This sandwich was inspired by Kneader’s Bakery turkey bacon avocado sandwich. We subbed the turkey for rotisserie chicken so it was super easy. The only thing we cooked was bacon.
I took a tiny packet of their special sauce home with me and tested several versions before coming up with this Mustard Mayo. I thought it was just as good as their special sauce. It has just 3 simple ingredients that you probably have in your fridge. You’ll want it on all your sandwiches!
Keep this one in mind when you have company over and want to impress them but don’t have a ton of time to cook :).
P.S. If you can’t find focaccia, you should use Homemade Focaccia or use your favorite artisan bread – you’ll love it just as much :). PPS. You can make the sauce in advance and enjoy delicious sandwiches all week long.
Mustard Mayo (Kneaders Sauce Copycat)
1/2 cup real mayo
2 Tbsp sour cream
2 tsp yellow mustard
Sandwich Ingredients (for 2 large sandwiches):
6 oz chicken breast from a rotisserie chicken, hand pulled
4 strips cooked bacon
2 slices provolone cheese
2 large lettuce leaves
4-6 slices tomato
1/4 small red onion, thinly sliced
Salt & pepper
1 avocado, peeled, pitted and sliced
Fresh focaccia bread (or artisan bread)
How to Make Copycat Kneaders Mayo:
1. In a small bowl, stir together: 1/2 cup mayo, 2 Tbsp sour cream and 2 tsp mustard.
How to Assemble the Chicken Sandwich:
1. Focaccia bread, lots of sauce, provolone cheese, chicken, bacon, lettuce, tomato, purple onion, avocado, salt & pepper and top it with the second piece of focaccia spread with sauce.
2. Slice the sandwich in half and serve.

I made this sandwich for dinner tonight, for me and my husband. Really fantastic, and loved the sauce! My husband wanted maple bacon, and it was delicious! I wouldn’t change a thing, but he said he’d prefer ciabatta bread next time.

Dear Natasha, I made up several of your recent recipes for a dinner party this week in Australia. I modified the Raspberry Pretzel Jello into a beautiful Strawberry mousse dessert, and will send you the recipe I made. I enjoyed making your mini toasts and filled eggs, beautiful also. How far ahead? The avocado will taste fine, but it will brown if you make it too far in advance. Also, if making the sandwich in advance, as with any sandwich, I would recommend adding the sauce before serving. This way your bread will not get soggy.
Yes, this was my question too. I was thinking about making this sandwich for my kids to school. So I’ll make it around 6:30 am and they are going to eat it around 11 am. Do you think it would be ok? Or should I go with smth else? Thank you.
Hi, Sandwhiches which have meat in them or dairy (cheese), should be kept chilled. I would definitely recommend using an ice pack to keep the sandwich cool and fresh.

Thanks Maureen :). It was so easy and there wasn’t much difference in flavor compared to their slow roasted turkey (maybe because turkey tends to be dryer and tougher?). Anyways, I hope you love this sandwich. It’s officially my favorite 🙂
do you think this will taste good a few hours after made? Like to eat at work?
I think it would taste great even a few hours later if it’s refrigerated. For best results, I would recommend packaging the dressing separately so it doesn’t get absorbed by the bread. You can buy tiny containers with lids at most grocery stores. I use them for my sons lunch.
YUM! Sandwiches truly are comfort food. I’m going to try this on a whole-grain bread…I know it won’t be exactly the same, but sometimes compromise is necessary…

This sandwich looks so delicious! I make a similar looking sandwich with leftover grilled chicken 🙂 The bacon and avocado is the best part, especially with a garden fresh tomato!

Hi where do u buy focaccia bread?
I bought it directly from Kneaders bakery because I think they make it best :). You can use any good quality soft bread, like the artisan loaves from Costco for example. It will still be amazing!

This sandwich looks so appetizing! I’m definitely making it next week! I also tried making my own focaccia bread before and it turned out great! I used Chef John’s receipt (youtube “Food Wishes”) and highly recommend you trying as well if you haven’t already! Maybe even post your own version to go along with the sandwich!

Hi Natasha, sorry for the silly question but do you buy chicken that’s already cooked or do you roast it at home?
Svetlana, I buy roasted chicken, either at Costco or Fred Meyer. You can roast a chicken at home, just takes more time :).
We totally use the rotisserie chickens around here! So easy. Going to show this to wife to make for my lunch since she packs my lunch every day for me. I better get that bacon on!!!
