We were so happy to discover this new Polish apple and cottage cheese pancakes recipe. Or at least we think they are polish. We found it on a blog called Slodka Babka (isn’t that a cute blog name?).
The blog was written in Polish so we did some figuring and we determined they were likely Polish. It was interesting to find out what a “dag” was. It doesn’t convert to grams like Google translator would like to make you believe. If you were really curious, 1 dag = 10 grams. Any-who, what you have here is a darn good breakfast recipe.
What I love about these pancakes (besides being delicious), is they’re so quick and easy to make. There’s no yeast, no baking powder or baking soda, and there’s no waiting around for the batter to rise, yet it’s fluffy. I don’t think I would have ever thought to make them like this. It’s genius. Read on to find out the easy and wonderful little secret.
Pancake Ingredients:
4 eggs (whites and yolks separated)
1 ¼ cup all purpose flour
3 medium apples peeled, cored and grated
1 cup small curd cottage cheese
1 Tbsp honey
¼ tsp cinnamon
1 pinch salt
Grape seed or extra light olive oil to saute
Powdered sugar for dusting, optional
How to Make the Apple Cottage Cheese Pancakes:
1. In a large bowl, mix 1 ¼ cup of flour, 4 egg yolks, 3 grated apples, 1 cup of cottage cheese, 1 Tbsp of honey, ¼ tsp cinnamon and a pinch of salt. Mix until evenly blended.
2. In a separate, clean bowl (in case you like to use dirty bowls I guess; sorry, that was a duh) beat egg whites 1.5 minutes on high speed with a hand mixer until foamy and soft peaks form. Fold the egg whites carefully into in the rest of the mix using a spatula.
3. Add 2-3 Tbsp of grape seed or extra light olive oil to a large nonstick skillet and preheat it to a med/high. Drop a tablespoon-full of the mixture onto the hot oiled skillet and press it down slightly. Saute for 3-4 minutes per side until golden on each side.
Dust with powdered sugar if you want to pretty it up and serve with sour cream or your favorite jam. Enjoy:D

OMy!! OMy!! OMy!! I just made these this morning and OMG!! They are absolutely AMAZING. I recently had sirniki at my moms house but they don’t even come close to these (sorry mom). These pancakes are fluffy and FULL of flavor. I am definitely making this recipe for my mom next time, she will be impressed =) Thank you Natasha. I just recently discover your blog and I have a feeling I will be making every one of your recipes.
Wow that is one of the best reviews of a recipe so far! Thank you!
Love the recipe…Can’t wait to try it. Have been looking for a healthy pancake recipe without baking soda/powder to feed a finicky 1 n half yr old (aren’t they all finicky?). This sounds like a to-do. Thanx
Yes, they are! 🙂 My son enjoys this with plenty of sour cream and powdered sugar! 😉
These are Sooo Yummy!!! My sister with her family was over today and so I decided to make some of these(kids love pancakes anytime of the day). And me and my sister could not eat enought of them 🙂 They are light and very healthy. Thank you Natasha for all your hard work to give us these delicious recipes!
You are so welcome Nadia. We actually made those today again as well 😀
Hi Natasha, this recipe is so yummy, quick, easy and my kids love it. I had it memorized after the first time I made it. I did make it a few times with ricotta cheese because I didn’t have any cottage cheese on hand. Finally, made it with cottage cheese today but you know what, I prefer it with ricotta, probably because it’s more of a mild taste. Thank you for the recipe 🙂
I will have to try it with ricotta. Thank you for the tip!! Did you use the same amount as cottage cheese?
Yes, I did 🙂 Also, I used 20 oz. apples which are awesome baking apples 🙂
Hi Natasha, made these this morning and my family including kids loved it. Will definately make these again. Thanks for sharing.
That’s the best when kids love a recipe. Thanks for letting me know 🙂
Hi Natasha! I made these today, but I changed it a little by adding fresh grated pumpkin instead of 1 apple .Yum…they were so good, kids loved it too. thanks for sharing.
Awesome, I will try your suggestion :). I actually have some pumpkins at home.
Natasha,
I want to make these in the morning but only have 1/2 cup cottage cheese. Is there anything I can put into it to replace the other half of cheese without having to decrease the pancake amount? For instance: add more apples, or add another cheese? Any suggestions? I made these already and they were yum, we’re eaten up like no tomorrow.
I really can’t think of anything. Someone wrote in that Tvorog didn’t work, so I can’t really suggest something without testing it myself. Sorry 🙁 But I am glad you liked the recipe 😀
I can’t wait to surprise my hubby with these! I love all your recipes and having grown up in a Russian home, I adore the fact that I can duplicate my grandma’s and mom’s homecooking now. I feel so accomplished and it’s all because of you. Thank you for all you do, Natasha!
Stacy that’s awesome! Thank you so much 🙂 I hope you and your hubby love the pancakes!
This recipe looks amazing Natasha. I can’t wait to try it.
What pluggin do you use for your format? I like the layout its similar to the easy recipe pluggin so I was just seeing if that was the same one you have as well. They’ve recently changed some of their pluggin options (you now have to pay for them) so I was just curious. 🙂
I’ll come back and share when we try your recipe. I love that you shared the cost as well. That is something I’m always considering when I try a recipe
It’s the easy recipe pluggin for WordPress and it’s great because google search results produces a photo! 🙂 and my readers seem to love it!
Printer version is awesome but would it at all be possible to write estimated time it takes to make the recipe? It would be SOOOO helpful 🙂 and looking fwd to trying these! Especially now that it’s apple season! Thanks for all ur hard work. Blessings to you and ur family!
Hi Olga. Thanks for your feedback. Good news! I have the time frames on the print version. 🙂
Wow I guess I totally overlooked that!
Love the New print format. Thank u sooo much.
By the way, I think it would be better if you posted the new recipe format at the top of the page rather than at the bottom 🙂
Thank you for the suggestion Alison. All the big bloggers like Steamykitchen, Simplyrecipes and Pioneerwoman put it on the bottom of the posts, so I try to follow their format, but nothing is set in stone 🙂
Hi Natasha, I just wanted to pop in to say thank you – it is very inspiring knowing than someone actually uses the recipes I am posting 🙂 I am very glad you liked the pancakes – they are one of my favorites too 🙂 Your photos are beautiful 🙂 Warm greetings from Poland 🙂
Ola, thank you!! And thank you for the amazing recipe. I’m excited to try more of your recipes! It’s so awesome to hear from you 🙂
Love the format!!!!!!!!!!! Thanks sooo much!
Very yummy indeed! I made these yesterday & my 3 year old daughter (and I) loved them 🙂
It’s so nice to make something that you can enjoy together with the kids instead of having to make a separate meal for them :).
Dang Natasha! Youre always making some cool changes. This format is great and I think it looks awesome and professional in my recipe book;)
Youre great!
Thank you Snezhana 🙂
Thank you so much for the new and improved! 🙂 And the recipe is wonderful as always.
You are welcome Ana. I love trying new recipes and this one is a keeper for sure. 🙂
This is a great way to use apples while they’re in season. My kids would love it!!!! and I like your new print format.thanks for sharing.
You are welcome Nadia. My son eats them up, of course with some powdered sugar on top 🙂
Love, love, love!
Thanks for the recipe Natasha. Do you know if I can use farmers cheese instead?
Yes you can, I have another similar recipe which uses farmers cheese. 🙂
