This breakfast sandwich is cheesy, juicy, easy and so darn delicious! All you need is 5 minutes, 5 ingredients and 1 pan – perfect for breakfast on-the-go! This breakfast sandwich is loaded with eggs, ham and cheese and is hugged by a warm English muffin that toasts in the same pan. And it can all be cozied up between your fingers… Yuuum!

This recipe has completely won us over. The inspiration came when My husband’s cousin Vicky shared a video on Facebook for a breakfast sandwich. After making our version 4 days in a row, we knew it needed to be shared with you.

This is also a kid-friendly breakfast. Our son requests this sandwich all the time.

Ingredients for 1 Breakfast Sandwich:

1 english muffin, cut in half
2 eggs
2-4 slices of ham (we ❤️ black forest but any kind will do)
1/3 cup finely shredded cheese (we used Mexican cheese)
1 tsp chives, finely chopped
Salt and Pepper to taste
1 Tbsp olive oil or butter to saute

Tip: to make 2 sandwiches at a time, toast the English muffin in the toaster and sauté two sets of eggs in the pan.

This breakfast sandwich is loaded with eggs, ham and cheese and is hugged by a warm English muffin that toasts in the same pan. Serve as is or with hot sauce if you like a fiery breakfast! 🙂
Prep Time: 5 minutes
Cook Time: 5 minutes
Total Time: 10 minutes

Ingredients 

Servings: 1 breakfast sandwich
  • 1 English muffin, cut in half
  • 2 eggs
  • 2-4 slices of ham, we love black forest but any kind will do
  • 1/3 cup finely shredded cheese, we used Mexican cheese
  • 1 tsp chives, finely chopped
  • Salt and Pepper to taste
  • 1 Tbsp olive oil or butter to saute

Instructions

  • Heat a large non-stick pan over medium heat and drizzle with 1 Tbsp oil.
  • Place your Engish muffin on half of the pan cut-side down. Crack 2 eggs side by side on the other half of the pan and break the yolks with a spatula.
  • Once eggs are mostly cooked through, sprinkle tops with salt and pepper to taste, 1 tsp fresh chives and half of shredded cheese. Place toasted english muffins cut-side-down over the eggs and lightly press on the tops with a spatula.
  • Flip the sandwich over (egg-side-up). Place ham over half of your sandwich and top with more cheese. Fold the sandwich together and and remove from heat.

Notes

      I think that would work or just about any thin-sliced sausage. We’ve made it with polish kielbasa and it was so yummy!

      I think these are best served fresh. I would recommend prepping the ingredients for the sandwiches in advance so it only takes 5 minutes to prepare a hot and cheesy sandwich. I do think it would still work to make them ahead and then put them in the oven or microwave before serving to warm them and melt the cheese.

        Agreed, Natasha. McD’s eggs come in a big plastic bag. Real eggs are always better than bags of liquid eggs. I hear it is possible to ask for a real egg in the shell at McD but have not tried it. Also, I maje these on hamburger buns and add grape jelly. The salty ham and sweet jelly is so good.

        This sandwich may not be much different than an egg mcmuffin in ingredient makeup, but it is so much more satisfying and better tasting than the corporate version. And, you can tailor the ingredients to fit any family member’s personal taste. My vote is for Natasha’s recipe.

    This is an awesome recipe. It’s super easy and quick, and super delicious. I usually don’t cook breakfast for my husband (he is too picky about his breakfast), but I decided to give it a try. He loved it, and asked for it again the next morning. I used turkey instead of ham (that’s what we had in the fridge), and added a slice of bacon! You can’t beat this recepi! Natasha, thank you!

    I’ve made this before but not like you did in one pan. Now I’m hungry. I noticed you had an avocado on your counter. Do you use it on the sandwich or was it just for decoration? Just curious, because I love avocado.

      You can put it in the sandwich or just serve it on the side for breakfast which is what we did. I sprinkle avocado with salt and pepper and drizzle with extra virgin olive oil. So yummy! 🙂

    Omg yo Natasha made this just now only thing is next time need to toast the English muffin a little bit more but omg wowsa I am in such food heaven now in place of the chives which I didn’t have in hand I used parsley flakes and in place of the ham I definitely did sprinkle extra cheese (my fave part lol) and placed a few hot sliced jalapeno peppers and came out really very hooked mmmmm this one is a winner babes dd (dunkin donuts will definitely see less of me now lmao) such a gr8 economical saver and way creative with the English muffin love it
