There’s nothing like the sweet smell of grilled veggies, (or grilled anything!), floating through the air in the backyard. I love that this Grilled Zucchini and Mushrooms recipe is so easy and just takes 10 minutes of prep. There’s no tedious skewering, or lengthy prep required. If you haven’t tried grilling with a basket, I think you’ll love it!

My cousin’s wife,ย Katya shared this recipe with me after my other cousin’s wife, Alla, told me that Katya made this great zucchini! Katya got the recipe from her friend Yana. Confused? ๐Ÿ˜‰ I love it when there is a story behind a recipe! This grilled zucchini recipe is so simple and tastes great! I hope you all enjoy it!

Ingredients for Grilled Zucchini and Mushrooms:

1 medium Green Zucchini, sliced into 1/3″ thick rings
1 medium Yellow Squash, sliced into 1/3″ thick rings
1 lb baby bella mushrooms, halved or quartered if large
1/2 largeย onion, cut into 1/2″ wideย by 1″ long slices.
1/4 cup olive oil
3 Tbsp balsamic vinegar
Salt and pepper to taste

You will need:

A grilling basket (we found ours at Fred Meyer)

Optional garnish:

Sprinkle the finished veggies with fresh parsley, basil, or chives if desired

How to Make Easy Grilled Vegetables:

1. Preheat your grill to med/high (400หšF).

2. Place all of your sliced veggies into a large mixing bowl.

3. In a small bowl or measuring cup, whisk together: 1/4 cup olive oil and 3 Tbsp balsamic vinegar.ย Drizzle your dressing over sliced veggies and toss/ mix to evenly coat all of your veggies. Sprinkle withย salt & pepper to taste and let sit 10 minutes while your grill heats up.

4. Place all of your vegetables in a grilling basket and barbecue at 400หšF for about 12 minutes or until veggies are tender and cooked through, tossing every few times to ensure even cooking and caramelizing. Add more salt to taste. Remove from heat and serve right away and garnish with fresh parsley, chives, or even basil.

    We have grilled this recipe many times this year using the black reusable grill sheets. The leftovers are great on top of a salad for lunch the next day, because they already have the vinaigrette on them! Thank you for sharing! Reply

    Can you do this without a grill basket? Say in the oven or something?

    It looks delicious and I would love to try it. Just grilling is not convenient.

      Yes it would probably work in the oven but without testing it myself, I can’t give you exact baking times. I’d also recommend putting it into a non-stick skillet and cooking it on the stove-top. ๐Ÿ™‚ Reply

      You can, but without testing it I can’t tell you exact time when it will be done. Stove top would work great as well :). Reply

    Natasha, This looks fantastic and I love grilled veggie’s ! But I predict that when I try this that a few large shrimp will somehow fall, jump, or be thrown against their will into that basket And then enjoyed with those great grilled veggie’s.

    Mmmm, yummy! I grill vegetables in a basket all the time. I found mine at a grocery store as well. Quite cheap. Lasts for years even if rusted LOL. Reply
