Despite having an entire team proofread the book many times over, a couple of things slipped through the cracks. Thank you for reporting these to me! Corrections will be made in the next printing:

      HI Marion, I don’t sell a spiral bound. Someone buys my books and creates a spiral out of them but I have zero connection to that and I don’t know why Amazon allows that to be linked to my Amazon listing – I can’t speak to the quality of what they are doing.

    Hi, I live in the UK so what is a stick of butter? How much does that weigh? Also is there an alternative for using eggs or diary products as I would like to go plant based with my cake recipes?

      Us to UK 1 stick of butter = 113 g (about 115 g). For dairy products, you can try vegan butter 1:1, not sure of egg substtutions at this time.

    Hi, I love watching your videos especially the cakes. Why do you sometimes use olive oil instead of butter / melted butter or sour cream instead of butter milk? I am interested in finding a recipe for a light sponge cake and would like to know which is the best recipe to use?

      Hi Tanya! It really depends on the recipe. Light olive oil is usually chosen because it doesn’t taste “olivey” like extra virgin olive oil. You can also use another neutral oil such as canola, vegetable, avocado, etc. It adds moisture because it’s 100% fat and stays liquid. Butter brings flavor, but it also firms up when cool, which can make cakes feel denser but it’s a good choice to certain types of cakes. Sour cream/buttermilk are both acidic and reacts with baking soda to activate it. They also add flavor and tenderness to the batter.
      A traditional classic sponge cake recipe, it does not contain these ingredients.

    I’ve made several of your recipes and loved how they turned out.
    I’d like to make the cranberry bread with orange glaze and the cranberry cookies. How can I cut back on the sugar? My husband is diabetic so I need to be mindful of the sugar content in the food I make him.
    Can you suggest a substitute for the sugar, or how I can use less sugar in the recipe.

      Hi Nita! I don’t have much experience with using sugar alternatives but I would look into to the brand “swerve sweeteners”. You can find it in most local grocery stores and even on Amazon. I hear it’s one of the better ones to bake with. Follow the package instructions for how to substitute it in a recipe.
