I brought this salad to my parents house yesterday and everyone loved it! This is definitely going into the regular rotation all summer long. Think: homegrown cucumbers and tomatoes :).
Ingredients for Tomato Avocado Salad:
This salad is loaded with veggies; juicy tomatoes, crisp cucumber, creamy avocado and the cilantro and lemon juice make the whole salad so fresh and flavorful!
P.S. If you aren’t keen on cilantro, fresh dill is a good substitute
How to Make Cucumber Tomato Avocado Salad:
1. Place chopped tomatoes, sliced cucumber, sliced red onion, diced avocado, and chopped cilantro into a large salad bowl.
2. Drizzle with 2 Tbsp olive oil and 2 Tbsp lemon juice. Toss gently to combine. Just before serving toss with 1 tsp sea salt and 1/8 tsp black pepper

My husband and I ate this entire batch of cucumber tomato salad with avocado in one sitting, paired with roasted red potatoes and grilled shrimp skewers. I shoveled most of the salad into my mouth before I remembered the shrimp and potatoes on my plate; mmming and smiling all the way through. We were both smitten.

Cucumber Tomato Avocado Salad

Ingredients
- 1 lb Roma tomatoes
- 1 English cucumber
- 1/2 medium red onion, sliced
- 2 avocados, diced
- 2 Tbsp extra virgin olive oil or sunflower oil
- 2 Tbsp fresh lemon juice, (from 1 medium lemon)
- 1/4 cup 1/2 bunch cilantro, chopped
- 1 tsp sea salt or 3/4 tsp table salt
- 1/8 tsp black pepper

How long will this be good in my fridge for?
Hi Claudia, I think it’s best fresh but I’ve had readers report great results with leftovers the next day. I haven’t tested it beyond that since it always gets eaten so quickly! 🙂
want to try this salad and one I saw with artichoke hearts which were canned and hopefully canned with little or no salt. I’m on very salt restricted diet due to bad heart.

Jean, salad is best eaten the same day, But if you want to make in the morning and serve it in the afternoon, add salt right before serving.

Natasha! Your recipes rock. Question — can I make this salad a day in advance?
Hi Ellen, although several readers reported that leftovers taste great the next day, I think this salad is freshest and best served the day it’s made, especially if making for company. If you need to make it ahead, I would avoid adding salt so the vegetables don’t start to get juicy.

Thank you for your wonderful review! 🙂 I think avocado oil would work but keep in mind avocado oil is pretty flavorless while extra virgin olive oil will another layer of good flavor to the salad :).
Hi again!! Made it with the avocado oil and it worked beautifully with the lemon juice and cilantro. My hubby gave it a 10! Have rarely seen him go above 7.5 on most things. It was light and flavor even with the avocado oil.. side for my Belgian Meatloaf

Belgian Meatloaf
1 teaspoon unsalted butter, melted
1 cup breadcrumbs
3⁄4 cup whole milk
3 tablespoons unsalted butter
1 large onion, finely chopped
5 ounces white mushrooms, sliced
1 garlic clove, finely chopped
2 lbs lean ground beef
1 large egg
3 tablespoons fresh parsley, finely chopped
1 teaspoon fresh sage, finely chopped
1 teaspoon fresh oregano, finely chopped
1 teaspoon fresh thyme, finely chopped
1 teaspoon salt
1 teaspoon pepper
1 pinch nutmeg
1 tablespoon port wine
1 tablespoon cognac
1 sprig rosemary

Directions
Preheat oven to 450 degrees F, & brush a meatloaf pan with 1 teaspoon melted butter.
Soak bread crumbs in 3/4 cup milk.
In medium skillet, melt the 3 tablespoons of unsalted butter, then add onion & saute 2 minutes.
Add mushrooms & saute 5 minutes.
Add garlic & saute 1 minute.
In a mixing bowl, add ground beef & egg, then squeeze bread crumbs dry & add to bowl.
Add onion mixture, parsley, sage, oregano, thyme, salt, pepper, nutmeg, port & cognac, & mix well.
Place meat mixture in prepared pan, & top with rosemary, then bake 30 minutes.
Reduce heat to 400 degrees F & bake another 15 minutes.
Remove from oven & let rest 10 minutes before serving.
Here ya go. I add a bit more milk.. always use fresh herbs.. harvest and freeze for winter. tend to add extra of mushrooms…and herbs .. mix liquids and all first in bowl and add meat last.. find I get best results.. and the rosemary on top ..oh so pretty and smells amazing in oven.

I made this salad today for the first time. I did however add one tweek, I added some Salad Supreme seasoning to this salad and it was wonderful. This salad kind of reminds me of an unmixed guacamole. So good.
