This breakfast sandwich is cheesy, juicy, easy and so darn delicious! All you need is 5 minutes, 5 ingredients and 1 pan – perfect for breakfast on-the-go! This breakfast sandwich is loaded with eggs, ham and cheese and is hugged by a warm English muffin that toasts in the same pan. And it can all be cozied up between your fingers… Yuuum!
You can easily scale this recipe up or down depending on how many mouths you’re feeding. Watch this video tutorial to see just how quick and easy it is…
This recipe has completely won us over. The inspiration came when My husband’s cousin Vicky shared a video on Facebook for a breakfast sandwich. After making our version 4 days in a row, we knew it needed to be shared with you.
This is also a kid-friendly breakfast. Our son requests this sandwich all the time.
Ingredients for 1 Breakfast Sandwich:
1 english muffin, cut in half
2 eggs
2-4 slices of ham (we ❤️ black forest but any kind will do)
1/3 cup finely shredded cheese (we used Mexican cheese)
1 tsp chives, finely chopped
Salt and Pepper to taste
1 Tbsp olive oil or butter to saute
Tip: to make 2 sandwiches at a time, toast the English muffin in the toaster and sauté two sets of eggs in the pan.

Breakfast Sandwich - A One Pan Breakfast (Video Recipe)
Ingredients
- 1 English muffin, cut in half
- 2 eggs
- 2-4 slices of ham, we love black forest but any kind will do
- 1/3 cup finely shredded cheese, we used Mexican cheese
- 1 tsp chives, finely chopped
- Salt and Pepper to taste
- 1 Tbsp olive oil or butter to saute
Instructions
- Heat a large non-stick pan over medium heat and drizzle with 1 Tbsp oil.
- Place your Engish muffin on half of the pan cut-side down. Crack 2 eggs side by side on the other half of the pan and break the yolks with a spatula.
- Once eggs are mostly cooked through, sprinkle tops with salt and pepper to taste, 1 tsp fresh chives and half of shredded cheese. Place toasted english muffins cut-side-down over the eggs and lightly press on the tops with a spatula.
- Flip the sandwich over (egg-side-up). Place ham over half of your sandwich and top with more cheese. Fold the sandwich together and and remove from heat.

What is your go-to quick breakfast?
In the video you just have the avocado sitting there at the end. lol It doesn’t serve any purpose in the video and is only used as a prop in the picture. Of course avocados have many health properties and are good at any time of the day for dietary reasons. I just find it odd to have a cut avocado sitting there that serves no purpose.
Also. You didn’t even heat the ham up? Just let the surrounding heat of the egg heat it? Why not lightly grill it? The “pepper”, you can’t even see that you used any on the sandwich. Of course that is a personal preference
Thank you for that feedback Topher, we do love to add avocado to our sandwich. You can put it in the sandwich or just serve it on the side for breakfast which is what we did. I sprinkle avocado with salt and pepper and drizzle with extra virgin olive oil. So yummy!
Thanks! I now make this breakfast sandwich 1-2x weekly however, I only use one egg and one sausage. Plus, I do toast the English muffin in a toaster. Do enjoy very much.

As a breakfast sandwich addict, couldn’t wait to try this. Now on my fourth time and so call for a comment. It was great!! I did change the chives to chopped jalapeno and used cooking spray instead of oil. This is a great breakfast sandwich. I have friends coming over next weekend so will prepare this, omit the cheese and jalapeno, but make a white cheese sauce with onion and jalapeno to pour over them.

How could I make the breakfast sandwich for a crowd of 40 people? I work at a hotel that has complementary breakfast. We use liquid eggs instead of regular eggs. Everything but the liquid eggs come precooked. Or can u give me other ideas for making breakfast sandwiches

Hi! What temp is the ham? Do you just take it out cold from the fridge and put it on the sandwich or do you heat it up?

I have done something similar with left over hamburger buns.
They work well and are more tender than the muffins.

I’m having a wedding shower brunch on Saturday and I think I will serve these sandwiches. I will start cooking them up 30 minutes early and wrap in foil then keep in a warm roasting pan. Do you think it will work?
Hi DeAnn, the only concern I would have about that is the muffin would get soft from the trapped steam inside the foil. It sounds like a good idea, but I would suggest testing by wrapping one in foil for 30 minutes to see if the moisture doesn’t make the muffin too soft.
