This Cucumber Tomato Feta Salad has simple ingredients that are a winning combination – so refreshing and flavorful! We can’t get enough of our garden cucumbers and tomatoes so we have been experimenting with all different flavors and cheeses and this is a new favorite.

The feta cheese gives this salad satisfying Greek flavor and adds the salty notes so you hardly have to add any salt (or you can skip the salt altogether). When you add salt to cucumbers and tomatoes, they start to get juicy and soft so less salt means the salad will stay crisp longer.

There’s a surprising ingredient in the dressing that takes this salad to a whole new level!

Tomato Cucumber Feta Salad Ingredients:

1 lb (4 medium) Roma tomatoes, chopped
1 English Cucumber or 4 small garden cucumbers, sliced
6 oz feta cheese (large crumbles or diced is best)
1 small red onion, sliced
1/4 cup (or 1/4 bunch) cilantro, chopped*

Lemon Salad Dressing Ingredients:

2 Tbsp extra virgin olive oil
2 Tbsp fresh lemon juice (from 1 medium lemon)
2 medium garlic cloves, pressed
1/4 tspΒ sea salt,Β or to taste
1/4 tsp black pepper
1/4 tsp ground cumin

*If you aren’t keen on cilantro, add dill to taste instead.

How to Make Tomato Cucumber Feta Salad:

1. In a small bowl or measuring cup, combine: 2 Tbsp olive oil, 2 Tbsp lemon juice, pressed garlic cloves, 1/4 tsp salt, 1/4 tsp black pepper and 1/4 tsp ground cumin.

2. In a large mixing bowl, add remaining salad ingredients: chopped tomatoes, sliced cucumber, 6 oz feta cheese, sliced red onion and 1/4 cup chopped cilantro.

3. Just before serving, drizzle with dressing and toss to combine. Season to taste with salt if desired.

Ingredients

Tomato Cucumber Feta Salad Ingredients:

  • 1 lb (4 medium) Roma tomatoes, chopped
  • 1 English Cucumber or 4 small garden cucumbers, sliced
  • 6 oz feta cheese (large crumbles or diced is best)
  • 1 small red onion, sliced
  • ¼ cup (or ¼ bunch) cilantro, chopped*

Salad Dressing Ingredients:

  • 2 Tbsp extra virgin olive oil
  • 2 Tbsp fresh lemon juice (from 1 medium lemon)
  • 2 medium garlic cloves, pressed
  • ¼ tsp sea salt, or to taste
  • ¼ tsp black pepper
  • ¼ tsp ground cumin

Instructions

  3. Just before serving, drizzle with dressing and toss to combine. Season to taste with salt if desired.

Notes

*If you aren't keen on cilantro, try dill instead.

    Hi, where is the garlic supposed to go? I made the recipe without and it wqs a success! No garlic and little onion since at home we are not onion&garlic fans. Reply

    I have been making this for years. I add kalamata olives and extra oregano and let it marinate a bit before serving. We love it and it is a way to eat up cucumbers and tomatoes when they start ripening and we end up with so much extra. Reply
