I was even more excited when I learned it’s simple to make with just 4 ingredients.

Compared to a traditional Omelette, It’s also high protein, low-carb, and low fat, and it feels special for breakfast, even though it takes about 7 minutes to make this egg white omelet. If you want to make a couple at a time, you can have two skillets going at once. Follow my easy method, and you’ll have the best cloud omelettes for breakfast.

  1. Beat the egg whites – Beat the egg whites, salt, and cream of tartar until foamy with an electric mixer, and then continue until soft peaks form.

How Do I Know When I’ve Beaten the Egg Whites Properly?

If you can turn the bowl sideways for a second and the whites slowly slide rather than pour out, you’re right where you want to be. This easy egg white soufflé omelette is so much fun to make! Here are some of my best tips for success:

  • Soft peaks – the key is not to under- or overwhip the egg whites–soft peaks will create the most fluffy omelette
  • Clean the bowl– use a clean metal or glass bowl to whip the eggs, because any grease will prevent the eggs from forming soft peaks
  • Electric hand mixer – It’s possible to get soft peaks using a hand whip, but it will take a long time and muscle. I recommend using an electric hand mixer.
  • Cook immediately – cook the omelette right after whipping the eggs so they don’t liquidify again.

  • Pinch of salt
  • Pinch of cream of tartar
  • 1 tsp butter, or avocado oil or light olive oil for dairy-free

Instructions

  • Beat the egg whites – Add the egg whites, salt, and cream of tartar to a mixing bowl. Beat on medium speed until foamy, then increase to medium-high and beat just until glossy soft peaks form. The peaks should hold briefly, with tips that gently curl over. Do not over-beat or the omelette may deflate.
  • Prepare the skillet – Set a 10-inch non-stick skillet over medium-low heat. Add 1 tsp butter and use a pastry brush to coat the bottom and sides of the pan. The butter should bubble lightly, but not brown.
  • Cook the omelette – Reduce the heat to low. Add the whipped egg whites to the skillet and gently spread them into an even layer, about 1 inch thick. Cover with a lid and cook for 5 to 6 minutes. The lid traps steam and cooks the egg whites through, so there is no need to flip the omelette. It’s done when the bottom is lightly golden, and the top is mostly set and barely sticky to the touch. Do not overcook, or the omelette may deflate.
  • Fold and serve – With the help of a spatula, slide the omelette onto a plate and fold it in half right away. You may need to hold it in place with a spatula for a few seconds so it stays folded. The omelette will deflate slightly on the plate, which is normal. Garnish with chives, if desired, and serve right away with your favorite toppings.

This soufflé-style egg white omelette is best enjoyed immediately, while it’s tall, warm, and airy. It will deflate and become denser as it sits.
  • If you have leftovers: let the omelette cool briefly, then refrigerate it in an airtight container within 2 hours of cooking. Enjoy within 1 to 2 days for the best texture.
  • To reheat: microwave in short 15- to 20-second intervals just until warmed through. Freezing is not recommended, since the omelette may become watery or rubbery after thawing.
