This recipe is an oldie, but goodie. I want everyone to discover it! It’s one of those easy chicken recipes you will make over and over. How to Serve Chicken Patties:
Honestly these chicken patties disappear just as soon as they are out of the pan, but you could serve them as appetizers, between sliders as mini chicken sandwiches or as a side for dinner. These are a crowd pleasing treat and seriously try them with that garlic aioli which is all kinds of yum!
If you’re pressed for time, you can cook this recipe right away after it is mixed but if you are patient or want to exercise the make-ahead option, refrigerate the mixture for 2 hours or overnight and the results will be even more juicy and flavorful.
Can I Use Ground Chicken or Cooked Chicken?
YES! We love the texture and juicy bites of diced chicken but you can substitute with ground chicken. A few readers have also reported good results using pre-cooked chicken. You can use what you have on hand for a quick lunch or snack.

Cheesy Chicken Fritters

Ingredients
Ingredients for Chicken Fritters:
- 1 1/2 lbs chicken breasts, (3 large)
- 2 large eggs
- 1/3 cup mayonnaise
- 1/3 cup all-purpose flour, or cornstarch or potato starch for gluten free
- 4 oz mozzarella cheese, (1 1/3 cups shredded)
- 1 1/2 Tbsp chopped fresh dill
- 1/2 tsp salt , or to taste
- 1/8 tsp black pepper
- 2 Tbsp Extra light olive oil, to saute (or any high heat cooking oil)
Ingredients for Garlic Aioli Dip (Optional)
- 1/3 cup mayonnaise
- 1 garlic clove, pressed
- 1/2 Tbsp lemon juice
- 1/4 tsp salt
- 1/8 tsp black pepper
Instructions
- Using a sharp knife, dice chicken into 1/3" thick pieces and place them in a large mixing bowl. Tip: If chicken breast is partially frozen, it will be a little bit easier to slice.
- Into the mixing bowl, add remaining batter ingredients: 2 eggs, 1/3 cup mayonnaise, 1/3 cup flour, 1 1/3 cups shredded mozzarella, 1 1/2 Tbsp dill, 1/2 tsp salt and 1/8 tsp black pepper, or season to taste. Stir the mixture until well combined, cover with plastic wrap and refrigerate 2 hours or overnight.
- Heat a large non-stick pan over medium heat and add 2 Tbsp oil. When oil is hot, add the chicken mixture a heaping Tablespoon at a time. Slightly flatten out the tops with the back of your spoon and sauté uncovered 3-4 min on the first side, then flip and saute 3 min on the second side or until outsides are golden brown and chicken is fully cooked through* Repeat with remaining fritters adding more oil as needed.
- To make the aioli (if using), combine all ingredients in a small bowl or measuring cup and stir together until smooth.

Can you use ground chicken?

Hi Lauren, I haven’t tried substituting, but a couple of readers reported great results using Greek yogurt so I imagine that or sour cream would work well.

Hi Rick, I haven’t tried baking these so I can’t provide a recommendation on that. If I were to try, I would use something to line and prevent sticking to the baking sheet. I had 1 reader report good results with baking but she didn’t share details of how she baked them.

Oh my goodness, sorry about that!! I think that reply was intended for another reader. I don’t think these would work well to freeze before frying because the patties do not hold together well until they are cooked.

Hi Charity, maybe you are looking at the wrong line? I’m seeing: “4 oz (or 1⅓ cups shredded) mozzarella cheese” in the ingredient list and the same in the instructions. I hope that helps! 🙂

Can you use dried dill if you don’t have fresh? If so, about how much dried dill would I add? Thanks. Looking forward to making these!
Hi Dee, I think dried dill would be ok if you are letting it marinate longer (at least 2 hours). I would add no more than 1 tsp of dried dill. You could also use fresh chopped chives or green onion, or parsley.

Hi Carol, that does work well. These reheat well on a skillet – just heat on a dry skillet until they are warm/hot – just enough to reheat without re-cooking. You can also warm them in the oven (I’ve been known to sneak leftovers straight from the fridge, but they are better served warm).
Made these tonight. They are really good. I refrigerated them for only an hour then cooked. Made the aioli also. Omg, so yummy! Will definitely make these again.

Hi Miles, I would go with the same heat setting – it will just take a little longer to heat up the pan initially than gas so give it a minute to warm up before adding the fritters to the pan 🙂
