I brought this salad to my parents house yesterday and everyone loved it! This is definitely going into the regular rotation all summer long. Think: homegrown cucumbers and tomatoes :).

Ingredients for Tomato Avocado Salad:

This salad is loaded with veggies; juicy tomatoes, crisp cucumber, creamy avocado and the cilantro and lemon juice make the whole salad so fresh and flavorful!

P.S. If you aren’t keen on cilantro, fresh dill is a good substitute

How to Make Cucumber Tomato Avocado Salad:

1. Place chopped tomatoes, sliced cucumber, sliced red onion, diced avocado, and chopped cilantro into a large salad bowl.

2. Drizzle with 2 Tbsp olive oil and 2 Tbsp lemon juice. Toss gently to combine. Just before serving toss with 1 tsp sea salt and 1/8 tsp black pepper

Avocado Salad Video Tutorial:

My husband and I ate this entire batch of cucumber tomato salad with avocado in one sitting, paired with roasted red potatoes and grilled shrimp skewers. I shoveled most of the salad into my mouth before I remembered the shrimp and potatoes on my plate; mmming and smiling all the way through. We were both smitten.

Our classic cucumber and tomato salad just got better with the addition of avocado, a lemon dressing and fresh cilantro.

Ingredients 

Servings: 4 (as a side salad)
  • 1 lb Roma tomatoes
  • 1 English cucumber
  • 1/2 medium red onion, sliced
  • 2 avocados, diced
  • 2 Tbsp extra virgin olive oil or sunflower oil
  • 2 Tbsp fresh lemon juice, (from 1 medium lemon)
  • 1/4 cup 1/2 bunch cilantro, chopped
  • 1 tsp sea salt or 3/4 tsp table salt
  • 1/8 tsp black pepper

Instructions

  • Place chopped tomatoes, sliced cucumber, sliced red onion, diced avocado, and chopped cilantro into a large salad bowl.

    Once the salad is made how long does it last before the avocado starts to turn? Is it good to be eaten over a couple day period? I am a student and I am always looking for healthy salads I can eat for lunch over a several day period.

    This is my favorite salad and I am always asked for the recipe when I serve it. It is beautiful and since we “eat” with our eyes first you know it will be incredible before you even taste it.

    I have made this once and gonna make it again here real soon. When I made it I added some mushrooms. The salad was amazing. and I used a regular mushroom instead of an english one.

      Becca, it will stay good until the next day. Lemon juice keeps the avocado from browning.

    How can I tell if an avacado is still good. I believe it is , but want to confirm and taste First time using one.

      Betty, if the avocado yields to gentle pressure you know it’s ripe and ready-to-eat. As long as the color is light green and not brown on the inside, it is still good. Hope this helps 😀.

    What caught me was the PICTURE! It looked so good I just had to save this. I had ever thing and just made this. I fixed me a small bowl to just make sure it was ok…………. I am thinking about going back and getting another bowl full.,…… BUT will try to wait and see what it taste like after a hour or so in the refrig. I used cherry tomatoes, dill and some chives. I wish I had used more red onion cannot get it in every bite :-)……….. this is a 10

    This looks very good. My mom is on a very low sodium – no salt diet. Would omitting the salt, change up the taste much? Just want to try some new ideas for her.

      Use kosher salt. I would add some crispy bacon, that would be salty enough.

    SO YUMMY! Two of my favorite foods are tomatoes and avocados- I feel like I have either both or one of the two at least once a day in a meal. I have also made this with cherry tomatoes instead of roma tomatoes. I love both but the cherry tomatoes make the salad a little sweeter- it’s very good! I actually leave out the cucumber (not a fan, wish I was), do you have any ideas of something to replace the cucumbers with? Thanks for your recipe!
