Lettuce wraps are a family favorite. They are healthy and delicious. We posted a recipe for lettuce wraps a long time ago, but we still make them often. Between my husband and I, we can wolf down this entire platter together (guilt free) ;). So I guess I should say that this can feed a “normal” family of 4.
Ingredients for Chicken Lettuce Wraps:
1 – 1 1/2 lb chicken breast or chicken tenders
1/2 cup Teriyaki marinade (Yoshibas or Lawry’s teriyaki w/ pineapple are good options)
1 small/medium jicama, peeled and julienned
2 small cucumbers, juilienned or finely sliced
2 med/1 large carrot, grated
1 head of boston/bib/butter lettuce (about 12 leaves)
Ingredients for the dipping sauce:
1 cup Newman’s Own low-fat ginger sesame dressing
2 heaping Tbsp creamy peanut butter
How To Make Chicken Lettuce Wraps:
1. In a medium bowl, combine chicken with your favorite Teriyaki Marinate, cover and marinate in the fridge 20-30 minutes. Meanwhile, prep your vegetables.
2. Peel and julienne jicama, grate carrot and julienne cucumber. Remove the core from the lettuce. Rinse and spin dry the leaves, then arrange the lettuce and prepared vegetables on a large serving platter.
3. To make a dipping sauce, pour 1 cup of Newman’s Own dressing into a container with lid and add 2 heaping Tbsp of peanut butter. Cover and shake well until the consistency is smooth.
4. Heat a large skillet over medium/high heat. Add 1-2 Tbsp olive oil and saute the marinated chicken about 3 min per side or until cooked through. Remove chicken to a cutting board.
5. Once the chicken is cool enough to handle, slice it into thin strips and add the chicken to your serving platter. See? Easy peasy!To serve, place some chicken and vegetables on a lettuce leaf and add desired amount of peanut sauce.

Fix stir fry with Kraft Recipe Makers

Thanks for the recipe. I think this is the second time you posted something about Kraft recipe makers. I guess I’d have to pick something up next time I’m in the store. These look delicious not to mention healthy.
One question, what is jicama? What does it taste like? Is it a bit sweet like carrot, or does it add some spice? (Sorry for the dumb question, I don’t think I ever saw it in my grocery stores, probably because I wasn’t looking for it, lol)
Jicama is like a cross between an apple and a water chestnut. We love it for lettuce wraps but haven’t really used it for anything else. It’s slightly sweet and it’s crisp. It’s not spicy at all; pretty bland except for a little sweetness. It’s a good question! 🙂
Making meatballs sounds pretty easy to me :).
I probably will make some grilled tacos, sauces will make the job easier.
