Broccoli Corn Salad

I made this Broccoli Corn Salad after trying it at a church baby shower this past weekend. One of the gals in our church, Irina, made it for the party and I went back for seconds. It was just perfect. She actually told me one of my broccoli salads were inspiration for her salad! I snapped a pic, jotted down how she made the dressing and voila!

My hubby and I ate more than half between the two of us. We used fresh corn on the cob, organic broccoli and tomatoes straight from my Mama’s garden. It was wonderful. Thanks Irina! 🙂 

Ingredients for Broccoli Corn Salad:

1 large or 2 medium heads of broccoli
1 cup cherry tomatoes, halved or quartered if larger
1/2 can corn or cooked corn from 1 large ear or corn
1 large carrot, grated
1/4 cup craisins (dried cranberries)

Dressing:

4 Tbsp Ranch
4 Tbsp Mayo
2 small or 1 large garlic clove, pressed

Broccoli Corn Salad

How to make this Easy Broccoli Salad:

1. Chop broccoli into small florets. Use a potato peeler to peel the stems and dice cleaned stems to use in your salad as well (no waste!)

2. In a large bowl, combine chopped broccoli, 1 cup sliced tomatoes, corn kernels, 1 grated carrot, and 1/4 cup craisins.

3. In a small bowl or measuring cup, stir together 4 Tbsp ranch, 4 Tbsp mayo and 2 cloves of pressed garlic. Mix until smooth then stir the dressing into the salad to taste. We used the entire amount.

A fresh broccoli, corn and tomato salad with the zing of dried cranberries. The dressing is simple and really flavorful. Enjoy the wonderful flavor combinations in this salad!

Ingredients 

Servings: 4 -6

Salad Ingredients:

  • 1 large or 2 medium heads of fresh broccoli

    Hi. Wondering what is meant by 4T. Ranch. Is it ranch dressing from a bottle or ranch dressing powder used to make ranch dressing.

      Hi Elyse, 4 Tbsp is 4 Tablespoons. You can make your own ranch dressing with the powdered mix.

        Hi Teresa, we use fresh broccoli and always cooked corn. Broccoli can be eaten raw but corn should be cooked.

    How many people will eat from this salad? If I want do it for 30 people how many portions I have to make?

      It depends on the portion you will be serving. Will there be any other salads on the menu? If there are no other salads on the menu, i would at lest triple the recipe. Hope this helps 🙂 .

    Hi Natasha! I was just reading the comments on this recipe (which I am planning on making) and the cookbook comment caught my eye. You know, whenever I think of bloggers making cookbooks from their website recipes, I usually think, “I prefer just the recipe online..”
    But I think if you made a cookbook, I would totally buy it! Because I use your website so much, and I think it WOULD be easier for me to just have your cookbook open, instead of scrolling through my laptop.
    Anyways, im done rambling now.. Hope you do it one day! 🙂

    Fantastic salad! And so beautiful. I made it for my Missions Board dinner meeting, and it was a huge hit. I served sliced unsalted almonds alongside for a garnish. I thought about adding bacon too, but there was bacon in the potato soup I served with it. (Believe it or not, SOME people – certainly not ME – think you CAN have too much bacon!)

    I had to make this salad twice during the same dinner tonight. So good! The dressing was excellent.
    I wonder if there is a way to make the same good tasting dressing but with plain or Greek yogurt only. That is what I told to my husband about it today to make him feel even better, because he is on a healthy low fat diet.
    Will be making this salad again and again. Thanks for sharing!!!

      About that cookbook. I’m barely recovering from August (major food aversions with this pregnancy) but things are getting better. I’ve been thinking about it more… does that count? lol. If you do figure out a Greek yogurt dressing, do let me know! That sounds yummy and much healthier!
