This recipe is an oldie, but goodie. I want everyone to discover it! It’s one of those easy chicken recipes you will make over and over. How to Serve Chicken Patties:
Honestly these chicken patties disappear just as soon as they are out of the pan, but you could serve them as appetizers, between sliders as mini chicken sandwiches or as a side for dinner. These are a crowd pleasing treat and seriously try them with that garlic aioli which is all kinds of yum!
If you’re pressed for time, you can cook this recipe right away after it is mixed but if you are patient or want to exercise the make-ahead option, refrigerate the mixture for 2 hours or overnight and the results will be even more juicy and flavorful.
Can I Use Ground Chicken or Cooked Chicken?
YES! We love the texture and juicy bites of diced chicken but you can substitute with ground chicken. A few readers have also reported good results using pre-cooked chicken. You can use what you have on hand for a quick lunch or snack.

Cheesy Chicken Fritters

Ingredients
Ingredients for Chicken Fritters:
- 1 1/2 lbs chicken breasts, (3 large)
- 2 large eggs
- 1/3 cup mayonnaise
- 1/3 cup all-purpose flour, or cornstarch or potato starch for gluten free
- 4 oz mozzarella cheese, (1 1/3 cups shredded)
- 1 1/2 Tbsp chopped fresh dill
- 1/2 tsp salt , or to taste
- 1/8 tsp black pepper
- 2 Tbsp Extra light olive oil, to saute (or any high heat cooking oil)
Ingredients for Garlic Aioli Dip (Optional)
- 1/3 cup mayonnaise
- 1 garlic clove, pressed
- 1/2 Tbsp lemon juice
- 1/4 tsp salt
- 1/8 tsp black pepper
Instructions
- Using a sharp knife, dice chicken into 1/3" thick pieces and place them in a large mixing bowl. Tip: If chicken breast is partially frozen, it will be a little bit easier to slice.
- Into the mixing bowl, add remaining batter ingredients: 2 eggs, 1/3 cup mayonnaise, 1/3 cup flour, 1 1/3 cups shredded mozzarella, 1 1/2 Tbsp dill, 1/2 tsp salt and 1/8 tsp black pepper, or season to taste. Stir the mixture until well combined, cover with plastic wrap and refrigerate 2 hours or overnight.
- Heat a large non-stick pan over medium heat and add 2 Tbsp oil. When oil is hot, add the chicken mixture a heaping Tablespoon at a time. Slightly flatten out the tops with the back of your spoon and sauté uncovered 3-4 min on the first side, then flip and saute 3 min on the second side or until outsides are golden brown and chicken is fully cooked through* Repeat with remaining fritters adding more oil as needed.
- To make the aioli (if using), combine all ingredients in a small bowl or measuring cup and stir together until smooth.

Can anything be substituted for the mayo. I really don’t like mayo
Hi Gwen, I anything else but a couple of readers reported good results using Greek yogurt for the fritters. I imagine sour cream might work just as well as yogurt.
if I wanted to bake them in the oven, how many min do you think it would take?
Hi Agne, I haven’t tested that so I can’t say for sure. I had 1 reader report good results with baking but she didn’t share details of how she baked them.

Hi Kirrin, t really helps to make these on a good non-stick skillet and use a thin edged spatula to turn them. The only other thing I can think of is to make sure you pan is well greased and that the chicken pieces aren’t cut overly large. That should help for next time!
These were so easy and super delicious! Mine turned out exactly like the picture and that never happens to me!! The garlic aioli completely made this dish, you need to try it. Will definitely be making this again. Instead of mozzarella we used garlic-jack cheese and it gave a nice salty flavor.

Could I cook these in a deep fryer?
Hi Rob, I haven’t tried that so I’m not 100% sure if they would fall apart in a deep fryer. I think it could work, but I don’t have a deep fryer to test that out.
I will get the ingredients and give it a try. I’ll post the results when I’m done! Most of my meals involve a deep fryer so it would be convenient.

I will be making this with almond or coconut flour. I’m doing low carb. I can’t help but think this could be a new low carb way to make chicken parmesan.

I used coconut flour & tarragon. These are the only two changes other then cutting the recipe down for just the two of us. It’s gluten free & low carb. Next time I’mean going to try this in my air frier. Reduce heat a bit and cook a little longer. Coconut & and almond flour seem to scorch or burn at too high a temperature when frying. Pictures here.

I hate cutting raw chicken – do you think I could use ground chicken for these?
Hi Mary, it’s much easier to dice the chicken if you freeze it for 30 minutes or so before dicing. It’s really easier to dice than it looks ;). I haven’t tried ground meat so I can’t say for sure – they would be more of patties rather than fritters and you may need a little less flour.
Great recipe! Everyone loved them…the aioli too. I can see this being a good base recipe for shrimp, scallops, or lobster as well. Only thing I changed was I switched over to canola oil after the first batch done with olive oil. It seemed to work better for me. Thanks for sharing!

Could you do a low carb version of this and replace flour with something else?

I just made them. I’m keto as well. I followed exactly but substituted grated parm for the flour and used 6oz mozzarella vs. 4. The macros were awesome. – I also used 30oz of chicken breast so they ended up being 41g protein per serving.
i plan on making a gluten free version of this. Please clarify if corn starch by its self is the substitute for the flour. thank you! oh and is it potato strach or flour that can also be used? I’m obviously new to Gluten Free!
