This Skinny BLT salad is everything we love about a BLT minus the carbs which makes this the healthy version :), although we’ve been known to add croutons ;).
You’re going to love the super easy, creamy dressing. In all honesty whenever there’s bacon in a recipe, it overshadows everything else in the bowl for me. I often scoot a small stash of bacon to the corner of my bowl (because bowls have corners) and save it for the last bite.
Back to the salad. It’s based on Gina Homolka’s recipe from The SkinnyTaste Cookbook. The first time I thumbed through her book, I new I had to own it. I also bought extra copies for my readers because I knew you’d love it too! Read on to enter the giveaway!
Ingredients for Skinny BLT Salad:
12 slices lean center-cut bacon (or 6-8 thick slices)
3-4 Roma tomatoes, chopped
1/4 cup light mayonnaise (p.s. it tastes great with real mayo too!)
1/8 tsp salt
pinch of freshly ground black pepper
2 medium or 1 large head of romaine (6 cups chopped)
1 medium Hass avocado, chopped
How to Make Skinny Bacon Lettuce and Tomato Salad:
1. Put bacon in a large non-stick skillet and saute over low heat, turning often, until crisp. Transfer to papertowels to cool, then crumble or chop bacon
2. In a medium bowl, combine chopped tomatoes with 1/4 cup mayonnaise, 1/8 tsp salt and a pinch of pepper. Stir to combine and set aside for 10 minutes allowing the tomatoes to release their juiciness. This scrumptious and easy concoction is your dressing.
3. To serve, divide the lettuce among 4 plates then top each with 1/4 of the tomato “dressing” then divide the avocado and bacon evenly among the plates. If you’re feeling less fancy, toss everything together in a large salad bowl and serve.
BLT Salad with Avocado

My favorite go to salad is a good layer of greens, black beans, corn, avocado and diced grilled chicken with a little sriracha/ranch topping.
When I think salad, I usually think of your olivye salad!
Southwest Orzo Salad
If I didn’t plan the dinner to much in advance, I just look what veggies I have and make a fresh salad out of them. With homemade mayo, sour cream, salt, pepper, fresh squeezed lemon juice, & any herbs I have on hand; dill, parsley, cilantro, ect… But just love salads 😉

My go-to salad is very similar to this one. Instead of bacon I add cucumber, and use Italian dressing instead of mayo.

My go to salad is simple: cucumbers, tomatoes, mayo, and salt 🙂 always yummy and a garden favorite!
I like a simple salad, romaine, cucumber, tomatoes, red onions with garlic cheese croutons. As for the dressing, I like creamy Caesar or a simple balsamic vinaigrette. Next time I left over bacon, I should save some and crumble it in my salad, that’s if there are any leftovers haha. Thanks!
