    If you plant zucchini, you probably have them coming out of your ears at this point. Here’s a list of 10 surprising, delicious and drool-worthy ways to use up your summer zucchini. Oh P.S. To keep your zucchini plants mass producing, make sure you’re picking them off when they are ripe. If you let the jumbo ones start to form, the new little ones stop growing.

      We grow zucchini every year. All summer I cook a lot of recipes with zucchini. We love zucchini fries. These are crispy and loaded with cheese. Great and healthy TV snack or good friend to a glass of white wine. Another option is zucchini spread, delicious on crisp toast or you can use it as a base to a meat dish or as a souce to lasagna or spagetti. The bonus is that the spread can be canned, so it will be at hand even in the winter. Pizza from zucchini is wow:-) For a dessert, I make zucchini brownies with or without summer fruit.

      You missed one. Make apple pie out of it. My mom always made apply pie from zucchini and not actual apples.

      The Zucchini Bites look amazing. I’m actually wandering down to my local farmers market later on this afternoon, so will definitely be picking up some zucchini and trying those. An easy recipe and they look delicious 🙂

      Nice.. and one more possibility, believe me everyone will like it:

      1 large raw zucchini (thin sliced)
      3-4 cucumbers
      2 carrots
      baked bacon

      direction:

      using mandolin slicer (1/8″ thick) it should be thick as noodles, slice all of the vegetables.

      After vegetables thinly sliced put them into salad spinner to discharge excess water from vegetables.

      transfer to mixing dish, add ranch dressing & mayonnaise (2:1 ratio), salt, pepper to taste.. sprinkle with bacon…

      you might ask what raw zucchini?, yes, raw zucchini, it taste delicious…

      Whoa, you have so many great ideas for zukes! We love zukes here but go to traditional with them. Those pizza boats look great. As do the chocolate muffins. Can never figure out why zucchini and chocolate just works, just does. Have to share these with wife, she just fries them up with garlic which is good but I need a little variety in my life.

        The pizza boats are also a nice way to get kids to eat zucchini although my son loves zucchini a number of different ways :-). Zucchini fried up with garlic sounds nice too.
