These roasted potatoes are ultra crispy and flavorful with a perfect browning on the coins of kielbasa. Watch out for grazers though!
This is one of those recipes that is incredibly tempting to sample away until there’s not much left (I’m speaking from experience here). Those golden coins just call my name!
These roasted potatoes with sausage couldn’t be easier; no need to peel the potatoes and it’s a one-pan potatoes recipe with a quick and easy prep. You could even toss the potatoes on the baking sheet if you wanted to, saving yourself some dishes.
Adding sausage or kielbasa makes this an easy dinner idea, but it can also be served as breakfast or a most satisfying appetizer paired with a dipping sauce.
Ingredients for Roasted Potatoes and Kielbasa:
3 lbs small red potatoes, cut into 1/4″ thick rings
2 Tbsp extra light olive oil (or any high heat cooking oil)
2 Tbsp minced fresh parsley, or 1/2 Tbsp dried parsley
1 tsp sea salt
2 garlic cloves, pressed
1 lb kielbasa, or sausage cut into 3/4″ thick rings (we used Polish kielbasa)
How to Make Roasted Potatoes and Kielbasa:
Preheat Oven to 400˚F. Line a large baking sheet with parchment paper, or Silpat.
1. Cut potatoes into rings about 1/4″ thick. If potatoes are tiny baby red potatoes, you can half or quarter them so they are 1/4-inch thick. Slice Kielbasa into 3/4″ thick rings. Place potatoes and kielbasa in a large mixing bowl.
2. Add parsley, 2 pressed garlic cloves, 1 tsp sea salt, and 2 Tbsp olive oil and toss to combine. Spread onto baking sheet and bake at 400˚F for 40-45 minutes or until potatoes are browned an crisp. Stir halfway through baking with a spatula to ensure even browning.
Pro Tip: If using a very lean sausage or kielbasa, you might consider adding the sausage halfway through cooking so it is less likely to burn.
Garnish with fresh parsley if desired and serve warm.

My husband found this recipe, so I made it tonight. I noticed there was a lot of liquid coming out on the parchment paper, so the potatoes weren’t crisping up. I took everything off the parchment paper and continued cooking it to see if that would help. It wasn’t really helping, so we threw it under the broiler and that did the job. I used a Polish sausage we got at a Polish store in Chicago and the flavor of the sausage went into the potatoes. It was really good. I was questioning whether we would be able to eat it when it wasn’t crisping up, so I’m glad the tweaking worked. I used the thickest slice setting on my food processor to slice the potatoes. It was the perfect setting.
Hi Lori, this doesn’t normally have alot of liquid – could it be that the potatoes were salted and let sit for too long which would produce extra moisture as salt draws moisture out of potatoes? Also, using too small of a pan would keep it form browning if the ingredients are crowded. I’m glad it worked out in the end. Great idea!
400 is way to high temp for 45 minutes. It burned the sausage black. On the flip side you’re a pretty lady
Well, I’m glad there’s a flip side! I haven’t had that happen where the sausage burned but that could be more likely if you are using a very lean sausage in which case you could add the sausage halfway through baking. I will add that note in the recipe.

Did you place paper towels in the baking pan before placing the potatoes and kielbasa?

I coated the potatoes in 1 tblsp corn starch before cooking, crispy outside!

It’s just polish sausage. You can substitute with other sausages if you can’t find kielbasa where you live.
Can I use sweet potatoes with the kielbasa???

We love roasted potatoes, sweet potatoes, and onions together! They all caramelize and taste so good! The sausage would be good with that, too.

My mom is Italian and I’ve made a similar recipe to this growing up. We use Italian sausage and potato, bell pepper, and yellow onion. We also add basil, oregano, garlic and onion powder. It’s a staple in my house and a must try!

I made this tonight for the nth time and my 3 kids from teen to toddler basically licked their plates clean. I notice that a lot of recipes use garlic, light olive oil and parsley. Loved it, adding to the kielbasa rotation (we also do a kielbasa fried rice). Used minced garlic and added pepper & a bag of the frozen peppers and onions that I thawed and dried the best I could. Sadly there were no leftovers for my lunch tomorrow 🙁
