Our family’s favorite classic cucumber and tomato salad just got better with the addition of avocado, a light and flavorful lemon dressing and the freshness of cilantro. Easy, excellent avocado salad.

I brought this salad to my parents house yesterday and everyone loved it! This is definitely going into the regular rotation all summer long. Think: homegrown cucumbers and tomatoes :).
Ingredients for Tomato Avocado Salad:
This salad is loaded with veggies; juicy tomatoes, crisp cucumber, creamy avocado and the cilantro and lemon juice make the whole salad so fresh and flavorful!
P.S. If you aren’t keen on cilantro, fresh dill is a good substitute
How to Make Cucumber Tomato Avocado Salad:
1. Place chopped tomatoes, sliced cucumber, sliced red onion, diced avocado, and chopped cilantro into a large salad bowl.
2. Drizzle with 2 Tbsp olive oil and 2 Tbsp lemon juice. Toss gently to combine. Just before serving toss with 1 tsp sea salt and 1/8 tsp black pepper

My husband and I ate this entire batch of cucumber tomato salad with avocado in one sitting, paired with roasted red potatoes and grilled shrimp skewers. I shoveled most of the salad into my mouth before I remembered the shrimp and potatoes on my plate; mmming and smiling all the way through. We were both smitten.

Cucumber Tomato Avocado Salad

Ingredients
- 1 lb Roma tomatoes
- 1 English cucumber
- 1/2 medium red onion, sliced
- 2 avocados, diced
- 2 Tbsp extra virgin olive oil or sunflower oil
- 2 Tbsp fresh lemon juice, (from 1 medium lemon)
- 1/4 cup 1/2 bunch cilantro, chopped
- 1 tsp sea salt or 3/4 tsp table salt
- 1/8 tsp black pepper

This salad can be made all year long, but it’s especially delicious this time of year when cucumbers and tomatoes are in season. Do you grow any of your own food?

Hi Amy, this salad is the prettiest when you make it before serving. If you need to make it a couple hours ahead, make sure to refrigerate.
I have substituted basil for the cilantro as well. Yummy. Also add poached chicken to this and I take it to work for the whole week.

I like using Braggs Apple Cidar Vinegar as an option to lemon and lime. It keeps the avocado a long time, especially if you do you use any metal to cut the avocado–that darkens it. (Use plastic or ceramic.) It stays for three days that way. We use it as a day to day side that way.

Made it, loved it, 2 of the 3 kids asked for seconds! I’m trying to keep healthy, good tasting food in house to eliminate the bad, in the house. These kids are difficult. But we will be making this again soon!! Thanks for sharing.

We use parsley instead of Cilantro,and I alternate between lime or lemon. We lov both. I also use black olives,this batch also adding bacon bits. Since reading this on your blog over the winter,I now make it every week. If I dont make it, it now feels like I’ve forgotton something major-its that good. A casserole dish full lasts hubby and I roughly, 3 meals. I still havent gotton the hang of doing the Avocardo yet…but its messy fun.

I made this salad as a light lunch item and my wife loved it. I only had half a cucumber so I added half a zucchini to add a nice crunch factor. My knife skills aren’t great so it isn’t as nice looking as the pic but it tasted great.

I made this a few months ago and it was good, , just made it again with garden fresh veggies and its amazing. I also added a fresh diced jalapeno and cut the olive oil in half and added extra fresh squeezed lemon juice, Thank You for this awesome recipe, you rock!!

I’ve made this salad twice!! It’s a huge hit!! Eliminated the onions first try since my bro-in-law is allergic and added red wine vinegar. Second time just added some balsamic vinegar to the recipe. It is amazing!!! All gone both times :)) Thanks for he recipe!!

Hi Chris, to be honest, we’ve always finished it the same day it was made but it does refrigerate well for a day. Several readers have reported great results on day 2. The lemon juice keeps it fresh.

Just wondering if there is any specific reason you use English cucumber – only asking b/c not always available around me, would regular ones ruin the whole thing?

I added feta cheese crumbles and a handful of green onion! Also sprinkled fruit fresh on it to help preserve the avacado. Turned out wonderfully!!
