This Skinny BLT salad is everything we love about a BLT minus the carbs which makes this the healthy version :), although we’ve been known to add croutons ;).
You’re going to love the super easy, creamy dressing. In all honesty whenever there’s bacon in a recipe, it overshadows everything else in the bowl for me. I often scoot a small stash of bacon to the corner of my bowl (because bowls have corners) and save it for the last bite.
Back to the salad. It’s based on Gina Homolka’s recipe from The SkinnyTaste Cookbook. The first time I thumbed through her book, I new I had to own it. I also bought extra copies for my readers because I knew you’d love it too! Read on to enter the giveaway!
Ingredients for Skinny BLT Salad:
12 slices lean center-cut bacon (or 6-8 thick slices)
3-4 Roma tomatoes, chopped
1/4 cup light mayonnaise (p.s. it tastes great with real mayo too!)
1/8 tsp salt
pinch of freshly ground black pepper
2 medium or 1 large head of romaine (6 cups chopped)
1 medium Hass avocado, chopped
How to Make Skinny Bacon Lettuce and Tomato Salad:
1. Put bacon in a large non-stick skillet and saute over low heat, turning often, until crisp. Transfer to papertowels to cool, then crumble or chop bacon
2. In a medium bowl, combine chopped tomatoes with 1/4 cup mayonnaise, 1/8 tsp salt and a pinch of pepper. Stir to combine and set aside for 10 minutes allowing the tomatoes to release their juiciness. This scrumptious and easy concoction is your dressing.
3. To serve, divide the lettuce among 4 plates then top each with 1/4 of the tomato “dressing” then divide the avocado and bacon evenly among the plates. If you’re feeling less fancy, toss everything together in a large salad bowl and serve.
BLT Salad with Avocado

Ingredients

This looks absolutely delicious!! I’m so excited for summer and all the yummy and fresh salads straight from our garden! Love picking out fresh fruits and veggies to add to the salad:) my favorite summer salad is probably a strawberry, avocado, and Spinach Salad with some poppyseed dressing!
Favorite go to salad is a spring mix salad or tomatoes, onions and mayo salad.
Greek Salad.
I love a massaged kale salad with some sort of fruit and then balsamic vinagrette!
My go to salad is cucumber, tomato and red onion with Italian dressing. For years I thought my family was calling it “hairy salad” which always confused me, but it turns out it is “Harry salad” because it is a recipe from our friend Harry. It makes a lot more sense now 😀

Olive Garden salad. Always buy their dressing and make it at home.
My go-to salad is usually chicken Caesar, can’t go wrong with that! Absolutely delicious and packed with great nutrients.
This salad looks very delicious! I just asked my kids what is their favorite salad, they replied “anything with crab or bacon!”
My favorite homemade salad is a southwest chopped salad with a creamy cilantro dressing. Right now though, I’m loving the taste, and convenience, of Dole’s Sunflower Crunch chopped salad kit – it’s so yummy!

Green salad or “мимоза”
I love this idea! Great salad for lunch time. One of my favorite salads is spinach with quinoa, flagship cheese, and avocado. Topped with a little bit of balsamic vinegar and garlic olive oil.
I love to make salad with romaine lettuce, feta, fresh tomatoes, homemade ranch, and avocados. 🙂

Our families favorite go to salad is simple.- its fresh cucumbers and tomatoes. With garlic salt, freshly grated garlic, green onion (or regular) and dill. With either hemp oil or sourcream & mayo duo. We discovered hemp oil last year and love love love the taste of it. It is a mixture of sunflower and “garchichnoyo maslo” (musturd oil) fancy i know lol…its manufactured in Volgograd and hard to get your hands on but is also sold in Brighton beach NY (russian town) but hemp oil is even tastier, easier to find and extremely healthier for you. (comparable to flax seed oil benefits) YUM! we always have cucumber & tomatoes at home OR ELSE!

I asked my wife what she wanted for Mother’s Day and she said a pound of bacon cooked up and a nap. Done! But I think I should make her this BLT salad too, I know she absolutely loves Roma tomatoes too.
