I brought this salad to my parents house yesterday and everyone loved it! This is definitely going into the regular rotation all summer long. Think: homegrown cucumbers and tomatoes :).
Ingredients for Tomato Avocado Salad:
This salad is loaded with veggies; juicy tomatoes, crisp cucumber, creamy avocado and the cilantro and lemon juice make the whole salad so fresh and flavorful!
P.S. If you aren’t keen on cilantro, fresh dill is a good substitute
How to Make Cucumber Tomato Avocado Salad:
1. Place chopped tomatoes, sliced cucumber, sliced red onion, diced avocado, and chopped cilantro into a large salad bowl.
2. Drizzle with 2 Tbsp olive oil and 2 Tbsp lemon juice. Toss gently to combine. Just before serving toss with 1 tsp sea salt and 1/8 tsp black pepper

My husband and I ate this entire batch of cucumber tomato salad with avocado in one sitting, paired with roasted red potatoes and grilled shrimp skewers. I shoveled most of the salad into my mouth before I remembered the shrimp and potatoes on my plate; mmming and smiling all the way through. We were both smitten.

Cucumber Tomato Avocado Salad

Ingredients
- 1 lb Roma tomatoes
- 1 English cucumber
- 1/2 medium red onion, sliced
- 2 avocados, diced
- 2 Tbsp extra virgin olive oil or sunflower oil
- 2 Tbsp fresh lemon juice, (from 1 medium lemon)
- 1/4 cup 1/2 bunch cilantro, chopped
- 1 tsp sea salt or 3/4 tsp table salt
- 1/8 tsp black pepper

This salad can be made all year long, but it’s especially delicious this time of year when cucumbers and tomatoes are in season. Do you grow any of your own food?
Could you subsitute lemon for lime? We keep lime stocked in our house and cilantro. I just wondered if it would ruin it… thanks it does sound delicious and I have all the ingredients except lemon to try tonight.

I make this salad and variations of it all the time for lunches or dinners. For a twist try lime instead of lemon, or add cold shrimp, chicken or black olives. All are very tasty are healthy.

Love this! I’ve made it 3 times already since last Thursday! Tried it out on the family the night before a potluck at work, everyone loved it. Got nothing but raves from the potluck, then my husband and son asked for it again with bbq ribs the day after the 4th! It keeps well for at least one day, my husband had the leftovers from both of the home batches. I don’t think I’d let it go longer than that, though. Thanks for the wonderful recipe!

I make a salad similar to this and suggest fresh basil leaves. Basil is easy to grow in a large flower pot. Also try white basalmic vinegar instead of lemon juice.

I saw your recipe the other day. I made it to go with dinner tonight, it’s in the fridge chilling. I adjusted just a thing or two, I can’t do cilantro, it doesn’t like me, so I omitted it and I used lemon and instead of olive oil, I used a blend of oil and vinegar. It looks so good, can’t wait for my husband to get home so we can eat. I’m making fish, Mhia Mhia with it.I’m going to go check out your recipe for roasted potatoes. Thank you for sharing

this is a very yummy salad. My family loves it! To answer your question about if we grow our own food … The answer is YES! We have a tower garden and grow lots of non- gmo organic fruits and veggies. We even have one in our house. They are wonderful and use food grade plastic.

How long before serving do you put the oil and lemon juice into the salad?
It’s best added just before serving. The salt in the dressing can cause the tomatoes to get a little juicy. It will still taste great if you do it a little earlier (30 min- 1 hr), but the salad will be it’s prettiest soon after it’s mixed with the dressing.
