discard the skin and pit. Dice avocado and place it over the cabbage.
3. Combine all dressing ingredients: 3 Tbsp chopped dill, 3-4 Tbsp fresh parsley, 3 Tbsp oil, 1/2 cup fresh squeezed OJ, 2 Tbsp fresh squeezed lemon juice, 3/4 tsp salt, 1/4 tsp pepper. Just before serving, stir everything to combine.

I took this recipe to 2 different families homes tonight for the holiday and both times it was a “bomb.” I actually saw people throwing it away in the trash- broke my heart! I don’t know what I could have added or subtracted to make it better, but it was a No Go and I was so disappointed.
I’m so bummed to hear that 🙁 We really like this salad! Did you do anything different? My only thought might be how finely you slice the cabbage. This has to be pretty finely sliced because the marinade flavors won’t penetrate big pieces of cabbage and the texture of finely sliced cabbage is much more palatable.
Oops! Sorry, I meant to say ”replace the dill and parsley with coriander”. 🙂 Do let me know.
I haven’t tried with ground coriander, but I do think the dill and parsley adds nice flavor to the salad. If you try with coriander (an herb that I do love), please let me know how it works out.

Red cabbage, beets, orange or yellow pepper, red onion, green peas, garlic and mayo, salt and pepper. My family loves this salad. It’s crunchy.

Oh, the dill, the dill! This truly needs fresh dill rather than dried… didn’t think to freeze any last summer 🙁 . I know it is only February, but I think it is time to plant some little dill seeds…I grow my garden in buckets, and I think this is one bucket that can live in the house until summer. The salad is fantastic, by the way, even with dried dill. I never would have thought to pair avocado with cabbage!
I love the idea of planting dill in a bucket and putting it in the house. You just need a sunny spot 🙂

That sounds delicious! I make mine with green peas (frozen,defrosted) chicken breast (marinade and fry, than chill in fridge) and mayo mixed in with the fresh thinly sliced red cabbage. I will def try this recipe. =)

Can you use regular green cabbage? Or does the purple cabbage have a distinct taste?
You Should be able to use regular cabbage as well, but I haven’t tested it my self yet 🙂
