Cauliflower Cucumber and Tomato Salad Recipe

I love cauliflower; the texture makes it so versatile making it perfect for soups, salads, sides, etc. It makes a fantastic creamy soup with shrimp by the way.

Ingredients for Cauliflower Cucumber and Tomato Salad:

1 Medium Head cauliflower
1/2 English cucumber or 2 small cucumbers (no need to peel, just trim ends)
1 large or 2 medium cloves garlic, pressed
3 Tbsp mayo
3 Tbsp ranch
1 to 1 1/2 cups cherry or grape tomatoes

How to Make Creamy Cauliflower Salad:

1. Chop cauliflower into small pieces (1/4″ to 1/2″ pieces) and place in a large bowl.

2. Dice cucumber and add to the bowl.

3. Cut tomatoes into halves or quarters and toss them into the bowl.

4. Press your garlic over the veggies.

4. In a separate bowl, mix together mayo and ranch. Note: if you want your salad to be creamier, you can always add another tbsp of each.

5. Stir the dressing into the salad and mix well. Refrigerate until ready to serve. P.S. Refrigerated Leftovers were good the next day after a quick stir.

  • 1 Medium cauliflower
  • 1/2 English cucumber or 2 small cucumbers with ends trimmed
  • 1 large or 2 medium cloves garlic, pressed
  • 3 tbsp mayo
  • 3 tbsp ranch
  • 1 to 1 1/2 cups cherry or grape tomatoes

Instructions

  • Chop cauliflower into small pieces (1/4" to 1/2" pieces) and place in a large bowl.
  • Dice cucumbers and cut tomatoes into halves or quarters than toss both into the bowl. Press your garlic over the veggies.
  • In a separate bowl, mix together mayo and ranch. Stir the dressing into the salad and mix well. Refrigerate until ready to serve.

    I like the receipt so much, but is it a way to replace ranch and mayo with oil?

      Hi Yelena, it would completely change the flavor of the salad, but I think you could experiment with different dressings.

    I made this salad & told everyone to write their name on the piece of napkin. When they asked me why, I told them because after they try this salad, they will forget their name! 🙂

    Wow! What a great salad! I’m one of those people who didn’t know that you could eat cauliflower raw. I tried it raw but didn’t like it as much. So I steamed it a little to make it softer. Steamed cauliflower only enhanced the creaminess of the salad! Plus cauliflower is sweeter when steamed. I never ate cauliflower before, and this a great way to introduce it to my diet. This recipe is definitely a keeper for me. Thank you, Natasha, for your blog. I’m a regular now 🙂

    Yum! I love Cauliflower Salad too, with tomatoes. I love the texture, since it’s crunchy and the taste is so refreshing. It’s a perfect option for a quick vegetable side dish. I usually make it with seafood, although it goes well with just about any dinner.
