A quick and easy (5-minute) Avocado Cucumber Salad Recipe with the easiest lime dressing. This was a ‘spur of the moment’ recipe which means it’s super easy to recreate and you’ll memorize it right away. This cucumber salad disappeared so fast and we all wished there was more of it.

I feel compelled to make salads with avocado in them. When I add avocado, magical things happen – salads take on an irresistible creaminess without any creamy dressings needed. Good thing 99% of you seem to love avocados jus as much as we do. Some of our all-time most popular recipes are our avocado salads.
Ingredients for Cucumber Salad Recipe:
- We used garden cucumbers because they are still in season (YES!!) but you can use large english cucumbers.
- Look for an avocado that gives lightly to gentle pressure when you press on it. It should not be overly soft or squishy.
- Green onions or chives will work for this recipe. In a pinch, you can substitute with cilantro.
How to Keep Avocado from Turning Brown:
- If making the salad a few hours ahead, combine all ingredients into a bowl (except the salt!). Squeeze lime juice directly over avocados and toss gently to combine.
- Cover tightly with plastic wrap, placing it directly over the surface of the salad to keep the air out. Oxygen is what causes avocados to brown.
- Add salt just before serving to keep the cucumbers from wilting and becoming overly juicy.
How Do I keep Cucumbers from Getting Soft?
To keep cucumbers from getting soft or becoming too juicy, with any extra steps such as sweating the cucumbers, be sure to add salt just before serving.

Avocado Cucumber Salad Recipe
Ingredients
- 2 English cucumbers, sliced
- 1 large avocado, pitted, peeled and sliced
- 1/3 cup green onion, half of a bunch, chopped
- 2 Tbsp lime juice, from 1 medium lime
- 2 Tbsp extra virgin olive oil
- 1 tsp sea salt, or 3/4 tsp table salt, or to taste
- 1/8 tsp black pepper
Instructions
- In a medium salad bowl, combine sliced cucumbers, avocado and chopped green onion.
- Drizzle with 2 lime juice, 2 Tbsp olive oil and season with 1 tsp sea salt and 1/8 tsp black pepper or season to taste. Toss salad to coat with dressing and serve.

I liked this a lot and started adding more to it. Sliced red grapes are very good in it. Bacon bits not really good. Going to try Pine nuts next. I leave out the oil.

I live in Mexico so the variety of produce is difficult to come by. I did find persian cucumbers and figured they were a close relative. This salad is very refreshing on a hot day. I did add a pinch of dried chile for contract. Delicious. Thanks for the recipe!

great foundation to a more elaborate salad. Spiral cut cuc (looks like spaghetti)spiral cut red onion. lotso’ scallion. a drop of sesame oil mixed together soy and wasabi. Mixed all together with toasted sesames and voila: Veggie Sushi salad! yum.
