This Skinny BLT salad is everything we love about a BLT minus the carbs which makes this the healthy version :), although we’ve been known to add croutons ;).
You’re going to love the super easy, creamy dressing. In all honesty whenever there’s bacon in a recipe, it overshadows everything else in the bowl for me. I often scoot a small stash of bacon to the corner of my bowl (because bowls have corners) and save it for the last bite.
Back to the salad. It’s based on Gina Homolka’s recipe from The SkinnyTaste Cookbook. The first time I thumbed through her book, I new I had to own it. I also bought extra copies for my readers because I knew you’d love it too! Read on to enter the giveaway!
Ingredients for Skinny BLT Salad:
12 slices lean center-cut bacon (or 6-8 thick slices)
3-4 Roma tomatoes, chopped
1/4 cup light mayonnaise (p.s. it tastes great with real mayo too!)
1/8 tsp salt
pinch of freshly ground black pepper
2 medium or 1 large head of romaine (6 cups chopped)
1 medium Hass avocado, chopped
How to Make Skinny Bacon Lettuce and Tomato Salad:
1. Put bacon in a large non-stick skillet and saute over low heat, turning often, until crisp. Transfer to papertowels to cool, then crumble or chop bacon
2. In a medium bowl, combine chopped tomatoes with 1/4 cup mayonnaise, 1/8 tsp salt and a pinch of pepper. Stir to combine and set aside for 10 minutes allowing the tomatoes to release their juiciness. This scrumptious and easy concoction is your dressing.
3. To serve, divide the lettuce among 4 plates then top each with 1/4 of the tomato “dressing” then divide the avocado and bacon evenly among the plates. If you’re feeling less fancy, toss everything together in a large salad bowl and serve.
BLT Salad with Avocado

Lately my to go salad is your new one the cucumber feta one I just crave it sometimes love love love it and also a toss salad with grated parmasion and mayo as a dressing it seriously delish!
My go to salad is simple and plain- lettuce head, cucumbers and red cherry tomatoes with ranch!!
My go to salad is olivye. It takes forever to make it, but man, I could eat it all day long!!! If Im crunched for time then it would be regular olive garden salad with their dressing that I buy from the store. Yum.
Our favorite go-to salad is a simple romaine with cherry tomatoes, cucumbers, and feta cheese. Sometimes I’ll add nuts or dried fruit if I want to make it a little fancier. We use a simple dressing made with balsamic, oil, lemon juice and salt/pepper to taste. Yummy.

This salad looks simple, crisp and refreshing! I don’t understand why you scoot your bacon over, I always eat it with my salad, I can’t resist a salad with bacon haha!
I love to make olivye because it’s my kids favorite salad, and it makes me so happy to see my kids eating.. They are picky eaters.

I love a classic ceaser with fresh grated Parmesan! But my all time favorite is a oliver salad!!
My favorite salad is one made with salad greens, strawberries, fresh mint, and a balsamic vinaigrette. When I can get it, I add grilled (or pan fried) halloumi cheese to it.
This is my favorite salad.
My favorite go to salad is what we call our cabbage salad at my house…. It’s green and red cabbage, cucumbers, tomatoes, red onions, bell pepper, carrots and green onions. Mixed either with extra virgin olive oil, vinegar and salt and pepper, our just with ranch dressing. Super delicious and healthy!
