These Greek yogurt pancakes aren’t your standard pancakes. They are delicate and go down easy (you’ll have to try them to know what I mean). I wrote that it serves 3, but I’ll be honest, I could easily wolf down all of these and still feel pretty good about myself ;).
My sister shared this recipe with me for her family’s favorite (almost daily) pancakes. The way she described them made me so hungry – soft, lightly sweet, crisp on the edges from the coconut oil and so delicious with fresh berries. Mmmm I wanted them badly and couldn’t wait to get my (always fiercely hungry, nursing mama) self to the grocery store for the ingredients. Did I mention they are easy?
Ingredients for Greek Yogurt Pancakes:
2 large eggs
4 Tbsp milk or to desired thickness
5.3 oz container (about 2/3 cup) vanilla Greek yogurt (I used Tillamook 2%)
1 tsp baking powder
3/4 cup all-purpose flour (*see note on measuring)
Coconut oil to saute (or light olive oil, or butter)
*to measure flour, scoop it into a measuring cup and scrape off top
How to Make Greek Yogurt Pancakes:
1. Whisk together wet ingredients: 2 eggs, Greek yogurt container and 4 Tbsp milk.
2. Stir 1 tsp baking powder into the flour then add this mixture to the wet ingredients.
3. Melt coconut oil in a nonstick pan over medium heat. Once coconut oil is hot, add heaping tablespoonfuls of batter into the pan. Sautee 2 min on each side until golden.
P.S. you can sub yogurt with cottage cheese but they won’t be quite as sweet as with the vanilla yogurt.

*to measure flour, scoop it into a measuring cup and scrape off the top
Mmm all that fluffy goodness drizzled with real maple syrup and homegrown raspberries… I think this would work well for dinner also ;).
This was the best pancake recipe ever! Instead of doing vanilla yogurt I did blueberry and strawberry and they were delicious and very filling!

This recipe worked amazingly with gluten free AP flour -just FYI:) The only thing I subbed was regular yogurt for Greek because I didn’t have it. Next time I’ll tried fruit yogurt. I think it’ll be good

I was thinking about what to do for breakfast with left over Greek yogurt so I ran into this recipe!… I added 1 tbsp more of milk,1/3 cup of brown sugar and some salt to taste. I personally like to put some cream cheese on top and wow!! they were very very yummy!!! Thank you Natasha for this great recipe, its definitely a “keep it”. Everybody loved these pancakes!!!

awesome recipe for greek yogurt pancakes! crisp on the outside, fluffy and moist on the inside! I am 34 weeks pregnant and loved this for breakfast. I added pumpkin pie spice to the batter for some flavor + some vanilla extract 🙂

This is by far the best pancake recipe that I have ever made! I doubled up on the recipe since I got very hungry little children 😄 Every one of them came out perfect 😅I will be making these for sure over and over again!

Hi Sabrina, I haven’t tested it with normal yogurt so I can’t say for sure. Baking is so much a science that the change in protein and thickness of the yogurt may affect the recipe. I think it could work, but again, I haven’t tested it.

Thank you for another wonderful and easy recipe! My pancakes came out a little bit bitter. To be honest the batter was a bit bitter too (yes i tried raw batter, guilty guilty). Any idea what went wrong?
There isn’t really anything in the recipe that would make them bitter. hmm… You might check the label on your baking powder and make sure it doesn’t have aluminum – some people are sensitive to the taste of that, but most likely it may have been your yogurt?? Did you use a flavored Greek yogurt or a plain one? If it’s a plain one, there wouldn’t not be any sweetness in the pancakes at all (but it still should not have been bitter unless the yogurt was spoiled). I hope that’s helpful somehow.

I made these and I love them! They are very light and easy on the stomach. My husband always though complains that “ukranian” pancakes aren’t really pancakes more like blini.. So if I don’t add baking powder will it make them more “American” style like flat..

Hey Natasha, I made these this morning. They are super delicious, but for some reason mine didn’t rise at all… Any idea why? I added everything just like you instructed.
Hi Lexie, Did you make sure to include the baking powder? Also, is your baking powder fairly fresh? To test it, put a teaspoon of baking powder into 3 Tbsp of WARM water (it won’t react in cold water) and it should fizz, become cloudy and produce tiny bubbles. The more bubbles it produces the fresher it is. If it doesn’t do anything, that means your baking powder needs to be replaced. I hope that helps! 🙂

We loved these pancakes! They remind me of sourdough pancakes. They came out so light and fluffy. I’ve made other yogurt pancake recipes and they come out a little rubbery. As long as we have Greek yogurt in the house this will be our “go to” pancake recipe.

Natasha, I was scrolling through my feed this morning before breakfast and saw this recipe. Just finished eating a lovely stack of these pancakes! Delicious and so easy to make. I only had strawberry flavored Greek yogurt, and still yummy! Those crispy edges are my favorite.

I confess, I’ve never made pancakes other than the highly processed boxed kind! Isn’t that terrible. I love this spin of pancakes which is no doubt healthier (not to mention tastier) than the ones I make. The raspberries on top look perfect, just bought some from a roadside stand. Handpicked! 2 pints for $7.50, not sure if that is a good price, but they tasted really good. Heading back to that farmstand today for more!
