These roasted potatoes are ultra crispy and flavorful with a perfect browning on the coins of kielbasa. Watch out for grazers though!
This is one of those recipes that is incredibly tempting to sample away until there’s not much left (I’m speaking from experience here). Those golden coins just call my name!
These roasted potatoes with sausage couldn’t be easier; no need to peel the potatoes and it’s a one-pan potatoes recipe with a quick and easy prep. You could even toss the potatoes on the baking sheet if you wanted to, saving yourself some dishes.
Adding sausage or kielbasa makes this an easy dinner idea, but it can also be served as breakfast or a most satisfying appetizer paired with a dipping sauce.

Ingredients for Roasted Potatoes and Kielbasa:
3 lbs small red potatoes, cut into 1/4″ thick rings
2 Tbsp extra light olive oil (or any high heat cooking oil)
2 Tbsp minced fresh parsley, or 1/2 Tbsp dried parsley
1 tsp sea salt
2 garlic cloves, pressed
1 lb kielbasa, or sausage cut into 3/4″ thick rings (we used Polish kielbasa)

How to Make Roasted Potatoes and Kielbasa:
Preheat Oven to 400˚F. Line a large baking sheet with parchment paper, or Silpat.
1. Cut potatoes into rings about 1/4″ thick. If potatoes are tiny baby red potatoes, you can half or quarter them so they are 1/4-inch thick. Slice Kielbasa into 3/4″ thick rings. Place potatoes and kielbasa in a large mixing bowl.

2. Add parsley, 2 pressed garlic cloves, 1 tsp sea salt, and 2 Tbsp olive oil and toss to combine. Spread onto baking sheet and bake at 400˚F for 40-45 minutes or until potatoes are browned an crisp. Stir halfway through baking with a spatula to ensure even browning.
Pro Tip: If using a very lean sausage or kielbasa, you might consider adding the sausage halfway through cooking so it is less likely to burn.



Garnish with fresh parsley if desired and serve warm.

Potatoes came out great. Kielbasa was dried to a crisp. Not sure how everyone else’s came out ok. Kielbasa was pretty much inedible.
Oh no! I haven’t had that experience but I’m more than happy to troubleshoot. Was it possible chopped too thin?
Added 2 onions cut into large chunks….also added chunks of green pepper same size as onion..tossed with lawrys salt free 17 spice mix..then sprinkled with Himalayan salt..tossed with evoo then baked..good results..tasty..

Very nice, hearty and filling. The potatoes didn’t have enough salt; if I made sure each bite had a bit of sausage and a bit of potato, it was very good. Think next time I’ll make by slicing the potatoes and roasting them with a generous amount of salt (maybe some herbs and pepper) for the first half of the roasting time, then toss the sliced sausage in for the rest of the time.

There’s only me to cook for so I like recipes that will be easy on the leftover circuit. I used garlic flavored olive oil, dried sweet basil, black pepper and extra garlic powder (love garlic), and added onion and bell pepper. And the only potatoes I had were russets. We will see how it turns out, but it does smell delicious.

Hey girl! I’m a 71 year old widower whose wife passed away suddenly 7 years ago.
Obviously I’ve had to learn to cook for myself. She was of old school Mennonite background, and the eldest girl of 7 brothers and sisters. As is normal in such cases, she was almost a substitute mother to her siblings and way active in the kitchen from her earliest memory. Man could that woman cook! Nowadays, I’ve found that, out of all the various food oriented websites I’ve searched through, I keep coming back to you time and time again. You’ve become my go-to for food stuff. Regarding the above recipe for sausage and potatoes, It appealed to me, and I gave it a go. I used baby red potatoes and “smokies”, I omitted the parsley (didn’t have any), and used bottled, and diced, garlic in oil. Also added Clubhouse brand Montreal steak spice, plus Clubhouse brand roasted garlic & peppers, plus sea salt and ground black pepper. I dumped the cut up baby potatoes and the smokies (cut up into roughly 3/4″ rings) to a big bowl, added olive oil plus the stuff mentioned above, tossed it, and poured it out onto a parchment lined, nonstick cookie sheet with my oven at 400° F. for 45 minutes with the rack just below center of the oven. Results? Quite edible, but could definitely be better. (my fault, not yours). The dish turned out spicier than I like, and the smokie slices were partially burnt. I ate the whole thing alright, but next time (and there WILL be a next time), I’ll reduce the amount of spice I add, and try to remember to add the smokie slices at, perhaps, the 30 minute mark. Overall, I highly recommend this dish to whomever may be reading this. It’s easy as anything to make, and tasty too. Could you reasonably ask for more? Hi Jen, we have this note in the recipe “Line a large baking sheet with parchment paper, or Silpat.” Also, the recipe is mixed in olive oil that helps it from sticking. I hope that helps.
I sprayed my baking sheet with Pam. I also stirred my dish halfway through cooking and nothing stocked.
