These roasted potatoes are ultra crispy and flavorful with a perfect browning on the coins of kielbasa. Watch out for grazers though!

This is one of those recipes that is incredibly tempting to sample away until there’s not much left (I’m speaking from experience here). Those golden coins just call my name!

These roasted potatoes with sausage couldn’t be easier; no need to peel the potatoes and it’s a one-pan potatoes recipe with a quick and easy prep. You could even toss the potatoes on the baking sheet if you wanted to, saving yourself some dishes.

Adding sausage or kielbasa makes this an easy dinner idea, but it can also be served as breakfast or a most satisfying appetizer paired with a dipping sauce.

Ingredients for Roasted Potatoes and Kielbasa:

3 lbs small red potatoes, cut into 1/4″ thick rings
2 Tbsp extra light olive oil (or any high heat cooking oil)
2 Tbsp minced fresh parsley, or 1/2 Tbsp dried parsley
1 tsp sea salt
2 garlic cloves, pressed
1 lb kielbasa, or sausage cut into 3/4″ thick rings (we used Polish kielbasa)

How to Make Roasted Potatoes and Kielbasa:

Preheat Oven to 400˚F. Line a large baking sheet with parchment paper, or Silpat.

1. Cut potatoes into rings about 1/4″ thick. If potatoes are tiny baby red potatoes, you can half or quarter them so they are 1/4-inch thick. Slice Kielbasa into 3/4″ thick rings. Place potatoes and kielbasa in a large mixing bowl.

2. Add parsley, 2 pressed garlic cloves, 1 tsp sea salt, and 2 Tbsp olive oil and toss to combine. Spread onto baking sheet and bake at 400˚F for 40-45 minutes or until potatoes are browned an crisp. Stir halfway through baking with a spatula to ensure even browning.

Pro Tip: If using a very lean sausage or kielbasa, you might consider adding the sausage halfway through cooking so it is less likely to burn.

    It was sooo good. Didn’t have red potatoes. I used yellow ones. Took a bit longer to bake. I ended up covering it with foil. Will be making this again.

    Do you have any tips on keeping the potatoes from tasting bitter? I’ve been experiencing this with most of the recipes where I’ve used red baby potatoes.. I do scrub them and make sure they’re clean so I’m not sure what’s causing such a bitter taste in some of them

      Hi Alina, I’ve never had a bitter taste from red potatoes. As a rule, you should avoid red potatoes that have any hint of green color to them which happens when potatoes are exposed to light and can cause a bitter flavor. Are they homegrown? Maybe it’s the source of the potatoes, or have you tried different sources?

      Hello! I am eager to make this dish, however I may be overlooking one step in question. Should I boil the potatoes before baking them to avoid an over crunchy mishap? Or will they soften while baking in the oven? I ask because I have run into this problem before, and want to be prepared this time!

    I love this recipe! Simple and scrumptious. I’ve made it with white, russet, young, red and baby white potatoes – all equally tasty. I’ve also substituted garlic powder when I’m really in a rush, and the flavor still pops.

    Looks delicious! Will give this a try over the weekend, using baby reds and Hillshire Farm Polska Kielbasa 🙂 One question: What would you pair this with for a dinner idea? My guess would be brown / steamed rice & veggies…or some type of pasta?

      Hi Ned, I usually serve this as a main course so I would pick a fresh salad – maybe one with greens like our Greek Salad or our Cucumber Tomato Salad – you can explore all of our salads here. These cucumbers would also be really good! Steamed veggies would also work great.

    I only have russet potatoes and I really want to make this. Will they be okay to use instead of red potatoes?

      I haven’t tried this one with russet since I like the texture of the red potatoes when they are sliced and roasted, but I think it would work, just make sure not to cut the potatoes too thick so they bake properly.
