p-a-s-t-a !! This stuff is yummy! I’m about to change the way you think about creamy chicken pasta.
This chicken pasta has a light creamy tomato Alfredo sauce. The sauce boasts 6 fresh tomatoes, and very little cream but carries so much flavor! It is ridiculously good minus all the heaviness of traditional creamy Alfredo. It tastes fancy but this pasta recipe is really simple to make.
This simple method of cooking chicken breast is my favorite – it’s so tender and juicy! Plus, the chicken is cooked in the same pot as the sauce for simplicity and a boost of flavor as the wine deglazes the pan. This pasta also re-heats really well making it a great work-lunch option.
Ingredients for Chicken Pasta in Creamy Tomato Sauce:
3/4 lb linguini or fettuccine pasta
1 lb (2 medium) chicken breasts, trimmed
Salt and black pepper to taste
2 Tbsp olive oil
6 Roma tomatoes, diced (plus more to garnish if desired)
1/4 cup green onion, finely chopped
1/4 tsp hot chili flakes, (optional – omit if making for children)
2 Tbsp chopped fresh basil, plus more to serve
1 garlic clove, pressed
4 Tbsp unsalted butter
1 cup chardonnay or other dry white wine
1/2 cup heavy whipping cream
Parmesan cheese to serve
How To Make Chicken Pasta in Creamy Tomato Sauce:
1. Cook pasta in salted water with 1 Tbsp olive oil until aldente according to package instructions. Rinse, drain (I used my OXO bowl) and set aside.
2. Trim chicken and season both sides generously with salt and pepper. Heat a large deep pan ( I used my Dutch oven) with 2 Tbsp oil over medium heat. Add chicken and sauté the first side until golden brown (5 minutes), flip, cover and sauté another 5 min or until done. Remove from pan and rest 10 minutes before slicing against the grain.
3. In the same pan (no need to rinse it), over med/high heat, add diced tomatoes, green onion, 1/4 tsp chili flakes, 2 Tbsp chopped basil, pressed garlic clove and 4 Tbsp butter. Season with 1/8 tsp black pepper, or to taste. Add 1 cup wine and cook stirring occasionally until mixture is soft and most of the wine has evaporated.
4. Once there is only 1/4 cup liquid remaining, stir in 1/2 cup heavy cream and 1/2 tsp salt or season to taste.
5. Add back the chicken then season to taste if needed. Warm through gently for 2 minutes then toss the pasta with the sauce. Serve with parmesan, chopped fresh parsley and more diced tomatoes for extra freshness.

I don’t think one comment is enough for this recipe!! My husband loves this dish and he’s not a huge fan of pasta! The only thing I never add cause I rarely have it is basil. But seriously an absolute favorite in our family!! I try to make double the recipe because it’s even better the next day!!!

Hi Julie, I haven’t tried to freeze this so I can’t say for sure, but I do think it’s worth a test :). I think it could work well.
Insanely delicious! One of my favorite dishes! I’ve already made it twice! I’m a huge fan of tomatoes. Only thing I added differently was some mozzarella at the end to add some extra cheeziness! Thank you a million for this recipe

The pasta overall was ok, but few things need to be changed for me in order to make it second time.
The idea of adding green onion and basil to saute with garlic and tomatoes are not good… Why? First of all, basil lost its wonderful flavor and color. Second of all, the color of green onion are not bright green, it is dark green like caned sorrel – which I wasn’t happy of it. For next time, when I will make this dish, I will definitely saute basil and green onions. I will saute only tomatoes, garlic and replacing green onions with sweet onion. But, I will definitely add basil and green onion before serving dish.
I just want to say that we love this recipe so much, it’s simply called “The Pasta” at our house – all other pasta pales by comparison!!

Hi Ira, you could replace it with chicken broth but it won’t have the same depth of flavor.

Hmmm… the basil is nice and adds some great fresh flavor and aroma. Do you have dried basil you could use? I think it would still work without it if you dislike basil.
My husband hardly ever opts for a pasta dish (unless it’s lasagna) but when I made this he said it was the best pasta he’s ever tried! Definitely a keeper 🙂

I am afraid the chicken breast just grilled on a pan might be dry. Is there any trick that you use to make it more juicy?
If you sauté it this way, covering it halfway through, it will turn out really tender and juicy. It’s when you pre-sliced chicken breast and then try to sauté it that it turns out dry. Searing the chicken on a skillet and then allowing it to rest for a little bit produces really juicy results!
Finally made this dish.. although I was afraid the chicken would be too fatty and dry i made it this way

The recipe was awesome and I used left over chicken broth from making the chicken that way in the oven. Just wanted to share.
Also I added a spoon of corn starch to make it thicker.
I made this tonight! I only made a half because there are just two of us. I used Italian seasoning instead of basil. It was so so yummy! I will for sure be making this again!

The wine adds so much amazing flavor but you if you had to, you could use chicken broth.
Great recipe, Natasha! Cooked pretty quick, which is important. Even my kids (picky eaters 5 & 1 yrs old) loved it! I substituted fresh basil with dry 2 tsp, and it still turned out delicious, but I’m pretty sure it would be even more flavorful with fresh one. Next time will try exactly as in the recipe.
