This Skinny BLT salad is everything we love about a BLT minus the carbs which makes this the healthy version :), although we’ve been known to add croutons ;).
You’re going to love the super easy, creamy dressing. In all honesty whenever there’s bacon in a recipe, it overshadows everything else in the bowl for me. I often scoot a small stash of bacon to the corner of my bowl (because bowls have corners) and save it for the last bite.
Back to the salad. It’s based on Gina Homolka’s recipe from The SkinnyTaste Cookbook. The first time I thumbed through her book, I new I had to own it. I also bought extra copies for my readers because I knew you’d love it too! Read on to enter the giveaway!
Ingredients for Skinny BLT Salad:
12 slices lean center-cut bacon (or 6-8 thick slices)
3-4 Roma tomatoes, chopped
1/4 cup light mayonnaise (p.s. it tastes great with real mayo too!)
1/8 tsp salt
pinch of freshly ground black pepper
2 medium or 1 large head of romaine (6 cups chopped)
1 medium Hass avocado, chopped
How to Make Skinny Bacon Lettuce and Tomato Salad:
1. Put bacon in a large non-stick skillet and saute over low heat, turning often, until crisp. Transfer to papertowels to cool, then crumble or chop bacon
2. In a medium bowl, combine chopped tomatoes with 1/4 cup mayonnaise, 1/8 tsp salt and a pinch of pepper. Stir to combine and set aside for 10 minutes allowing the tomatoes to release their juiciness. This scrumptious and easy concoction is your dressing.
3. To serve, divide the lettuce among 4 plates then top each with 1/4 of the tomato “dressing” then divide the avocado and bacon evenly among the plates. If you’re feeling less fancy, toss everything together in a large salad bowl and serve.
BLT Salad with Avocado

Caesar chicken salad the Costco way!
My favorite go to salad is kale salad from Costco,, and homemade salmon pasta salad, that i have been making for years, and my children love.
That looks awesome! I think it would be awesome with glazed bacon and red pepper flakes! YUM!

I love the Greek salad- spring mix, red onions, tomatoes, olives, cucumber, feta, almonds and of corse the yummy dressing.
I LOVE the blt breakfast sandwich, I made it 2 days in a row this week. Excited to try this healthier salad version! As for my favorite go-to salad, Id have to say that simple Russian shredded cabbage, cucumber, green onion salad with oil or mayo. Yum!
I love goroshek salad as well as garden salads of any kind… In my opinion any one can make a salad and no recipe required that is why it’s called a garden salad, just use your imagination
I love a fresh green salad, usually with lettuce, cucumber, tomato, bell pepper, and a drizzling of russian oil. My favorite!

I love a garden salad with guacamole dressing.
My basic salad is a spring mix with carrots chopped up in it and balsamic vinegar sprinkled over it all. Simple yet good.
