How to Serve Chicken Patties:
Honestly these chicken patties disappear just as soon as they are out of the pan, but you could serve them as appetizers, between sliders as mini chicken sandwiches or as a side for dinner. These are a crowd pleasing treat and seriously try them with that garlic aioli which is all kinds of yum!
If you’re pressed for time, you can cook this recipe right away after it is mixed but if you are patient or want to exercise the make-ahead option, refrigerate the mixture for 2 hours or overnight and the results will be even more juicy and flavorful.
Can I Use Ground Chicken or Cooked Chicken?
YES! We love the texture and juicy bites of diced chicken but you can substitute with ground chicken. A few readers have also reported good results using pre-cooked chicken. You can use what you have on hand for a quick lunch or snack.

Cheesy Chicken Fritters

Ingredients
Ingredients for Chicken Fritters:
- 1 1/2 lbs chicken breasts, (3 large)
- 2 large eggs
- 1/3 cup mayonnaise
- 1/3 cup all-purpose flour, or cornstarch or potato starch for gluten free
- 4 oz mozzarella cheese, (1 1/3 cups shredded)
- 1 1/2 Tbsp chopped fresh dill
- 1/2 tsp salt , or to taste
- 1/8 tsp black pepper
- 2 Tbsp Extra light olive oil, to saute (or any high heat cooking oil)
Ingredients for Garlic Aioli Dip (Optional)
- 1/3 cup mayonnaise
- 1 garlic clove, pressed
- 1/2 Tbsp lemon juice
- 1/4 tsp salt
- 1/8 tsp black pepper
Instructions
- Using a sharp knife, dice chicken into 1/3" thick pieces and place them in a large mixing bowl. Tip: If chicken breast is partially frozen, it will be a little bit easier to slice.
- Into the mixing bowl, add remaining batter ingredients: 2 eggs, 1/3 cup mayonnaise, 1/3 cup flour, 1 1/3 cups shredded mozzarella, 1 1/2 Tbsp dill, 1/2 tsp salt and 1/8 tsp black pepper, or season to taste. Stir the mixture until well combined, cover with plastic wrap and refrigerate 2 hours or overnight.
- Heat a large non-stick pan over medium heat and add 2 Tbsp oil. When oil is hot, add the chicken mixture a heaping Tablespoon at a time. Slightly flatten out the tops with the back of your spoon and sauté uncovered 3-4 min on the first side, then flip and saute 3 min on the second side or until outsides are golden brown and chicken is fully cooked through* Repeat with remaining fritters adding more oil as needed.
- To make the aioli (if using), combine all ingredients in a small bowl or measuring cup and stir together until smooth.

What is considered a serving size… thats not included in nutritional value? Also if one doesn’t like dill! Can I use chives?

Hi Brenda, chives would work great 🙂 This recipe serves 8 and produces 16-18 fritters so it is about 2 fritters per serving.

Hi Dina, I haven’t tried any substitutions but but a couple of readers reported great results using Greek yogurt so I imagine that or sour cream would work well.

I just made these last night using chicken thighs as that is what I had on hand and am following a keto way of eating. To make it keto and a little higher in fat I use chicken thighs and substituted 3 TBS of coconut flour for the regular four. (you could also use almond flour). It was FANTASTIC! My husband loved them. I’m not a fan of chicken in general but these were really GOOD!

Is the 326 calories for 1 fitter
Hi Laura, it is per serving and there are 8 servings (the recipe makes 16-18 fritters)
The ingredients list says 4 Tbsp of olive oil. Then the directions list the ingredients to add to the batter mix. The oil is not mentioned. Later, it says to use 2 Tbsp oil to fry the fritters. Do I add the 4 tbsp to the batter or is the extra 2 to add to the oil for frying if needed? The cook in me says not to add the oil to the batter mix, but I want to be sure.
OKAY, I should have watched the video which I just did. Oil doesn’t go into the mix. Can’t wait to try it.

Do you think it would work if, instead of frying, you drop the small portions onto a hot waffle iron sprayed with Pam?

Made these tonight had to substitute parmesan and itilian seasoning did not had the other ingredients. Use can spray since my wife is watching what she eats. Turn out great though will do again. Everybody had seconds.

It was so juicy and as you said as soon as you remove it from the pan it will disappear. Loved the aioli so much and it was the perfect couple for the chicken. I tried it without dill. Because I think that it has a bit of strong flavor and I adore chicken to be the star. Please keep going for those easy recipes. Can you make these without egg? I am wondering if they would work with a powdered egg sub, or if egg is necessary to hold them together.
Hi Rachel, I honestly have not tried making them egg free so I’m not sure what would work as well for a binder. The eggs are important for the batter to form and to keep the fritters together.

This looks delicious! I would love to try this so bad. I’m doing Keto, so serving size and amount of carbs is huge. The nutrition value chart shown under recepie, is that per serving or for the batch? Am I correct to assume 2 fritters is the serving size?

Hi Eileen, dried dill would work, but you would need less. You could also substitute with fresh parsley or finely chopped chives/ green onion.
