Cheesy Pork and Potato Bake

This Cheesy Pork and Potato Bake is very satisfying and simple to prepare. I hope your family enjoys it as much as we did.

My husband’s mom gave him this Cheesy Pork and Potato Bake recipe over the phone. He set off to make it right away. This entire post is courtesy of my hubby. It’s a very satisfying potato bake and I hope your family enjoys it as much as we did.

Ingredients for Potato Bake:

3 lb of Yukon or Russet potatoes
1 bay leaf
1/2 Tbsp of salt
3 to 5 Tbsp of olive oil for pork, onion and garlic
1 lb of pork
1 Tbsp of soy sauce
1 medium onion
3 cloves of garlic
1 cup of heavy whipping cream
1/4 cup of fresh dill
1 Tbsp of Mrs. Dash seasoning
1 cup of grated mozzarella cheese

How to Make Cheesy Pork Potato Bake:

1. Wash and peel potatoes. Cut them in to big chunks and place them in to a pot with cold water. Add 1 bay leaf and 1/2 Tbsp of salt. Cook for 15 min on medium high heat until they can be pierced with a fork, but are not fully cooked. Drain potatoes and place them in a large bowl.

2. While potatoes are cooking, cut pork in to small chunks. Add some oil to large skillet and cook pork for  7-10 min. Half way through, add 1 Tbsp of soy sauce and mix well. Once pork starts to brown, remove from heat.

3. Next, mince 3 cloves of garlic and saute on medium high heat until it starts to brown. Be careful not to burn it. Stir frequently. After garlic is done cooking, remove it to a separate bowl, add more olive oil and saute onion in the same skillet until it is golden brown.

4. Start preheating oven to 350˚F.

5. In a big mixing bowl, combine cooked potatoes, onion, garlic, 1/4 cup of fresh dill, 1 cup of heavy whipping cream, 1 Tbsp of Mrs. Dash seasoning and gently mix everything together.

6. Empty mixture into a large rectangular baking dish and top with cooked pork. Cover baking dish with foil and place in to preheated oven for 15 min.

7. While potatoes are baking, shred 1 cup of mozzarella cheese.

8. After 15 min are up, take potatoes out of the oven, remove foil, and sprinkle them with mozzarella cheese. Set oven to broil and put the dish back for 2 min to melt the cheese. You are done, it goes great with canned pickled tomatoes.

Notes:

Cooking time may vary depending on the size of the potato or pork chunks. I would also recommend prepping most of the ingredients before starting to cook. So wash and dice potatoes, cut pork, dice onion, and mince garlic.

    I’ve made several of your recipes, so thought I’d leave a comment. I love them all! I made a variation of this one based on the ingredients I had and it was SO good. That soy sauce and dill combo is interesting in such a good way! I used about 1/4 cup half and half because I didn’t have the whipping cream and it was great. Thanks, Greg

      Hi Stacey, Yes that would work fine, just pre-cook the potatoes until they can be pierced with a fork, but are not fully cooked.

      Hi Maria, I haven’t tested it this way but you could try with half and half (half milk and half cream), or maybe toss in olive oil but using just olive oil might make the recipe a little dry.

    Made this dish for dinner tonight. It was really good! I had to substitute some items as i din’t have them available: half&half instead of whipping cream, fresh oregano instead of dill, cheddar instead of mozzarella, and I don’t have MrsDash, but the dish still turned out pretty good!

    Have you ever tried Kartoshka po gusarski? My mother inlaw makes it…it is simply the best. Was wondering if you had the recipe for it on your website…if not you should def add it on 🙂

        It’s my favorite cause it so simple to make and no frying needed just cut it all up and in the oven. 🙂
        Cut pork meet in to think slices salt and pepper it and lay it one layer in to a protvin, cover it thinly w Mayo. Cut onion in half and slice thinly one half if it and spread it over Mayo, next layer is potatoes, cut in half’s and then cut it each have in to thin slices and make two layers out of potatoes, salt and pepper it and add a thin layer of Mayo, and the other half onion cut up thinly spread over Mayo and last but nit least add a layer of mushrooms, u can get fresh mushrooms and fry them or get them all ready in a can. Also lately I started adding a layer if thinly slices tomatoes gives this amazing taste! Anyways cover w foil, oven 350° and for about hour and 15 to 20 minutes until the meat us tender enough for your taste. Then take it out and add shredded mozzarella cheese and in to oven again w out foil, till cheese turns a bit golden and valaa ur done! Yummy!

    Oh my goodness! So I needed a great recipe for pork that wasn’t super complicated but filling (I was feeding a kitchen full of men after a day of working outside) when I came across this beauty! Thanks so much! It turned out awesome, so good in fact that I didn’t have any left overs. 🙂 The second time I made it I added grated carrots, sliced mushrooms and chicken thigh meat. So good!
